pizza

right and that's exactly what we're going to do because today we're going to teach you how to make the most requested and highly anticipated authentic lumonadis

right on your own

oven this dough is so easy to make you don't even need a stand mixer so you can just take your old bowl and throw it away all we really need for this dough is a bowl and spoon now let's add our flour to the bowl i like to use heckers or sarasota flour its a chicagoland favorite now we are going to add our dry ingredients first the yeast goes in and now we add our salt and finally our sugar now we are just going to mix this up and now we are going to add our ingredients wet first our water goes in then our corn oil and finally our olive oil and now to mix this we are just going to take ar our good sturdy scoop i'm going to start around the edges first and just pull all the flour towards the center our goal is to try and hydrate all this flour with liquid and we need to remember that some of the flour is at the bottom of the pan, so we want to press down on the bottom as we mix it. and now we're going to keep folding the flour in on itself and make sure all the liquid is incorporated into the flour and once you get to this point just scoop all the extra dough out of your spoon and from here on we can use our hands , you don't want to overwork this dough, it's like a pie crust, it's really rich and fat, so your dough should start to come together like that, you don't want to have too many of these big cracks, so you'll just want to pull it together and fold it, and this is where the art of making dough comes in some doughs will be drier than others some climates are drier than others so if you find you have worked with this dough for a while and you still have the If there are cracks big ones what you can do is just add a couple little drops of water here and that will really help to tighten it up, just press that down and fold it over and that will really improve the overall texture of the dough.

It doesn't have to be

perfect

it just needs to be a nice kind of dumpling that stays together so once you've pressed it you can go around and just pinch all these little cracks together and how we add that moisture it stays together a lot better now now we are going to let this dough rest for 24 hours covered with plastic wrap now we are just going to move our dough out to our work surface and this dough is enough for two pizzas we are going to divide it roughly in half each slice of dough should weigh approximately 12 ounces for our 9-inch pan, the exact measurements for all these recipes, remember, they are in the video description for our illuminati sauce, we are going to use a can of whole tomatoes and a can of crushed tomatoes like this that the first step in making our sauce is just to strain our tomatoes and now we're just going to add about half a teaspoon of salt, to Now it's very important that you take the time to drain all the excess liquid from these tomatoes because if you don't your pizza is going to be too wet and no one likes a soggy pizza now with our crushed tomatoes we're just going to take a spoon and just add that salt really well and this will really help all the excess liquid to push down through the strainer leaving us with a nice thick sauce now with our whole peeled tomatoes we're going to get our hands clean here and we're going to start squashing them that we don't want them totally crushed, but we just want some big chunks left over and this will help drain out all that excess liquid as well.

There are a lot of people watching our video right now who aren't subscribed, so if you're one of those please take a second now and click that subscribe button. Also, if you hit the like button, it tells YouTube that our video content is appreciated and helps promote it to other users ok let's go ahead and open up this special box that we got directly from Lumonites and here is our nine inch tray. nadi's uses a pan made by chicago metallic this is a nine inch pan with a one and a half inch rim and the number is 49 15 x oh so this is the pan we will use to make the pizza yes this is the one we just finished from receiving from Monadi's but there's just one problem with it - it's not seasoned yet so how are we going to season it easy like that wow dad you're really good at it ok now we're ready to press. this dough in the pan we're going to take a little bit of olive oil and we're going to put a little bit in the bottom of the pan like this and one thing we don't want to do is put it on the edges because if you put it on the edges it's not going to stick now we're just going to gently place our dough on the pan and we're going to start pressing it from the center and work our way around so the key to making a good

malnati

pizza is to make sure it's not too thick so we're going to press it towards down to make it really flat and once we have it all the way to the edges we'll grab the edges and start working around the sides and we want the sides to be almost paper thin people have the wrong idea about Chicago

deep

dish

they think which is like a very thick bread but actually the most iconic deep dish pizzas have a pretty thin crust once you have it around the edge you are ready for your toppings now we are ready to add we put our cheese on our pizza the cheese goes right on the bottom of the dough and will serve as the base of our pizza this is a really good cheese i got at the deli and it is a low moisture mozzarella next we are going to add our

home

made sausage you're going to want to use a mild Italian sausage with this and malnat is they don't add any fennel seed to their sausage ok now we have all the sausage laid out on the pizza notice we put a lot of sausage in there but left a little space between the sausage pieces and that's on purpose. the cheese doesn't melt it can bubble up between all the sausage bits and all the flavors can melt together now we're going to add our beautiful tomato sauce right on top of the sausage these are the crushed tomatoes if it's actually too thick you can get a some of your leftover juice and add a little bit of that back in so now we can start to spread it out evenly we'll get a little more and now we're going to take some beautiful pieces of our whole tomato and we're going to add that into the mix as well like this and then we'll use our hands to spread it out this is how they do it in the restaurant and the final touch before it goes in the oven is a little bit of romano cheese with a little bit of oregano and Italian seasoning added and now we're ready to put it on the middle rack of the oven at 450 degrees, it's ok, it's been about 25 minutes.

Let's check the pizza and see how it usually turns out. These are going to cook for about 25-35 minutes. The inside of this pizza takes quite a while to cook, and sometimes the inside takes longer to cook than the crust. I'm going to take a little piece of aluminum foil and put it right on top. of that and that will protect our crust from burning while still allowing the inside to cook we'll probably leave it here for another 10 minutes okay let's take a look and see how it's doing so I left it for another 10 minutes covered and it needed a little more time so that's another five minutes uncovered and I think right now if you want you can serve it in the pan and cut it right where it is but I like to try to get it out of the pan so I can really see how does the crust look like li ke plus that allows the crust to get crunchier so I'm going to take a very thin little spatula and go around the edge here it doesn't really stick much because it's such a greasy dough and we'll take a look the bottom and sides look good with everything released i'm going to use a bigger spatula and try to get under it ok let's go ahead and cut this pizza good let's take a look at the bottom of one of these golden slices as we want them look at that ok that's going to conclude our illuminati video we hope you enjoyed it and we hope you try it at home you won't be disappointed until next pizza.
