The Best White Castle Slider Recipe On YouTube | White Castle Cheeseburger

Feb 27, 2020
Hey guys, thanks for stopping by Ballistic BBQ, it's time to make another video for my burger series and this happens to be my most requested burger of all time. I'm going to set up the White Castle

slider

, so let's get started right, White Castle. They are famous for their very small burgers, the burgers are square, extremely thin and measure approximately two and a half inches wide. What I've done here to get my little square burgers is I've got this nonstick. parchment as a pan liner, it has aluminum foil on the other side and I went ahead and just took a ruler and made a 1 foot square and divided it into three inch squares.

I chose three inches because I'm allowing for some shrinkage of the burgers as they cook the meat I'm using is 80/20 and is now one hundred percent beef. When researching this, I looked at a lot of other clone

recipe

s and one of the most popular

recipe

s is actually mixing colada. baby food and beef broth in the meat now I looked at the White Castle website, they claim it is 100% pure ground beef. I actually emailed White Castle and told them what I plan to do, they came back to me and said no it's 100% ground beef, yet I'm eating these, my family eats them.

I'm not going to put baby food in it. I stick with 100% ground beef, if you want to add baby food, do it, which I'm going to do now. is to take my hands and I'm going to press this into the square so that the meat spreads out on the parchment here. I'm going to take another sheet of this pan liner again, it's parchment on one side and I'm going to do that. place this on top of the meat take a rolling pin and I'm going to start rolling this out nice and thin and I want to try to get into as many corners as I can on this grid so we're done as you can see I've got this meat very thin and I was able reach all the racks, so with a pound and a quarter of ground beef I will be able to make 16 burgers and 16 hamburgers.

I'm cooking nine today guys I'm not going to do 16 now I went ahead and when I drew the grid I made sure I got over my line so I could line it up with my long knife here and I'm just going to find those reference points there is just tear off that piece of meat what I'm going to do is cut the square now let's go sixteen squares what I'm going to do now is slide this parchment onto a cookie sheet I'm going to put this meat in the freezer for about fifteen or twenty minutes, that will help me with the next step, which is to poke those signature holes with the burgers to allow the steam to escape and help cook the burger, so again 15 minutes.

See you in a moment, so the meat is already out of the freezer for 15 minutes and it's pretty firm. This will help us with the next process which is cutting those holes. Remember that

s are cooked on a bed of wet onions and steamed, this is how they are cooked. I was looking at some of the other recipes, the clone recipes, and what they suggested using to cut these holes is a drinking straw. The first time I tried this, I used a straw and I quickly realized that it was a labor-intensive pain in the butt because you actually have to cut, you know, through the meat, you know, you're cutting through those little ones. strands of muscle and fat so what I ended up doing was I went to my local hobby store and bought some 5/16 inch stainless steel tubing and this made my life very very simple what you do is you just push it in in and you can turn it, done, or if the meats are quite frozen, you can take a little. mallet or a hammer and hit it, but we're going to cut five very simple, very easy holes, so I'm going to continue doing this on all the burgers and after a few minutes of work this is what you're going to end up with.
The next step is going to be to take the meat, put it back on the cookie sheet, put it back in the freezer and we want to make sure it's frozen solid and give it a good hour, so it probably won't take an hour, but I'm going to give this a good hour. The good thing is that you can do it days in advance, so let's move on to the next step. Right now, the next step I think is what defines the White

castle

slider now when you think of a White Castle. slider, you think of little steamed burgers on a bed of onions, actually what White Castle uses is chopped dehydrated onions that they are rehydrating and in that they cook them, so I have here a cup and a half of chopped dehydrated onions and three cups of hot water, so we're going to use a two to one ratio and I'm going to let these onions rehydrate.
We'll be ready to cook in about 15 or 20 minutes, so before we get there. grilled I want to show you the next important component of these burgers and that's the bun, right now, the buns. I was tearing my hair out trying to figure out the buns in these little sliders, some of the other cloned recipes were using buns for baking and serving, some cut hot dog buns into thirds. I tried the buns, I mean they were good, but they just didn't taste like a hamburger bun, they tasted like a little burger on our bun, so I was actually making them. to bake my own White Castle muffins and there were a few recipes out there, then I stumbled upon these little beauties, these mini muffins are made by Sara Lee, they are the same size, the same basic shape, the same texture and I have to tell you, they taste like White Castle buns so commercially I don't think they're going to be any closer than these Sara Lee buns anyway guys we're ready to cook these burgers let's get out on the grill alright guys so I've got the Weber here.
I'm going to heat it up, no, I just have coals on this side and this side and I'm letting that nice radiant heat heat up this pan, it's a griddle and you know, if you're cooking this, you can do it on your stove. you can use an electric griddle, you don't have to use, you know, a grill like I'm making. I'm just doing this because this is what I enjoy doing: put those rehydrated onions on the griddle, it already smells crazy, it's like you know it. like a scraper or a dough cutter, those burgers, you guys can see them all here, see now, I've got them here, it's just a little bit of salt and pepper mixed in with the season, these burgers, okay, let's put those buns on, so Let's go to the bottom bun, top bun first. bottom bun top bun a little like a little leaning on the other one there bottom bun up by bottom bun top line bottom bun top bun I guess we already did it, shut up dog, okay, so I'm thinking that probably between five and five Seven minutes, these guys will finish, see in a little bit, sorry guys, and we're about to.
I would say about six minutes after this, check the slider, okay, let's get these things in the house and we'll put them right. guys here you are I must tell you it smells like a

white

castle now you can eat these sliders just like they come out of the girl with just the onions in there or you can add cheese. What I'm going to do is add a pickle, squeeze a little bit of mustard in here because that's what I'm craving guys, okay, let's try it without bragging. I mean I made it anyway. Thanks for the suggestions.
It's a fun kitchen. It seems a little complicated, but I think once. disable the system you can mass produce these things which would be great for a party especially like a kids party anyway thanks keep up those suggestions guys. I have a few more in the queue that I have to continue and I will do them. see you in the next video greetings
