Feb 27, 2020
Hi guys, thanks. My continuation of ballistic barbecue. My burger series. If you stumbled upon this video looking for a really good copy of McDonald's Big Mac, you haven't found it anymore. There are some videos that I have personally seen and I can tell you that I put a lot of effort into trying to make this

recipe

, first of all, thanks to the youtuber, she suggested that she make this video. It's been very fun, actually very challenging. The first thing we are going to start making is the sauce. There are two

recipe

s for the sauce floating around one is a video that was actually produced by McDonald's the other is on the net I found it was an article supposedly a recipe from the manager's manual of the 60s or something and I made both recipes and the one that was actually produced by McDonald's, I think is the closest to this today.

I actually went to McDonald's, bought a Big Mac and at the drive-thru window I asked for a side of special Big Mac sauce and they gave me To me this is like an anaplastic lid or something. This is what I used as a guide to reproduce the sauce, so without further ado, let's start with the sauce. These are the quantities I came up with: 1 cup + 4 tablespoons mayonnaise 3 teaspoons. of sweet pickle sauce 1 tablespoon yellow mustard 1 teaspoon white wine vinegar 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon ground paprika Now all these ingredients together looked like McDonald's special sauce, but it wasn't as sweet, so I suspect the guy in the video left out the sugar and that's what I did.

I added two teaspoons of sugar and it tasted really good, so plus 2 teaspoons of white sugar because we're going to put all of those ingredients in a small bowl and just beat it really well, so the next step, which I think is probably the most important, is recreate that bun now, as everyone knows, the Big Mac is made with a three-tier bun, they have what they call the crown, which is the top, the heel, which is the bottom, and the middle section, which they call the section of the club, you can't buy a bow like that anywhere, so the first thing we're going to have to do is make our own.

I want to start. although now it's a smaller bun with sesame seeds, it's kind of funny when you actually dissect the big robot like I did today, they call it the Big Mac, but actually if you look at the weight, size and thickness of the hamburger, actually it's not. That really big burger and the bun is no exception, it's not a really big bun, so anyway, let's start with that, making that three-tier bun right now, most of the other videos you see, you know, They replicate the Big Mac. What they're doing is they're actually cutting off a section of the top bun and they're using it as a center section and I get it, you know they're trying not to waste, but I'm going for precision here and the truth is this.

The heel section actually has the same consistency as the original Big Mac, so what I'm going to do is just cut off the bottom layer which is the crust with a nice sharp red knife, like that, there you go, look instead a bun that's basically the same thickness as this now we know it's going to be more like the real thing here okay let's start with the meat now okay now for the burgers I'm using 80/20 and I basically made two meatballs a little bit a little bit bigger than a golf ball and I'm going to flatten them again now.
Big Macs are not big burgers and there are pretty thin pieces of meat here, so it's not going to be my typical party burger, so let's make these really very thin now after it flattens out, you can see, I mean, Less than a quarter inch thick just to round it out makes it look pretty good now, obviously a raw burger that thin is going to be extremely difficult to handle so we have a couple of options. I saw a video where the guy froze him. No, I'm not going to do that. I make all my burgers on parchment paper.
I'm going to leave it on parchment paper, but to make it more manageable what I do. What I'm going to do is just take some scissors, you can take a knife or even break it. I'm just going to tear it up or cut it around the burger and leave it there until it's ready. put it on my flat surface and the nice thing about doing it is that you can do it with several burgers and stack them up, put them in the refrigerator whatever and you'll see that it will go on the flat surface and stay nice and intact, so I'm going to go ahead and do this with the next burger and then we'll move on to the next step and here we have two complete burgers, as you can see, they are easy to handle, we are ready to put them on the grill but before we do what I want to do is just cover the garnishes that are going to go on these burgers because I think it's a good idea that these cook so quickly is to have everything ready and on hand before taking them to the grill.
Now the Big Mac toppings are actually very simple, we have here very finely chopped onion for pickling slices, some very finely shredded lettuce and I go with a slice of American cheese, you know, the McDonald's website says to use a original mix. of cheese, I don't know, but it tastes like American cheese to me, it has the same texture, that's what I'm going to use, so we're ready to grill with American cheese now, so let's go out to my flat stainless steel surface outside and let's get these. the burgers are going well so we're ready to cook these burgers again on the parchment yeah no problem a little bit of salt a little bit of pepper now these buns are going to need a little bit of toast do this real quick and you'll see that The burgers are cooking. real quick, I just want you to know that you see that as you go up the side, the bugs have a nice touch, we're going to put them to the side here in the gray so these guys get a little bit more smoked pepper.
Okay, looks good, these guys. okay, let's make some Big Macs, okay guys, it's time to make the burger, now we have the bottom button, the metal button, the top crown bun, the first thing we're going to do is put some sauce on this fund that we are going to throw away. On some onion, has anyone ever had a Big Mac, this seems very familiar, so when that piece of American cheese burger shredded lettuce and in the middle they go with more sauce, more lettuce with onion, they go with two pickles again. I'm going to be original here.
Second party, here we go guys, the Big Mac, let me try it. They look a lot like the Big Mac, but the only difference is that it doesn't have that mass-produced, industrialized core flavor that tastes more homemade. Better imagine these are the old burgers that Ray Kroc came up with back in the day anyway, thanks for the suggestion, they're a lot of fun to cook, if you like Big Macs or if you've never had one, maybe you live in a country. that there is no McDonald's, they are already countries and there is no McDonald's, give this a chance.
I mean, it's a really good reproduction, the sauce is pretty perfect anyway, guys, thanks again, keep up the suggestions. I have more burger orders on deck. see you in the next video
