The BEST Big Mac Recipe! | Copycat

in the first place thanks to youtuber ang she suggested I make this video it's been a lot of fun actually very challenging the first thing we are going to start making is the salsa there are tworecipe
s for the salsa floating around one is a video that was actually produced by McDonald's the other is on the net i found it was an article supposedly a recipe from the managers handbook from the 60's or whatever and i made both recipes and the one that was actually produced by McDonald's I think is the closest to this today I actually went to McDonald's and got a Big Mac and at the drive thru window I asked for a side of Big Mac special sauce and they gave me i this like an anaplastic lid or something this is what i used as a guide to reproduce the sauce so without further ado let's start with the sauce ok these are the quantities i came up with: 1 cup + 4 tablespoons mayonnaise 3 teaspoons seasoning sweet pickles 1 tablespoon yellow mustard 1 teaspoon white wine vinegar 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon ground paprika All these ingredients together looked like McDonald's special sauce but it wasn't that sweet, so I suspect the guy in the video left out the sugar and that's what I did.I added two teaspoons of sugar and it tasted great so plus 2 teaspoons of white sugar because we're going to put all those ingredients in a little bowl and just beat it really good okay so the next step which I think is probably the step More important, is to recreate that bun now, as everyone knows, the Big Mac is made with a three-tiered bun, they have what they call the crown, which is the top, the heel, which is the bottom, and that middle section they call the club section. For starters though is to get a smaller bun with the sesame seeds now it's kinda funny when you really dissect the big mechanism like I did today they call it the Big Mac but really if you're going by the weight and the size and the thickness of the burger.
It's really not that big of a burger and the bun is no exception it's not a really big bun so anyway let's get on with it making that three tier bun right now most other videos you see , you know they replicate the Big Mac. what they're doing is they're actually cutting off a section of the top bun and using it as the middle section and I get it, they know they're trying not to splurge but I'm going for precision here and The truth is that this section of the heel is the same consistency as the original Big Mac nal so what I'm going to do is just cut off the bottom layer which is the rind with a nice sharp red knife here like this now look at instead of a bun that's basically the same thickness as this one now we have that's going to be more like the real thing here okay let's start with the meat now okay now for the burgers I'm using 80/20 and I basically made two meatballs a little bigger than a golf ball and I'm just going to flatten them now again The Big Macs aren't big burgers and there are pretty thin pieces of meat here so it's not going to be my typical party burger so we're going to make these really very thin now after you have flattened them.
I can see I mean less than a quarter inch thick I'll just round it out so it looks pretty good now obviously a burger this thin and raw is going to be extremely unwieldy so we have a couple of options. I saw a video where the guy froze it no I'm not going to do that I make all my burgers on parchment paper I'm going to leave it on the parchment paper but to make it more manageable what I'm going to do is just take some scissors you can take a knife or even rip it I'm just going to rip it around or cut around the burger and leave it there until I'm ready to put it on my flat surface and the cool thing about doing that is you can do it on multiple burgers and stack them up and put them in the fridge whatever and you'll see it'll go flat top and stay nice and intact so I'm going to go ahead and do this on the next burger and then we'll move on to the next step and here we go two full patties as you can see they're easy handle, we're ready to put them on the grill, but before we do what I want to do is cover the garnishes that are going to go on these burgers because I think that's a good idea that these cooks so fast is to have everything ready and on hand before taking them to the grill.
Now, the garnishes on the Big Mac are actually very simple. Please, here we have very finely chopped onion for pickling slices, some very finely shredded lettuce, and I'm going with a slice of American cheese. To me American cheese has the same texture which is what I'm going to use so American cheese we're ready to grill now so let's get out on my flat stainless steel surface outside and get these patties ready so we're ready to cook them. burgers back on the parchment yeah no problem a little bit of salt a little bit of pepper now these buns will need a little bit of toasting make it real quick you'll see the burgers cook really fast just want you to know that see that. coming up the side the bugs have a nice touch.
I'm going to set them to the side here on the gray for these guys to flip for some more smoked pepper. alright guys it's time for m take the burger now we have the bottom button top metal button crown bun the first thing we're going to do is put some sauce on this bottom we're going to throw in some onion has anyone had a Big Mac this looks like very familiar so when that piece of shredded lettuce from american cheeseburger and in the middle it's going to go with more sauce more lettuce with onion they go with two pickles again i go original here second party here we go guys the big mac let me give it a go these look a lot like the Big Mac but the only difference is that it doesn't have to you know some kind of mass produced core industrialized type of flavor tastes more homemade, better imagine these are the old burgers that Ray Kroc came up with.
Anyway, back in the day, thanks for the suggestion, it's really fun to cook if you like Big Macs or have never had one, maybe you live in a country where there are no McDonald's, it's already countries and there are no McDonald's . shot i mean its a very good reproduction the salsa is pretty spot on anyway thanks again keep up the suggestions.
