You will add 1 cup or 200 grams of light brown sugar, 1 cup or 200 grams of granulated sugar and beat them together. I took mine and then it looked like one and a quarter cup or 285 grams of melted unsalted butter, beat finely in one egg yolk, followed by a whole egg, you need to beat the tarnation of this, finally add two teaspoons or four grams of extract of vanilla and then add half the flour, mix until combined, then add the remaining flour and mix until you have a beautiful dough. Now look, the rest of this is very simple, you will add a mixture of six ounces or 170 grams of dark chocolate and 4 ounces or 113 grams of milk chocolate that has been coarsely chopped, fold it in and that is your dough, cover and let it cool in the refrigerator for about an hour to move on to the dulce de leche dough, remember that the wet is the same, brown sugar, white sugar, melts, butter, yolk, egg, etc., but the flour is different In a large bowl add three cups or 450 grams of all-purpose flour half a teaspoon or half a gram of ground allspice one teaspoon or three grams of ground cinnamon half a teaspoon or two grams of baking soda 2 teaspoons or 5 grams of starch corn, a teaspoon or 7 grams of fine sea salt, then mix until combined and you know the drill, add half the flour to the wet mixture until combined, add the rest of the mixture and that's it for that dough, cover that and let it rest.
In the refrigerator next, the s'mores dough should have a graham cracker flavor, so again the same wet mixture, but for the flour you will use two and a half cups or 375 grams of all-purpose flour for a quarter of cup or 38 grams of whole wheat flour 2 teaspoons or five grams of cornstarch half a teaspoon or two grams of baking soda one teaspoon or seven grams of fine sea salt and beat until combined, make the flour with the wet combination cover and rest in the refrigerator for one hour we have one more cobbler dough, this is special now first you will take a cup of 96 grams of rolled oats, put them in a food processor and pulse until you obtain a fine powder with small pieces now in a large bowl two cups or 300 grams of all-purpose flour followed by your oat flour two teaspoons or five grams of cornstarch 207 grams of fine sea salt half a teaspoon of 2 grams of baking soda whisk and well don't make me say it again you put the thing with the thing and you mix it, you have to cover the dough and place it in the box of your chili zone.
Cooking these is very simple. First, in a small bowl of dulce de leche, add half a cup or 100 grams of granulated sugar and one and a half teaspoons or four grams of ground cinnamon, so together and well, that's cinnamon, sugar, now take your dough, get two and a half tablespoons of large, old balls, roll them in the sugar, place them on a baking sheet lined with parchment paper about two inches apart, and then flatten the dough with the palm of your hand or with the flat bottom of a a glass, place them in the oven that has been preheated to 350 Fahrenheit and bake for seven to nine minutes and this goes for every dough there is.
I've heard the key to a great cookie is to underbake them. kinda want some of that gooey goodness now we have a lot of toppings so let's make this simple now for the actual dulce de leche all you need is as many cans of sweetened condensed milk as you want for the 14 ounce ones place them in a large pot cover them with enough water so that they are completely submerged by one to two inches, bring them to a boil over medium-high heat, then reduce heat to a simmer and cook for three hours. I know it's a long time, but open it. and look at the fruits of your labor, you'll want to smooth this out, rest it in a small bowl, whisk well, and if you want it to be smoother, strain it through a fine mesh strainer, let it cool completely, and store it in the refrigerator. now for the queen of toasted milk in a saucepan add half a cup or 60 grams of milk powder placed on medium heat and cook and stir continuously until it starts to brown nicely, then add a cup or 240 milliliters of whole milk.
Bring until steaming hot and turn off the heat and let sit for 10 minutes, strain into a separate bowl and cool completely separately in a mixing bowl. You will add one cup or 227 grams of soft unsalted butter, now beat everything until well and beat the nut in 4 cups or 450 grams of powdered sugar in batches until completely incorporated, then add one teaspoon or 4 grams of extract of vanilla and finally add the toasted milk just to loosen until the texture is thick and smooth like this pop that into a pastry bag and you are ready to assemble now the assembly here is simple, get your cookie baked, add a good heaping tablespoon of dulce de leche on top, spit it out to get a nice circle in the center and then use a star tip.
With the pastry bag, take out a small dot of your toasted milk cream, optionally you can give it a good grating of fresh nutmeg and that is your cookie, repeat with the rest. Now moving on to the s'mores, you have the baked cookies, same concept. 350 8 to 9 minutes, but this one is a little different, you know, instead of

making

a marshmallow in the center, I thought well, what if we like a marshmallow meringue? Get yourself a medium heatproof bowl, add four egg whites, a cup or 200 grams of granulated sugar and a quarter teaspoon of whipped cream of tartar, place it on top of slightly boiling water, do a pinch of fine sea salt and then just heat it up in the bowl of a stand mixer to heat and dissolve, move to a stand mixer with the whisk attachment and beat on high speed until medium stiff bright pink like this, then add a teaspoon or 4 grams of extract of vanilla, now put it in a piping bag and to assemble, take the cookie, place it and get a 140 gram cup of semisweet chocolate chips melt those bad boys, put them in a piping bag, drizzle the melted chocolate well on top of each cookie and then place the marshmallow topping however your heart desires, you want to do it in the center, totally fine. the only thing I recommend is that you burn it beautifully after placing it and you are ready to serve now look, the chocolate chip cookie dough is obvious, you put it on the baking sheet, you put it in the oven for 8 to 12 minutes and she is beautiful.
Last but not least the berry cobbler, first we are going to make a very basic raspberry jam. Now, in a medium saucepan, add one and a half pounds or 680 grams of raspberries. All that with between one and a half cups and two and a half cups or 200 50 to 500 grams of granulated sugar mix that and let it sit for 10 minutes to macerate, that's fine, don't go into the ditch, now add two and a half tablespoons or 23 grams of lemon juice, put it on medium high and then once it comes to a simmer, start mashing the berries and let it boil for about eight to ten minutes until it reduces.
Be sure to test its thickness for about five to ten minutes, pass it through a sieve to strain out the seeds, and cool. completely now, if reduced enough, its texture should look like this windshield now let's talk Cinnamon Streusel on top of the first medium bowl add in a cup 150 grams of all-purpose flour half a cup or 100 grams of white sugar half a cup or 100 grams of light brown sugar half a teaspoon or two grams of ground cinnamon half a teaspoon or two grams of fine sea salt and half a teaspoon or two grams of ground nutmeg whistle together token Bond and the next step is very important to get a fork and Let's sprinkle with care six and a half tablespoons or 91 grams of unsalted butter while scraping and stirring constantly until chunky but relatively combined.
If you want it to look like this, now spread it out on a parchment lined baking sheet and bake it at 350 Fahrenheit until just crispy for about five to seven minutes, let it cool completely and the topping is ready. Last but not least, our cream cheese frosting. I mean, we've done this a million times correctly. Medium bowl, two-thirds of a cup or 150 grams of salt. softened butter beat with an electric mixer filled with 8 ounces or 225 grams of full fat cream cheese if you're on a diet hey just don't make this beat those two with a hand mixer and then once it's done beat it in three. and a half cups or 415 grams of powdered sugar in batches until smooth and smooth, follow with one and a half to eight grams of vanilla bean paste or vanilla extract and then simply loosen it with milk about a teaspoon at a time until thicken to your liking. desired consistency, just remember that if you thin it too much it won't turn out very well.
Now put it in a piping bag with a round tip accessory and let's pipe the first little swirl of your cream cheese frosting leaving a little space between each one. little ring like this now separately with your raspberry jam also in a pastry bag, fill that space now I really like this, it looks really nice, finish by crumbling your cinnamon streusel topping on top of each and every finished cookies and look we have our four little babies here now look, I have to say we are going to enter this battle. I'm pretty sure I overbaked my cookies, oh boy here we go, look at these two honestly, they both look pretty good, let's get started. with original chocolate chip oh, if you don't like dark chocolate, you won't like this, you'll prefer this, so the next cookie is s'mores.
I like that this marshmallow can be chewed, not this one, but you. I have marshmallow in every bite and that's what I don't like about this but I'll give it a tie now this one on the other hand omg I think it's my favorite by far this is a Razzle Dazzle this is probably the the sweetest of all cookies, but the most important thing is that it has no artificial flavor, it is like a natural fruit. Last but not least, this guy is hello, honestly this one is a mess too. I can taste all the flavors in this one, that's the one that's missing the most.
The thing about these I don't have a buttery taste, no depth, no salt, it's kind of like sweet and whatever flavor is associated with it, so some of them are a little bit complicated, but we have a taste tester coming in to decide the winner. My God why? It's getting very darkhere, who are you? Try some cookies. I'm going to start with the chocolate chip one. Okay, cookie number one and cookie number two, let's go to number one on that one. There is a greater depth of flavor. much more salty, much more buttery now the second cookie is the s'mores one, oh this is crazy, I'm afraid I'll blow up two first ones, many more flavors in that one than this one, which seemed like it was mostly cooking.
I felt like a little marshmallow, it's a good time for the third berry cobbler. They should have more cookies. Jam number one now number two here's another one for number one. There's something contrived about this that makes me think it's horrible. It's a rock and the jam is just. best cool number one second last very bites so small too much sugar is bad for your teeth what are you sponsored by dentists? that was number two this one is hard both pretty good can I hold the other one too? one is a little chewier, this one is a little crunchy which I don't think is a bad thing flavor wise, they are pretty much the same so that I'll have to give it to this one, damn this is what happened, make your cookies like many of yours I voted for one, are you serious?
I'm glad you voted for chocolate chip because this is the one out of my cookbook. I'll take it as a

better

loss. it crumble you created the best cookie game but this will be the last time something is going to be surpassed do you want to know what else is getting overseas?
