guys we're back in the kitchen and today is not my experiment this is Nate yeah there's a YouTube channel called Bone Appetit, they do a lot of different things, my favorite subchannel on the channel is a chef named Claire who figures out how to make gourmet versions of various candies and cookies and things like that, and one of my favorites was that she did

skittles

, which in my head just did not work. It doesn't seem like it was possible to do it, but she knew enough to make something that she said was a very close approximation and the ones she made were gourmet, like she used real freeze-dried fruit flavorings and yeah, here's the basic idea.

Chef Claire Sabbaths of the Bone Appetit YouTube channel showed how she came up with a way to make her own bowls. We will try to follow her recipe and instructions, but make them giant and over

sized

instead of the normal ones she made. Let's try. and make giant skittles like the size of a

hamburger

, we have these Christmas decorations and we're going to modify them a little bit so that we don't have spherical skittles or we could just pack them up here and then love them, leave it. drop a little bit, yeah, we can, we can shape them a little bit, but this should give you the gist of about the size that we're hoping to get.

I think maybe a little bit smaller than that, but the point is it's going to be big skills, so we have a lot of ingredients, yeah, a lot of types of sugar, a couple of types of sugar and we'll start following your recipe and see if we can create giant skills successfully, so we need some pots, we need the stove. and we need to show a video to follow along, okay, our first batch of candy is now cooled to the point where I can start taking it out. This is basically a sticky recipe and you have to pull it and pull it and pull it and stretch it. and that mixes air into it, turns it white, changes the texture and during that extraction process, it's actually going to add a combination of sugar and citric acid along with some flavor and a little bit of color to try to get it into a texture of the skittles we're going for now, the only instruction that wasn't in the video showing how to make them was when you're supposed to add the flavor, sugar, and citric acid mixture and I did a test of this before just to see if I could follow a recipe.

I didn't manage to create full size abilities that time, it was actually like I could make the inside sticky and it worked more or less, but the only thing I learned. It's just that if you let it go too long it becomes very, very difficult to blend, so what I'm really going to do is flatten it out. I've only been stretching it for about a minute so far, but now this. It's our mix of sugar and citric acid with a little bit of Skittles Hathi, pour a bunch of that in there and add a little bit of strawberry flavored food coloring.

Honestly, this is an experiment. I hadn't made this before so, well, that cap of food coloring, I thought. It was more pink, I think I'm turning more purple, that's okay, the inside of our red skittles might end up being a little purple. I'm fine with it, it's not bad, but I think it needs more. I'm going to add a little more sugar and citric acid just for texture. I don't know if this has really stretched enough to solidify as much as we really want for bowling, but it has stretched quite a bit and I like the way it looks.
It looks in terms of it being the inside of a skittle, it's definitely still warm, so it may be sinking in a little more than necessary, but I'm going to cut this in half and we'll take each of these halves. We'll squish them up in our little Christmas ornament bowls here, try to shape them nice and round and smooth and then I think we'll throw them in the refrigerator to cool a little bit and then we'll have four more. flavors to do well, it looks like grape, but it's actually supposed to be the strawberry, it's the inside of the skittle, okay, so the fun part of these things when you first start, if it doesn't start at all , it is not. very cohesive at first it's very very stringy it doesn't want to stay together the only thing it wants to stay on is my gloves.
I'm not a fan at all of the flavor of the line but the lime smell is fantastic he just put like 5 works in there the whole studio doesn't smell like lime now and that's fantastic that's why I made the lime instead of the limit and then You can make the lemon you like more than the lime. proto putty, yes it just sticks a lot and then you just add more powder until it sticks less. I'll start forming around the purple color, which is very flattened, there's a piece of orange in it.
I'm going to hold on well. I made a bowling tortellini here. I think I'll just have to trim off the excess a little. We let our boluses dry and that is an important step for pastiche. The cover we are using is the shell. it's a little bit extra you can see now it just breaks off a nice crunchy shell let's talk about that because I took a bite this morning thinking it was going to be really sweet and it's overwhelmingly cornstarch it's sweet but it's not good. Yeah, a little bit of powdered sugar flavor and then a little bit of cornstarch flavor with a hint of gelatin, which is all there is to it, so it makes sense, yeah, but we have different levels of success here, some of our bowling They were too soft inside.
We thought the orange would really hold its shape and the lemon was sagging a bit, so now we need to add colors to these. We should have sprays that match the color of each skill. It's edible food spray, so let's get started first. We do this. I also went ahead and cut some duct tape s's and we're going to take those and use them as a mask so we can have the white s's on the top of each bowling pin, our kitchen scale, here I go, go ahead. and try to weigh our red one pound, one point three, seven pounds more, that is, more than a pound and a half of bolus, there we are going to add a little color.
I like it, it seems that our stencils worked moderately, some of our spray has dried, it has been like that. in an hour we may have used a little more than we're supposed to and this may not be the surface you're supposed to use this color spray on, but we're going to try to add some edible glitter to it Try to match the look of the skittles a little more and see how they are approximately 650 times the size of the skittles by mass. Yes, there are skills that are not all exactly the same size, but conceptually they are pretty close.
I'm pretty happy with what we have. Arrived well, I think we need a couple more tests to see if they taste good too. I want to see if we can get them to break the same weight as if you took a normal bolus and crushed it if I. I'm strong enough, this one won't be too strong, there we go and we like that breakout pattern where it's like it breaks and opens up. I'm curious if our giant pound and a half skittles will break down similarly. and then of course I just want to eat one, yeah, I'm going to try to smash it with the orange one, partly because it's already like it's leaking out the sides, so it's going to be kind of a CPR maneuver.
I'm going to try to put all my weight on it and see if I can make it creak oh boy oh it's very strong it's set up a little not much oh boy that's very hard that was all my weight I'm just going to see if I can cut it in half I can't open it, but voila, there is a bolo burger the size of a

, order if I can bite into it a little. Wow, can I worry about your teeth there mm-hmm, it's not citric acid, very good, yes. yes, in fact I think the texture is very similar, it really had the same chewiness but with the green and that's adding the sugar into the citric acid after the fact.

I'm sure you kept adding. citric acid in this thing I made, there's barely any showers, okay, wait, that's exactly what it's going to look like, like if you do it right, okay, uh-huh, I mean, it tastes like lime, so if you like lime, it's good, pretty powerful, not bad, oh my goodness, we have very different flavors, it's like artificial grape mixed with bubblegum like flavor, oh my goodness, so the artificial strawberry flavoring that we used I think it had some kind of carrier that normally It burns when you put it in something like a candy, we add it to this cold, so that bitter taste is still there, so it's like strawberry, but then it follows like a tree bark, it tastes like a game, like the sap from a pine tree, yes, but mixed with citric acid, so it has a sour taste, yes, like it has a strawberry flavor. the way we added it probably wasn't the best, our red seemed to have the best flavor, why do you like it?
Because I actually think orange has a decent flavor, it's made with real orange oil, it has a little bit more flavor. natural flavor than normal skittles. I like it, but only in very small quantities. Yes, I am removing them as small pieces like beef the size of skittles.
