Okay guys, let's start with the ingredients, so for this recipe we are going to need corn tortillas, eggs, oil, beans of your choice, four roma tomatoes, one or two jalapenos, half a white onion, a handful of cilantro leaves, two bay leaves, four. ounces of tomato sauce a teaspoon of garlic salt a quarter of a teaspoon of cumin and a quarter of a teaspoon of oregano so these are ingredients now let's start first we are going to start by cutting our vegetables in our tomato we are going to cut it into strong and for the Onion we are going to cut into strips and then cut them in half I am going to use only one jalapeño pepper because I am going to give it to the children so I don't want it to be too spicy, but if you want yours to be spicy add more jalapeños and I'm going to cut them in half and cut them into strips too and you can remove the seeds and this is all good, so cut them in half just like that, okay? so once we have our vegetables well cut we are ready to fry them well so in a frying pan I am going to put it on medium-high heat I am going to add about five tablespoons of oil and once our oil is hot we are going to start to fry our vegetables, so once our oil is hot, we will start to fry our onions in jalapeño and we will fry them for 3 minutes, after 3 minutes the onions should be translucent, so now we are going to add our tomatoes and with our tomatoes we're going to add our garlic cloves or our garlic salt our cumin oregano we're just going to cook it for two minutes so after two minutes this is what our tomatoes look like this now we're going to add our tomato sauce , mix it and we will add our cilantro and our two bay leaves, so now we are going to reduce the heat to minimum, okay? cover it and leave it we'll cover it and let it simmer for five minutes and then we'll taste it with salt and then our sauce will be ready so after five minutes our sauce should be ready so now just taste it with salt I'll just add a little bit and then I'm going to remove the bay leaves okay now we're ready to work with our beans so I'm going to use the same pan where I made my sauce and I'm going to add a tablespoon of oil so once that's heated up I'm going to add my beans and I'm using about three cups of pinto beans so once our oil is hot we're going to add our beans and I'm going to mash them up my beans are hot because I made them this morning so they're still hot so I'm just I'm going to mash and if you have canned beans, you can use those too, use whatever you have, so once. our beans are ready we're ready to work on our tortillas and eggs and to cook the tortillas I'm going to use a medium skillet I'm going to put it on medium-high heat and I'm going to add 1 3 of a cup of oil so once it's hot we're going to throw in our tortilla and make toast, so once our oil is hot we're going to add a tortilla and we're going to fry it so once it turns hard into a beautiful golden color, we're going to remove it and drain the oil on a tea towel, just make sure to press it down if you want to use more oil, then feel free to add more oil and then just repeat the process. until you have reached the desired amount of um toasts that you are going to make, so after we finish making our toasts, we will turn on the stove where we were cooking our oil and in the meantime our oil cools down a little bit. a little bit we're going to spread our beans and our toast we're going to make our eggs in the same oil, so we're just going to add some beans and just add however much you want and okay, okay.

As soon as we fry the egg, we're going to pour it on top of the beans, okay guys, after five minutes my oil is out, I'm going to start frying the eggs, I'm not going to turn it on. just because the oil is still pretty hot, I'm going to crack the egg and pour it in, so I'm going to turn it on low and cook the egg for about three minutes or depending on how you like it. The eggs depend on how long you are going to cook them. I'm just going to add a little bit of oil on top of the white.

My egg white is fine, so after three minutes the egg should be fully cooked and you should be able to cook. look at how the egg whites, if you feel it, they will feel quite firm, so they will be ready, so now we are going to cover them on top of some toast and now we are going to repeat the process until we have reached the desired amount of toast that we are making, so once we have our egg ready, we're ready to cover it with our sauce.
