make

homemade

boba

? but then I started investigating and I think I see the light. So I made my first

boba

recipe

, how to make a milk tea boba

, years ago.

It's probably about four years ago. I'll link to the baby...I mean the video above and below, but in that video I use pre-made products. silly They come in a package. They are vacuum sealed and you simply boil your boba. Very, very simple. Today, I'm going to show you how to make those

tapioca

balls. If you're not familiar with boba tea, boba tea is a type of tea that I think was invented in Taiwan and it has big

tapioca

pearls

in it, they're usually nice. darker in color and are very chewy and bouncy and are found at the bottom of a glass and are usually topped with a milk tea.

A black tea sweetened and fortified with milk and the tea is drunk along with the boba

pearls

in the background. So you have this kind of simultaneous eating and drinking experience. It is actually much more delicious and delicious than what I am describing. So I thought the boba madness was over, but it's not. I just read an article on eater. I'll put the link in the description about a Tiger Sugar location opening in New York. So I went down the rabbit hole. That's the Internet to learn more about Tiger Sugar. Which is a chain that originated. in Taiwan that makes this particular type of boba drink.

It has boba pearls, big, pretty ones at the bottom that they make fresh at home. Which I'm going to try today, and they're cooked on the bottom in this beautiful dark

sugar

y syrup That syrup is coated on the inside of the plastic cup and then milk is added and then it's covered with a slightly thick cream on top. Basically, you have a

brown

sweetened ice milk drink with chewy boba tapioca pearls at the bottom. It sounds fantastic and visually it is very, very striking. It's made for Instagram, which is why they call it tiger

sugar

because the sugar that coats the inside of the cup as it dissolves into the milk creates this kind of striped tiger pattern.

So at this point, in East and Southeast Asia, there are many different brands of this type of

brown

sugar boba, including one called Xing Fu Tang. So I figure there must be some reasoning for making boba fresh like they do at Xing Fu Tang. So I'm really curious to see how the

homemade

version compares to the store-bought one. I'm also curious to see what brown sugar milk tastes like. Like I was about to say tea but it won't contain tea. I'm also curious to see how brown sugar milk compares to milk tea, which I love, so comparing that will be interesting in my opinion and I'm also up for the challenge of making this.

So get started with eight free meals, that's $80 off your first month by visiting hellofresh.com and using the code Emmy80. Big thanks to hellofresh for sponsoring this video, now let's make boba! So boba consists of just three ingredients: tapioca starch, brown sugar, and water. We are going to combine 60g of water;
Now I'm adding 45g of muscovado sugar, which contains a lot of molasses, which is why it has this dark brown color, and we're just going to heat it until the sugar dissolves. Now we turn off the heat and now we are going to add just a tablespoon of our tapioca starch. And then once it's combined, we'll turn the heat back on. We'll try to avoid lumps here. So we're going to reheat this until it starts to thicken and then we're going to take it off the heat. It's okay, it's okay. Okay, out of the fire. Look how it thickens.
Isn't it amazing? The remaining tapioca starch. It seems like a lot of starch now, but eventually all of this will combine into the dough. Now we are ready to knead. We will use a little more tapioca flour to sprinkle our countertop. At Xing Fu Tang, they use a stand mixer to mix all of this together. But since it's such a small amount, I'm just going to knead it. It's also what Cooking Tree does in their videos. Now, we're going to need this until everything is well incorporated. And a little more tapioca if we need it. This is great, it's so flexible.
Listen to that sound, isn't it cool? Now we have this beautiful dough. Look, isn't she so beautiful? Look at that beautiful color. I'm going to work with about half at a time. Yes, but you want to keep the other half wrapped while we work with this half. So we'll just make snakes here and then cut the snake into small pieces. Now the boba will expand a little as you boil them, so make your snakes a little thin. By the way, this is my first time making boba, so I'm certainly no expert. This is based solely on what I have witnessed on videos.
So we have our snakes and now we are going to cut our pieces like so. Look how all those pieces come out. The kitchen tree shows a technique where you take three of them, put them in your hand, and then roll them all at the same time. And you get three? Bobba, so I'll come back when I've made all my boba into balls. Now that I've rolled out and shaped my boba, I'll add them to a pot of boiling water. I'm going to stir this because we don't want them to stick to each other or to the bottom of the pot.
So now they are floating on its surface, let's start the timer for 20 minutes. So after 20 minutes of cooking, we will turn off the Heater, keep them covered and let them rest for 20 more minutes, then we can prepare our drink. Okay, see you in a moment. Now we have our boba on the side that we have strained. Now we are ready to make our little brown sugar syrup. Then we are going to heat a frying pan and we are going to add 35 grams of muscovado sugar. Now we don't want the heat to be too high, we're not going to melt it, we're just heating it up.
So this is the method. which I saw in the Xing Fu Tang video I watched Just heat up the brown sugar and then add the freshly cooked hot boba It smells amazing molasses, brown sugar smells This is sugar and sugar burns very easily so we don't want this to burn . We just want everything to be nice and melty and glorious. Oh, that's so good. Okay, we are finally ready to prepare our drink. I bought a glass. I'm going to stick my hot boba in my glass and roll the boba like this and that's what's going to give us our tiger stripes.
Next, we'll add some ice. Next, our milk. Now I'm just going to cover it with a little bit of lightly whipped cream on top, just a little bit, *purses lips* you know Ahhh, look at it! The tiger stripes disappear pretty quickly, but I managed to get them. I'm so happy. So stinky. Beautiful. Yes, good. So now we mix this and doesn't it sound great? Alright, let's try this. Itadakimasu! Oh my god- *inaudible sounds* These are so good! It's so delicious, it's basically like ice cream You have heavy cream on top that is mixed with the cold whole milk, I use whole milk So it's rich and creamy, it tastes like melted ice cream That little bit of cream floating on top mixed with the whole milk mixed with that little bit of brown sugar that we use to cook the boba and the perfect balance of sweetness.
It's actually less sweet than ice cream, as the richness and sweetness of the combination reminds me of ice cream. It is absolutely wonderful and the homemade boba Absolutely wonderful. Actually, much better than the typical manufactured model. They are more flexible and tender, but still really delicious and chewy, but not hard in the middle. So it's fun! I love it. Hmm! I love it. Delicious. I don't miss tea at all. Although you may miss the caffeine later. How delicious, I love this. So if you're curious and have the time, I definitely encourage you to try this recipe.
