, but today I'm going to give you a little behind-the-scenes tour of my

kitchen

, so this is where I do all my recipe testing. I'm not in a studio, we shoot all the videos right here and it's not a big kitchen, I'm in an apartment in New York City, but I like to stay very organized, so I divided my kitchen into different zones, so I gave you I'll show area by area how I stay organized and where I make all my recipes keep going I'm going to go straight to my closet that's my car that's my coat closet I'm going to go that's 12 o'clock I'm going to go in the direction of clockwise and we will start with zone one which is the refrigerator.

A cultural touchstone during my youth was the MTV cribs, people always opened their refrigerator as if most people, for some reason, only had drinks lined up. Mine is a little different. A few people have asked me for a tour of my refrigerator. These are my gold snail hydrogel eye patches that I also keep in the refrigerator. What is it? They are eye patches that you put on like a stick. to your eye I don't know girl they just make it look better those are the only items that aren't food everything else is food so you'll see I have a lot of squeeze bottles I decant a lot of condiments into squeeze bottles for easy access and one hand maneuverability this is one of my favorite things of all time this is cupie mayonnaise it's a japanese mayonnaise made with rice vinegar and it's so delicious i put it on a lot of things and it actually comes in this fun soft squeeze bottle my favorite little appetizer delicious sometimes sometimes I have a small glass with ice and then I have to go to bed I'm sorry it's going to make that meat when I've had the door open for a long time so this drawer I don't know why they label them I don't know which means a fresh drawer usually I have cheese and herbs in this drawer I mean this is just I have a bunch of random pieces of parmesan cheese because I never remember if I have any and then I buy more here's a piece here's a piece I like aged parm that has little crystals in it I don't know why I have all this random beer in here that I never drink and that's why it's been there for a long time and then down here I have a bunch of pickle projects and also white fabric because I went through a phase last summer, what can I say?

Greed has made us do different things. Obviously I have a lot of thanks for baking, so I have eggs. I usually put the eggs in a quart, but I have a lot of Kerrygold butter, which is my butter of choice at the grocery store. I have my sourdough starter that I've had for six or seven years. I have to be careful with these drawers because I installed them myself and sometimes they fall so I hold them from below. pasta brand that I also love spolini, which I think is made in New York and then this is like a snack area. I'm not a fan of snacks. Sometimes Harrison has pretzels and we have matzah here. They are like these little chips that I eat but I don't think they are that good this is something I always have on hand and I have the last little bit left this is dried mango the best snack ever I love it this is the area where I also I like to do it like this and I hope it doesn't all spill out when I open it again that's the end of the pantry we don't have to go far for the next area the next area is my little baking nook so I created this area because I was tired of looking in the cabinet and having to look for the baking supplies I need all the time so I have my containers of flour and sugar, light brown sugar, dark brown sugar, powdered sugar, vanilla and then like all kinds of chocolate, this is a type I like items that I reach for constantly and it's convenient to have them out, so above the baking rack it's not really related to baking, but this is where we keep all of our oils and vinegars, of which there are many and in most cases.
We've put them in squeeze bottles so you like if you're cooking something and you need some agave, but if you need some amaretto, I don't know why you would or vodka like you do. I'm making vodka sauce, just take a little bit, you can just squeeze the pan a little bit with one hand or something, but yeah, that's my bacon corner and it's also close to other baking stuff like my parchment paper and trays for baking and all that. zone four I recently learned that I can sit on my trash can as a stool, so that's what I'm doing.
Zone four is my coffee corner. , that's not my preference. I like a good American drip coffee, so I have a Chemex that we used to have as a larger coffee maker, but the space it took up was too big and there are only two of us. people, so now we just use chemex, a coffee grinder, this is a very useful little Breville electric kettle that is also a steeper tea, so we make water for the coffee and we can also make tea in there, it's a very functional. We add this. um pot rack there because we had so many pots and pans and there was nowhere to put them and it's also nice to have these hooks here because a utensil crock wasn't big enough, that's the coffee area and the T-zone, this is the area from cats, I guess.
This is a microzone, don't even look there, okay? So it's like a big area that's half the kitchen and it's like the active prep zone of the kitchen, so I try to keep this counter space relatively clear so To all the baking stuff that I have, we added this little one kitchen card for even more counter space and storage. I used to keep my large electrical appliances outside and they took up too much space, so now we throw them in that cart and that's it. where we have more storage for pots and pans, these cabinets were originally like big shelves and you couldn't fit anything in them, so we added these pull out drawers so we can now store.
You know, I have cake pans and kitchen utensils that are a little heavy on knives. storage I really like this knife holder that has like little cork boards so you just insert the knife and it keeps them upright and they're easy to grab so I really like that this drawer is the stuff drawer where it's like me. I've tried to organize it about 50,000 times and I've never, it doesn't make sense, given up. This is like I have to search around to find what I need, but I can usually find it. Here's my pizza cutter, right? looking at it I'm going to use this I can't find my dough cutter it's hard it's hard in such a small space this little tray this is just a quarter sheet tray this is where we keep those things that we need all the time so squeeze out a bottle of olive oil, vegetable oil, a little spray bottle of water that I use for the cats, it's not actually for the cats, it's for cooking chili oil, red pepper flakes and then our salts, so we keep the salt Kosher, which I refill periodically. a gray sea salt which is good for the pasta water and then flake salt to finish the salt like mine grabbing it's the little thing with the blue yeah I don't know why this works so well for garlic but it does, so i keep going, i use it to preserve garlic and shallots often, so keep the garlic in a cool dry place, there is ventilation, oh yes, i should say mike, my friend mike, who is there, okay, take your tour , take 2. whoever made the fantastic theme song gave me this croquembouche ornament that I'm obsessed with and that's why I keep it here there are some sentimental touches there's my photo of Julia Child I have cake pans that used to be my grandmother's and I still use them, they look very flimsy, but they actually bake very well, everything comes out very even and level.
I love these if there was a fire and you could save one thing from your kitchen on the way out oh god that's all I can carry or one thing is maybe my rolling pin. I mean, I could replace everything, but that's something I've grown fond of. I've also gotten really fond of my flour and sugar containers because they fit perfectly into five, like a five pound bag of flour, and I've had them since I moved into my first apartment, I bought them at Target in Brooklyn, it's a little weird, but me and oh my vanilla, oh, and my starter, I forgot, okay, yeah, my vanilla and my starter, because they're like a lot of time was spent on those things and I would be devastated if they disappeared, generally speaking , I won't buy any type of gadget or appliance or anything that doesn't do multiple things, so even my rice cooker looks like it only makes rice, but it makes all kinds. of different grains um and it hasmultiple functions so I use the multiple functions rule oh my gosh my favorite thing guys my egg topper this thing is the most fun there's a spring here and you guys like to pull the spring and release it. and then the vibrations break the shell along this part, so that's a tool that only does half of one of them.
Voila, I will use this egg for something, but you can save the shell well and then you can clean it a little. a little bit and wash it, save it and then you can serve something in it if you want to be super fancy, where do you use your mushroom cleaner? Oh, leave me alone with the mushroom brush, it's a nice little brush you can clean your hands with. Although it's common on your nails, like with bread dough and very sticky dough, I get stuck on my nails, you can give it a little brush, I don't know what that does, it's okay, so I thought a lot about kitchen organization. because I have to because I've always lived in relatively small spaces and what I've learned is that you have to use a kitchen and make the kitchen work for you.
This isn't perfect but it works and I know where things are and This is what I'm comfortable with so the key is to adapt it to your use but I spend most of my time in my kitchen so I also make sure to add little touches that I really love, like having a bowl of fruit. and lemons, and you know, having my picture of Julia Child and really enjoying my cup of coffee in the morning, so I love being in my kitchen, it's my happy place and I hope that if your kitchen isn't that for you, Over time it becomes that.
