roast

our fish over the

fire

, boys, I'm going to go. I'm just going to do a simple gut and that should scale it, yeah, it's got some pretty big scales on it, so we'll scale it and I'll gut it. I found that when grilling fish you don't want to fillet it or do anything fancy, you want to put the skin on it because the skin keeps the moisture in the meat of the fish if you fillet it and then try to put fillets on it. an open

fire

they just dry out well my friends that's how it isThis fish grill basket is going to be we're going to open it like this pull out our Mr. refrigerator and cut some slits so the seasoning can get in there and what are we using to season ?

Voila, some Cholula hot sauce last year. when we came here I used hot sauce on the surf perch, it tasted amazing, flip it over, do this side, the meat of a surf perch is very very soft. I'm going to take a little bit of salt and we're going to put a little bit of salt in there first because in my opinion, no fish is good without salt and then we're going to put our hot sauce right on top of the fish and that's going to

roast

up, look at how it's reduced to chunks of meat. . There I'm going to put a little bit inside, of course, look. with that look, it's like a spicy buffalo perch, you know, I've been willing to flip it here, I guess since that's the thickest part of the fish it can cook faster because it'll be on the fire longer than the part of the tail. the perch right above the flames I said it rocks too high like that whip this thing up and see how much I like the spice it's a little burnt In fact I'm going to sprinkle a little more there some of you might be Wow this is going to be a super spicy surf hanger, but I found that when you roast spicy things over the fire, the fire actually burns off a lot of that flavor, so it won't be as spicy as you think.

It will be some heat, but it won't be crazy. I think it's ready guys, give this just a second to cool and then we'll try it and then we'll grill some

. I said a prayer very quickly. Be a fool not to say a prayer after this blessed day. Okay, man, it's nice to be here, of course, I'm sitting in front of the fire, but it's probably around 54 something like that. I can not believe it. mild weather we've been having here surf burst surf perch roasting good, very good, I love the roasted taste if you guys have never roasted fish on the fire, I love it in butter, I love cooking fish and butter and all that, but there is something wonderful . roasted flavor that can't be duplicated unless the open flames are actually like licking the fish, friends, a little stone crab um, you know, let's kill it first, it's not really moving, but we'll kill it first.

I'd hate to, oh yeah, it's still moving a little bit. I would. I hate, yeah, slow roasting a living creature, here we go, we tear off the top of the shell there, it's all going to stick, we're just going to stick everything in there, so you're not even going to do it. In case there's a little bit of crab butter on the shell, we're going to stick it whole like this and we're going to put this guy over the fire like this and roast him rotisserie style. I'm heading to the second crap we're on. We're just going to put it on the rock really close to the fire now that it's dead, so if it moves a little bit, don't be alarmed, that's just nerves, but we're just going to put it close to the fire and let it cook that way, boy one .

What I will say about driftwood is that it burns very, very, I mean, hotter than most logs and stuff. What I'm doing, guys, is I'm just spinning this crab on this hot rock. I don't want the flames to affect him. I just want the heat of the fire to cook it unlike this one here where you can see it's getting a little bit black there and that's because the flames are on it so we'll do a sort of taste test comparison. My friends, both

crabs

are done, if I could figure out how to open this, here we go, now we have two different beasts here, look, its legs are falling off.
I let them both cool a little, this is the one. that's actually roasted over the fire and then this one is we just use the heat to try to cook the meat inside it smells like fresh crab yeah Wow that's good that's succulent let's get into the actual claw part actually let's get right to it they are ideal for the big man, the stone crabs are a little thicker than the old Dungeness mmm, it is cooked, I was afraid it was not cooked, we have to put it back on the heat, but I cooked it long and slow, no wanted to. ruin it, holy mackerel, we wrap it in a rock here, cover this there, yes, these claws are a little thicker than the old Dungeness crab.
Look at it, it looks exactly like white meat and the outside of the shell is burnt, but inside it is fine, let's try the one that has just been cooked in pure heat, it breaks a claw hmm, that's good too, both are good, well, guys here is my verdict on fire roasting crab, firstly there is a scam that is needed, it seems to take a long time to connect. Like 30 minutes or more, I could have turned the heat up a little bit, but I feel like that would have turned them so black and like here, they would be like Burt's crab, so I simmered it for at least 30 minutes and I prefer to boil them for about half that time and I think they taste better cooked in salted water.
Another disadvantage is that when you cook them this way the meat does not come off the shell as well as when you boil them. minute it shrinks and it is easier to take this out. I'm really digging to get the meat out of the claws, so that's another disadvantage of fire roasting, so I would say fire roasting fish is fantastic, fire roasting fabs isn't. In terms of fishing, there's almost nothing better than fishing, exploring and crabbing all in one day, don't forget guys, go click that link in the description, follow me on Fish Brain, check this place out for yourself if they want it.
