Welcome back to Binging with Babish, where this week we're taking a look at Steven Universe's Breakfast Together. First of all, to see the exact version, I have some toasted waffles coming out of the toaster, a nasty brand of maple syrup with an offensive name, drizzled generously on top, some microwave popcorn sniffed because I really can't help it when I make popcorn that I have to smell. and spread on top of and around the waffles. And honestly, I think it's a very good idea. I think it will add some crunch to what is normally a pretty soggy waffle situation, an extra splash of maple-flavored corn syrup, and a generous drizzle of canned cream.

, which contrary to his name and purpose, I'm going to eat alone. And as you can probably guess, not so well. The waffles are dry and hard. The syrup tastes like sugar chemicals and the popcorn provides a nice texture, but needs more flavor. So I think there are some ways we can improve this breakfast together. First, of course, we have to make homemade waffles and I'm going to try yeast waffles because I've never made them and they sound fun. First, I'm beating two eggs with a teaspoon of vanilla, setting it aside and in a large bowl, combining 240 grams of all-purpose flour, a tablespoon of sugar and corn flour, a teaspoon of kosher salt and two teaspoons of dry active. yeast.

Beat small until smooth. And then on the stove, I have two cups of whole milk and a stick or four ounces of unsalted butter that I've heated to 105 degrees Fahrenheit or hot enough to activate our yeast. So let's add that to our dry ingredients and mix them gently. And halfway through the mixture, we'll add our beaten egg and vanilla mixture and then gently mix everything together until it's still chunky, but there are no egg streaks left. And then, since this is fermented with yeast instead of baking powder or baking soda, we're going to let this guy sit at room temperature for an hour or until it's about doubled in size.

Then, optionally, you can let this type chill in the refrigerator overnight to develop its flavor. Next, we need to tackle our popcorn. I'm going to make some on the stove by heating three tablespoons of coconut oil over medium-high heat in a large pot with two or three grains. Once one of them pops, we will remove it from the heat, add 1/3 cup of unpopped popcorn, cover them and let them come to temperature off the heat for about 30 seconds. This will help them heat more evenly and prevent burning. Once the 30 seconds are up, place it back on medium-high heat and stir constantly, taking this opportunity to make faces at the camera, gross.
Turn off the heat and remove the lid once you hear less than one or two pops per second or, as we call it, the industry PPS. Scoop the popcorn into a large bowl and then we'll make something I've been looking forward to all week, maple caramel popcorn to go with our waffles. To make the caramel in a medium saucepan, I'm combining half a cup of brown sugar and maple syrup, six tablespoons of unsalted butter, and three tablespoons of water. Cook over medium-high heat for about 10 minutes until it reaches 240 degrees Fahrenheit. At that point we will add 1/8 teaspoon of baking soda and 1/4 teaspoon of vanilla extract.
Mix that until combined and then immediately pour it over the waiting popcorn, folding to evenly coat the popcorn, as soon as possible before the caramel starts to solidify, as you can see, I waited too long, so that I didn't do it. We don't get a super even topping, but we still have some pretty nice caramel corn, which we'll spread evenly on a parchment paper-lined baking sheet and place in a preheated 300 degree Fahrenheit oven for about 20 to 25 minutes, rotating until the half. Through Then all you have to do is let it cool completely and crumble it into individual pieces.
And this has to be the best caramel popcorn I've ever had. Not only is the maple really good, but the baking soda makes the candy super light and brittle, so it's not chewy, it just dissolves. So now it's time to try it with some waffles. We are going to prepare our waffles following the instructions specified by the waffle maker manufacturer. In my case, cook 1/3 heaped cup for five to seven minutes. Remove lightly browned and keep warm in a 250 degree Fahrenheit oven on a rack set on a rimmed baking sheet. Now all we have to do is make some whipped cream.
You can just whip up some sugar and cream by hand, or if you have a whipped cream siphon like this one, you can combine two tablespoons of powdered sugar with a cup of heavy cream, charge it with CO2, shake it, and you're done. We're off to the races. Finally, to assemble, we're going to stack our waffles in a proud pile, garnish them liberally with caramel corn, dunk them mercilessly with real maple syrup available now from today's sponsor, Thrive Market, and hit it with a big spoonful of homemade whipped cream. As much as I appreciate Steven's enthusiasm for breakfasts that bring people together, I think I have a better use for this caramel popcorn and that is toss it with some cheddar popcorn. We simply apply lots of yellow cheddar cheese dust as soon as the popcorn is popped; otherwise they won't stick, a few generous pinches of kosher salt and mix to coat.
