I'm going to season this mixture with just a little bit of anti nose. I like to finish this entire portion and mix it before folding in the ends of the potatoes. I take a 32 ounce bag of tater tots and start with about half of this bag, mix them up a little bit, and then go in with about half of that ground beef. For me, it's a little easier to mix them up. this a little at a time and the ground beef really helps you know, just mix it in because mine is still nice and warm. I love this casserole.

This is great to bring to potlucks, it's great for weeknights, like I said now, something else which could At this point you could take half of this, honestly it would still fill a 9x13, it would just be thinner or you could put it in an eight by eight and you could cook it for tonight, then take one of those pans from the freezer and put the other half in there and put it in the freezer.

I'm going to use a whole can of cream style corn. This is a 14 ounce can. It will break into two eggs and half a cup of milk. You just want to mix everything really well. I have done a number. of different variations of this recipe I have made it with a taco type deal with enchilada sauce I think I have made maybe a chicken and bacon ranch type I don't think I have shown that here but you can't go wrong starting with the bed of mix of Jiffy cornbread, we're also going to put a cup of foreign shredded cheddar cheese.
I have a 9x13 casserole dish that I sprayed, I'm just going to put all my cornmeal in it now let's Bake this for 20 minutes in a 400 degree oven while we start our Sloppy Joe mix. I have a pound of ground beef here, this is 80 20, so it's a little greasy, so I'm just going to grab some paper. towel to get some of the grease out of here as best I can, my cornbread is almost done so this comes together really quickly while you do all the different steps, the goal of this meal for me is quick and easy, it's for that use this can now if you wanted to level up you could definitely do your usual sloppy games like I do with Pioneer Woman and I love them that would take it to the top they are not difficult and they are also pretty fast but you have the extra step with cornbread, this is, I guess, super easy, but anyway, my meat is already cooked, the extra fat drips out of the mixture into my Manwich and I'm going to let this sit here and simmer for about five minutes, okay, I didn't even have to let mine sit for five minutes.
Mine just heated up really quickly and that's all you're trying to do here is just heat it up, take that Manwich and spread it all over the top. Here, now, on this one I didn't make holes in my cornbread. If you've seen me make other ones of these where I've put enchilada sauce on it, I do make holes in that cornbread just to let things get in there. but this one you just spread it on top I can't leave it in the oven without maybe another cup of shredded cheese on top here now I still have this oven at 400 degrees let's go in another 20 minutes nothing says fall or even a snow day like this casserole there is nothing better than the flavors of cornbread and sloppy joe together.
I like to top it with just a little bit of green onion and you can see the hidden cornbread there. I love serving casseroles along with salad and my daughter had brought us truffle mac and cheese the night before from where she works and it paired perfectly with this meal, comfort food at its finest and with a name like mammals, Mexican casserole, how Can't you just love the next dish?
The dish is made with about a pound of ground beef. I'm getting ready to put some onion and garlic in it, but this dish is called Mexican mammal casserole. It's very similar to something you may have seen before, it's called Dorito casserole, but when I make it with chicken, I use Doritos and I put a few different things in it, but when I use ground beef I like to use white corn tortilla chips, you can see here. I have two bags of the same thing open, we are famous. because that happens in our house, but when I get to the point where there are some crumbs on the bottom, that's when I always like to take out this little plate and use those crumbs, so let's do that.
I have my Ground Beef, all browned with a little onion and a little garlic. I'm scraping the bottle with this chili powder, but I'm going to put in about two teaspoons, that's too much. I have to be careful with the chili powder. I could go crazy. I like it. I'll also fit in a can of mild chili beans. Many of these recipes call for ranchero beans, which I think are just pinto beans, but I like to sauté them a little with some of those mild chili beans now. The two ingredients I have left are this can of Rotel, you're going to use it undrained and I have a can of Fiesta Nacho Cheese Soup, you could actually use a cream of mushroom soup, cream of chicken soup, one of those packets of cream sauce.
Velveeta cheese or just a can of regular cheddar soup use what you have but if you can get the nacho fiesta I really like it now when you read this recipe it says to mix this Rotel into this soup in a separate bowl and go I'm going to layer this, but I'm going to mix it all together here, it's all going to come together anyway, this is how I iron it to do the dishes, now you're going to take some of your tortilla chips and just mash them up, this recipe should be made like eight by eight. or nine by nine, but this is a big plate but it's relatively thin all the way to the bottom, so I like to do it like this, so you're going to take about half of this mixture here, this is always the hardest part for me on this one. type of meals, is calculating how much it is and, honestly, it doesn't have to be perfect.
I may have used too many chips, but I like mine. for crunch, I put fewer chips near the top. This recipe calls for some Mexican cheese. You are going to put a cup between each layer. What I'm going to do tonight is just use some Monterey Jack and cheddar cheese mix that I'm making myself now we're going to make another layer of chips. I use a little less on this layer. Come with the rest of your meat, beans, cheese and tomato mixture. I'm going to try to cover those chips pretty well. with a little bit sticking out, that's fine, then top it again with another cup of cheese.
You really can't mess up this casserole. The only advice I really have to give you is to watch it in the oven. Put it in a 350 degree oven for 30 to 35 minutes. Everything is cooked. All you have to do is let the cheese melt and if you leave it there too long the chips will get a little tough so it will go away. I say it all the time, but I swear this is a favorite part of a casserole for me. I love it when it comes out of the oven. I like to serve this as a taco salad.
Put some lettuce around it and then put all the good toppings that I would put on top. tacos, this also goes great if you want refried beans or culo on the side, anything like that, but I like mine, a big old taco salad with some green onions on top. I made this for a family dinner night with this little casserole feeding five of us with enough leftovers for a couple of us to have for lunch the next day. I love the flavors of this casserole, it's not overpowering at all, it just tastes like what the name implies, it's mom's Mexican casserole, it's flavored with chili, beans, ground beef. and onion, but it's not over the top with a lot of taco seasoning or enchilada sauce, it's really just a hearty, meaty good Tex-Mex meal.
I couldn't do a ground beef video without putting this cheeseburger in heaven, this recipe of course starts with a pound of ground beef that you are going to brown with some onions if you want to add a little garlic in this step you can do it again too, these are all very customizable to your favorite flavors once all the fat is drained I'm going to put in about half a teaspoon of salt and half a teaspoon of garlic powder. I'm also going to put a little Worcestershire sauce. The amount you want. It depends on you. You already know what your family likes.
Once you've mixed all of that together, I'm going to place it in a greased pie plate and then top it with about a cup of shredded cheddar cheese and this recipe is the perfect size for a pie plate. Cheeseburger in Paradise has wonderful toppings. It starts with half a cup of Bisquick and to that I add a cup of milk and two eggs. I'm going to mix everything very well. I just found this recipe in the last year and a half or two years, butA lot of people have told me it comes from an old Bisquick cookbook so it's tried and true in my house, once you mix it all up you just pour it in.
Place the top of everything in your cake pan and this is placed in a 400 degree oven for 25 minutes. Mine always comes out perfect after 25 minutes. It's so delicious. These flavors are simple, homey and comforting. I love this little dish. Everyone in my family loves it. when I'm in a hurry, this is one that I pull out something that makes me think of that sauce and cream cheese baked on the buns, but I love it, of course, I put it on a salad and if I have something It's called a cheeseburger. I love the larger onion rings.
This is one of my family's all-time favorites. Now I'm sharing another family favorite: my Aunt Kathy's cowboy beans and of course this one starts with a pound of ground beef. I'm going to brown that on top of the stove with some onions, you can season it however you want, then I like this just like my Aunt Kathy always did, as long as it's browned enough, let's start mixing. all in our pork and beans and I'm actually using two 15 ounce cans or you could use one of the large 28 ounce cans of pork and beans. I am going to add a tablespoon of chili powder and three tablespoons of vinegar to a cup of tomato sauce.
I am using a two quart saucepan that I have greased and has a lid. You want something that's covered to make them in a Dutch oven or a bean pot or something because it really needs to retain all this heat. I also add a little salt and mix it all together once I've drained the fat from the ground beef and onions. I'm going to mix that with the pork and beans. I'm going to cover this. and put this in a 400 degree oven for an hour covered the whole time, this dish comes out bubbly and good and you just leave it covered for a few minutes and let it sit and then when you take the lid off look how thick and rich and glorious .
This is it, I love it, I bet I've made it a million times, it gets thick and rich. This is a typical week for me when I make cowboy beans the first night. I like them to be the star main dish of the show. I crack open some of those Margaret Holmes canned vegetable crisps. I have fried cornbread in there or hoe cakes and I made a box of pasta salad and then later in the week I'll bring them out as a side dish. leftover pasta salad and add more ranch dressing and greens to eat and fry the burgers, so a knot when I make pasta salad with a box and cowboy beans helps me all week.
