Although I don't recommend that you cover them with sauce. - Oh, Ted, not really. - Oh, oh, come on. Take a look there. - Oh, those look good. - Good? Go ahead, take a bite and you're done. That's how you do it. (soft music) (beep) - Mae. - Hey! - Hey, what's up guys? Welcome back to Binging with Babish, where this week we're taking a look at shortbread cookies from the delightfully charming Fred Lasso. Brant, Ted Lasso, that was a real outtake, folks, I'll leave it there as a kind of punishment for myself.

Anyway, let's start with a very, very quick and easy shortbread cookie. In a large bowl, place 225 grams of soft unsalted butter, 100 grams of granulated sugar and three grams of kosher salt. We beat all this until it forms a paste with a normal size mixer and then we add 340 grams of all-purpose flour. We mix at first with a rubber spatula, and then once it becomes too crumbly, we use our bare hands until the mixture is smooth, there are no more dry spots, and we have a beautiful crumbly dough, an early indicator of that we have achieved a nice shortcrust pastry.

Next, we generously lubricate a quarter sheet with butter, pour in our dough and begin to press it down. You don't want to put too much pressure on it, which is something I'm definitely doing right now. but this is my first batch, give me a break. Oh no Andy, don't use the, ah, you used it. Anyway, once we overpack it, they'll pop it in a 150 degree Celsius oven for a whopping hour to an hour and a half. Then we will let it cool for 10 minutes before measuring and cutting. I say measure, because I have a pretty pink puff pastry package, like Coach Lasso, that I want them to fit into.

Then, once cut, it's time to let them sit until they cool completely, at least four hours beforehand. recovering them with the smallest and thinnest offset spatula. And as you can see, I pressed them too hard and I strongly suspect they were underbaked, but they still had a lovely short, crumbly texture and a beautiful buttery flavour. So let's try it again, this time adding some secret ingredients and correcting my mistakes. First, toasted sugar. A sugar whose virtues are endlessly extolled by the one and only Stella Parks. Basically, we just pour a bunch of sugar into a large saucepan and bake at 150 degrees Celsius for two to three hours.

We are beating little by little, every 15 to 20 minutes until the sugar is golden and toasted. Allow to cool completely before using. Next up, some Browned Nut Butter and Toast, where we cook and constantly stir some butter in a medium skillet over medium-high heat until the milk fat separates and turns golden brown. Also, let it cool completely before using it. Now, in the bowl of the mixer, we combine 140 grams of unsalted butter, 55 grams of our brown butter, 140 grams of our toasted sugar and three grams of salt. Beat on high speed until creamy. Scrape the sides of the bowl well and then, in a separate bowl, combine 275 grams of all-purpose flour and 55 grams of cornstarch.
Beat lightly to combine, before pouring into the stand mixer. Mix on low speed for a minute or two until a crumbly dough forms, at which point it's time to add our final secret ingredient. We're buttering our quarter sheet well as usual, and then we're evenly coating it with Demerara sugar, a thick, crunchy, molasses-y sugar that will give our cookie that crumbly look that they have on the show. This time, with much more care, we place the dough on the prepared tray and cover it with a generous layer of Demerara sugar, so that it is covered on all sides.
And bake, once again, at 150 degrees Celsius for between an hour and an hour and a half. This time making sure it comes out looking golden and crispy on the edges. Again, wait 10 minutes before carving into the specified shapes and allow it to cool completely for at least four hours. Retrieving our cookies before the most important part, assembling the box. I have a 150 millimeter by 115 millimeter by 70 millimeter pastry box here, which should fit our cookies like the British equivalent of a glove. I know they are much bigger than the ones on the show, but they have the same beautiful golden, crumbly texture.
The kind that you can tell will be sweet, short, crunchy and nutty, just by looking at it. And it's all of those things, it's my new favorite shortbread cookie. There's only one more thing we need to make these truly sparkly cookies, and that's tea. Also known as Ted Lasso's garbage water, but do you know what they say?
