At the end of this video, we will really find out if it is really worth spending so much money on a regular cheeseburger. We start with ground beef, the cheapest you can find. This one is 73 percent fat and 27 percent fat. By no means is this the best ground beef out there, but hey, it's cheap. And as you can see it is already ground and all you have to do is start making your balls. I like to keep them between two and a half and 3 ounces. To me, that's the perfect ratio for the smashburger. I also recommend using parchment paper because it makes the job a lot easier. For the sauce it is one of the easiest things to make. In a bowl add some mayonnaise, followed by ketchup, yellow mustard and sweet sauce.

for my second burger. I'm going to use this beautiful rib eye dry aged for 35 days. And although this is going to go in a dry-aged cheeseburger, the first thing we need to do is remove the films, which have a very strong and pronounced flavor.

Now, you don't want to throw that away if you were making a regular cheeseburger, it would be perfect to add to the mix. But since this one is already 100% dry aged, there is no need to use films. After opening them, I decided to go to an even higher level, which is to remove the connective tissue and silver skin. That will ensure my burgers are absolutely amazing. Using my meat grinder on the lowest setting, I started grinding it. Always remember to keep the meat as cold as possible, including the mincer. After cutting it into strips, look at this. It's like the Picasso of beef, for me the perfect ratio of fat and beef together. So I grabbed my meat grinder and started the process. And right at this point I was doubting myself, but hey, there's only one way to know if it's going to be any good. But once I was done with all the work, this is what I got.

Instead of using normal mayonnaise, I am using Japanese mayonnaise, it tastes different and I like it. The next ingredient is a very special Brazilian hot sauce. This friends is not that expensive but the taste is very good. But it's also very spicy so be careful. And this is ketjap manis, it's basically sweet soy sauce. To prepare the sauce, I first started with Japanese mayonnaise, followed by ketjap manis, and finished with a Brazilian hot sauce. Now mix it well and your sauce is ready. This one has a very ripe flavor. Now let's talk about cheese, I will use three different types.
And the first cheese is Brie, it is a soft cheese that has a very unique flavor. And of course the second is authentic Parmigiano-Reggiano and finally an aged Grier. Combining all of these cheeses should make a wonderful sauce. I first started by cutting the Brie cheese. A lot of people don't like to keep the outer edges, but I say that for a sauce it's absolutely fine. For the other two I simply grated them. To make the sauce it is extremely easy I started with a little butter. You want to keep it on low heat to melt the butter slowly.
Then I added all the cheeses. Keep over medium-low heat until all the cheeses have melted. And when you're done, you should have an amazing, amazing cheese sauce.
