Use It Up Pantry Challenge // Guacamole, Nachos & Tollhouse Cookie Bars

Mar 30, 2024
Hello everyone, it's Friday afternoon and today I decided to make

guacamole

and

nachos

for lunch because the Yas are home all day and didn't have to go to work today. I hope Danny can eat the tortilla chips that I really need to consume because I bought them at a BOGO on Super Bowl weekend and we still have a whole bag left once I have the

guacamole

, let her try a chip and if that's too much for her her, then she'll have soft tacos and Gabby and I will have the nacho guacamole recipe I'll put it in the description box below, but I clipped it out of a magazine at least 10 years ago.

How funny is it that of all the guacamole recipes I've tried, this is the one I like the most. I also use a little less red onion than the recipe calls for just because I prefer to taste the avocado more than the onion. I pulled out two little packages of ground beef from my chunks and bites bin, so here we go, I have three perfectly ripe, chopped avocados. Those have been in my refrigerator, so I'm going to cut this oil. I think it will be enough for the guacamole and I like mine cut into very thin cubes.

More Interesting Facts About,

I don't think I'd make guacamole since we moved into this house. so after two and a half years, even that is a bit shocking. I used to make it fun all the time. How it happens, you can do these things all the time, then you walk away from them and the next thing you know, a lot of time has passed. time since you did it right so that's good and then these are little cherry tomatoes from my garden. I harvested them this morning. I'm going to try cutting them into quarters and hope they are small enough if you don't have fresh tomatoes to chop you can always use salsa instead but I think the guacamole keeps a little longer if you use fresh tomatoes.

I really appreciate having that volunteer cherry tomato plant that keeps giving little trickles here and there. I used probably the equivalent of 50 in the last two weeks and, you know, it ripens them slowly. I harvest maybe 20 at a time so I'm not going to use these, just what's down here, I'm still limping, it looks a little worse. wear and tear right now, but I plan to let it do what it can for the next week or so and then I'll probably chop it up on the stovetops and see if it comes back for me and it requires two cloves of garlic, so I'm just going to put a teaspoon of minced meat there.

It also calls for fresh cilantro. I have none. I'm just going to sprinkle a little bit of this to give it color and not worry about whether or not. you're adding a lot of flavor and then half a teaspoon of salt, half a teaspoon of black pepper and a few pinches of red pepper flakes. I already added half a lime to the avocado. The recipe calls for a quarter cup, but I think it's a little more than you need, but you make it according to your tastes, it looks so pretty. I love making colorful dishes in the spring, so I'll cut off anything with really big, thick hair.
I would have liked to have cut those tomatoes a little smaller, but that can be tricky with cherry tomatoes, so we'll call them pretty good, but fresh from the garden we can't beat them for nutrition. I think it's good, so I'm going to put them on. this in the refrigerator to cool and start working on the taco meat for the

nachos

while I wait for the ground beef to finish thawing. I'm making some Nestlé Toll House

cookie

bars

. To me, the recipe looks a lot like the same. as with

cookie

s but I will link this recipe below and since we are a small family I just made half a batch the recipe calls for putting the dough in a 15 by 10 pan and I thought it would be eight by 10. eight what I like to make is a chocolate chip mix, but these are all dark chocolate.
We love these chips and for some reason they make these dark chocolate chips a little bigger than regular chips. I don't know if it shows on the camera. I like to make a mix of chocolate chips and M M and he says this is a sold out

pantry

challenge

. We've had these M M's since the fall. I put them in the jar. I have no idea what the expiration date was. but Danny tests us when he said they are fine. I'm going to spread it out in the 8x8 pan and I'm just going to put some aluminum foil over it and let it sit on the counter for a while because I'd like to get these nachos in the oven right, as you can probably see there's quite a bit of cookie dough. here.
I think this pan will be fine since I cut the recipe in half instead of the 15 by 10 pan. I have my ground beef in the pan and Looking through my spice packet container, I ran out of taco seasoning. I have about a third of a pack here and this. I got like four packs of this probably last year on clearance at Publix. I think I paid like 29 cents a pack or less inspired. Of course, you know it's just a spice. On December 21st I will open this because it says chorizo tastes good with pork. I've never used this type before, so I'll give it a sniff and maybe try it a little.
Try it on my finger and decide if I want to put that in there and if not, then I'll make homemade taco seasoning. It smells pretty much like regular taco seasoning. Now for a little taste test, it's a really interesting flavor profile. It's got a little bit of a knot under the brown sugar, but I think this will taste great on nachos, so I'm going to do it right, so I've got my ground beef cooking here, these were two packages from my bits and bytes container and that's in At least a pound, maybe a little more than a pound of really good quality organic grass-fed beef, so we'll use it in nachos because we're clear that the chunks and bites come out no matter what you can't wait for. eat. these nachos is that we are guacamole, they turned out fabulous if I do say so myself and now I'm going to give Danny a taste test on a chip so he can tell me if he can eat nachos.
Danny said yes, he can handle eating the chips. Woohoo, she's really excited about the nachos and I'm a little wrinkled too because I planned to make a big pan of them, but Gabby and her fiancé went out to the gym just now, so I'm going to make these nachos in two shifts, but I'm going to make this little bowl of nachos for Danny that comes with a little cork trivet and she's hanging it in a room so I think it'll be perfect for her and I'll make a separate little one for myself. I'm going to try to do a single layer of deliciousness here and then maybe a layer on top, we'll see how it comes out, you know, nachos are a single layer, foreigner is always better.
I thought I only had half a package of cheddar cheese left. but it turns out I only had a quarter pack and a full pack left because I had that one folded in half there and it was hidden because I doubt she could eat much more than this here, so call it right, keep it simple. simple it's good you're in the oven she goes here it's the finished nachos sometimes you just have to mess them up a little take it to Danny my nachos are more than I can eat I'm sure but I'll give it a good try so I'll show you the

bars

cookies in a moment.
It looks like these cookie bars turned out perfectly. I'll let you know after they cool enough to try them now fabulous, they are so delicious if you have kids. I love these things. Have a great weekend.
