. It is the perfect dish for those looking for healthy and flexible homemade meal ideas. So here I have a couple of

es, about 350g each, and I'm just going to peel the sweet potatoes. Alright, now we need to grate the sweet potatoes and we're going old school with a box grater. So keep your knuckles tucked in. You want to have 10 fingers at the end of this. And just grate the sweet potatoes into a large bowl.

Alright, those are our two shredded sweet potatoes. Put that aside. And I'm also going to grate the red onion. Trim the top. You can save all these vegetable scraps for your soup broth. Leave the tip of the onion on so we have something to hold onto while we grate it. We will simply grate the onion in the same bowl as the sweet potato. There might be some tears here. I hope not. The onion is really getting to me. Alright, all that onion is with the sweet potato. Now we just want to put this in a colander or strainer, whatever you have at home, and we want to try to squeeze as much liquid out of the sweet potato and onion as possible.

So this is a bit of exercise for your arms, but the enemy of a crispy, crunchy

rosti

is liquid. We don't want it soaked. We want it nice, light and somewhat crunchy. So give it your best flexibility. Try to get everything you can. Okay, I think that's good. We have a good sort of half a cup of liquid left that has come out of the sweet potato and onion mixture. I'm going to season the sweet potato with a little sea salt. Potatoes love a little sea salt. Give them a good seasoning and this will help keep them crispy in the oven while they cook.

Give that a little spin. Make sure it is evenly covered with that salt. We just need to place this rosti mixture on a lined tray. So I have baking paper. Place on a tray and simply spread the sweet potato and onion mixture loosely on the tray. You don't want to pack this. The best thing about this rosti is all the little jagged edges and bits that stick out that will turn golden brown and crispy. These are the things we love about fries and that's what we also love about rosti. Alright, that looks good and even with the sweet potato.

Now, if you had some olive oil spray at home, you could spray it with olive oil. I'm going to sprinkle it lightly with a little extra virgin olive oil because that's what I have. And you don't need to soak it in oil. We just want a light coating, just enough to keep it cooking. Now I have the oven at 200 degrees and this takes about 30 minutes. Well, while the rosti is cooking in the oven, we can prepare the

for the

roast

ed tomato element of this recipe. You will need another tray simply lined with baking paper. And I'm using Coles Vine ripe cherry tomatoes.
These are on the vine. By roasting them on the vine, we give this recipe that beautiful tomato perfume. I have 500g, or two packets, of cherry tomatoes on the vine and I'm going to place them on that lined tray. And you just want to sprinkle the tomatoes with a little bit of olive oil. Tomatoes love a little sea salt, so season them. They'll take 15 minutes to get sweet and blistered in the oven with that sweet potato rosti. So I'm going to introduce this now. Very good, the rosti has had its 30 minutes in the oven. Check it out.
It's beautiful and smooth, with a nice crispy surface. And the tomatoes... look at that. All the juice is coming out, they have wrinkled and they are a real bomb of flavor, those tomatoes. You could add whatever ingredients you want to the rosti. I'm going super simple. Then an avocado. I think it's easier to cut the avocados into quarters and then just peel them and you'll get a nice cafe style avocado quarter and you don't waste anything either. So all I'm going to do now is place the tomatoes on top of this rosti and I'm going to serve all of this on the tray.
And then you can cut the avocados however you want on top, so... And I'm also going to put in some arugula leaves, beautiful and spicy, and it's always good to add some greens to the mix as well.
