I used to be so good with Sunday nights that I would look at my calendar and plan the whole week what I was going to do which night based on what we had going on and I don't know I've just been busy I have the plans up here but I don't have them written down on paper and then it's Monday Motivation is always lacking at the end of the day too, but I may not have a plan and I may not have any motivation, but I have bacon and that's always a good option, so I start with bacon and go from Join me, okay, I've got my oven preheated to 400 degrees and we're going to have a spotty bacon unboxing.

I display this bacon a lot in my grocery shopping. This came from Aldi and it's less than four dollars, it's like 385 or something. which for 16 ounces is a whole pound this bacon is delicious the first time I bought this bacon I didn't know it was irregular or it said something like that I noticed it in my supermarket they were showing it and I was like wait irregular bacon What is it? I didn't know what I had bought, but they are just irregular slices and this is probably one of the fattest and strangest ones I have ever seen.

to the next level and I'm just going to put this in the oven. 400 degrees, I can increase it to about 420 and I'll start checking it after 10 minutes.

It's spread out and looks pretty thin, so it probably won't take long, so keep an eye out halfway through. this after about 10 minutes here you can see how this bacon has really shrunk and I'm going to go ahead and combine it all in a pan here now you can see I have this little pan filled and it looks good. We'll throw this back in the oven for about five or seven more minutes. We will review it. Oh look, yeah, yeah, it took about seven more minutes. I like mine pretty crispy. Let's take this out of this tray and place it on paper towels.

It is draining while the bacon is cooking. I've been here wondering if you ever wonder why I always have pulled pork that I'm pulling out of my freezer to use. This is why my husband smoked a big pork butt. He loves doing this. and it's delicious, but anyway, if you don't follow me on Instagram, you should follow me there and you'll see all the cool purchases my husband gets at the grocery store. I shared this there this week, so some of you knew. A big pork butt would come anyway. I took some of this out and mixed in their honey, maple, and applewood smoky barbecue sauce.
We're going to take a grilled cheese to the next level and we're just going to build this. all together, okay, I've melted some butter, I think I'm going to put a little more and this would be

if you had some of that nice thick artisan bread or something, but we're using honey wheat sandwich bread Aldi that's what we get that's why a lot of my videos are called real life weeknights what's for dinner because you're getting real life weeknights here what's for dinner here I think I'm going to wear American cheese on your head. and these are the nice deluxe singles that are not wrapped, they are a little sturdier.
I'm going to leave one of those and then I'm going to go with it to barbecue and I'm not actually going to barbecue. I'm going to do something else because I've already had all the barbecue I can eat, you know, this week, anyway, it's a good amount of barbecue, but let's give it another spoonful because we're going to put it all in there, that's all we have . That's it, let's put some bacon on it, there's a nice little piece, look at that bacon too. Did I show everyone how cute? Look this is great bacon for less than four dollars a pound at Aldi's, get him this little curly piece, let's put in our other piece. of cheese right there now we're going to use some of my raspberry chipotle jam and jams.
I'm just going to take this slice of bread here that I have the cheese on and I'm just going to spread this scream trying to Get Away From Me over this cheese, like this, look, we slide your cheese back up here onto your bread and here we go over the top, oh my gosh, oh my gosh, let's see what it looks like, oh yeah, we could convert this. let me put a little more butter on it, okay just a little bit, here it goes, I'm back, oh look at that, if you're local you'll be familiar with the Reo Cheese Wagon food truck, that's my friend Tina Rae. makes like grilled cheeses but they're like gourmet grilled cheeses their signature cheese is called blackberry smoke uses provolone cheese with blackberry jam i don't even know what but no one makes them like tina tina they say imitation is the best form of flattery so that's what I'm doing tonight.
I was inspired by you and your food truck so if you're local you should check out Tina and my jam is local. I'm going to share a little about these jams with you in a moment. Look how beautiful this BBQ, bacon, cheddar, chipotle, and raspberry sandwich turned out. It was absolutely delicious for a night when it was just Patrick and I hanging out together. He loved this and I think he would like to eat it again very soon now that he had had it. all the barbecue I wanted so I decided to take one of these frozen roasted chicken breasts and

it in the oven and I'm just shredding it a little bit and I've got some butter in my pan and I put a flour tortilla on it and I'm just taking a some of the same American cheese I used on your sandwich instead of going with the salty.
I'm going to use fruity and sweet in my dinner tonight. I'm using this tropical jam and I'm just going to spread it on my cheese and my tortilla. Now I thought about using a little ham here, but I really thought chicken would go well with this, so I left it out and put some bacon on mine too and topped it. with another tortilla, give it a little softness and my pan was a little small here, but let's see if I make it. I did it with that always airy somersault. It didn't take but a minute for this to cook and watch.

I'm very happy. to share my love for your jams with all my friends oh friends I've been waiting this is my Christmas jam oh my gosh you know I love a good peach it's summer I mean the ultimate jam but this one right here It's sweet, but it's got the warm, oh, the warm cozy Christmas vibes, I'm ready to watch a distinctive movie tonight, I pulled out the little crock pot, you can see, I sprayed it, guess what's going on with the dumplings, it's happened a while, you know, we've just been waiting. I eat the food snack and that's a bag from Kroger the homemade meatball this is a 26 ounce bag that's about 24 26 meatballs I love the homemade flavor I think it's the best and I'm sad to say I will Finish my jar of raspberry jam and chipotle.
This jam is so good with meat that it's also good with cookies and things like that, but this jam just does something with that pork barbecue from the other night that was delicious. It was wonderful. We're about to finish. patrick has done so much bbq we're almost done so i have my crock pot up high i think i'm just going to add a little bit of this and honey bbq sauce this is like a sweet baby raised but this is from aldi . brand I bought this really cheap a while ago and it's really good, it tastes just like the sweet tender grape, we love it so I'm going to look at maybe that's why, it's a little less than the jam I put in it, I'm just going to mix that in, okay, I just mixed them enough to coat them and they are fully cooked of course, but they are frozen so the liquid from these will melt and sauce up a little bit more. and I'm going to be here today, this only cooks for like two or three hours, you gotta keep an eye on it and the frozen meatballs, that's not the kind of dish you can throw in your crock pot and leave all day, ask me how I know you'll end up with some very black little dumplings and a very messy crock pot too, so anyway I'm going to put the lid on this, I have it up.
I'll check it in about two hours and see where we are. From there tonight we're going to make some loaded tater tots or tater tot boats, I don't remember what I call them, but what I have here is a normal size muffin or cupcake and I've greased it and I'm putting five tater tots in each one of these, I have my oven set to 450 degrees and I'm going to

bake

them on the bottom rack for ten minutes. I took them off the bottom rack, this little one here, I'm going to give this a spray and I'm going to make little cups with these tater tots.
This little thing is from the pampered chef. I actually forgot I had this. I was going through some kitchen drawers and found it and had completely forgotten about it. I'll try to find one of these on Amazon and link to it in my little shop in case you're interested, but don't feel like you need one of these because I made them several times before I found this guy. I had this

vanilla

bottle right here and it really fits better and look I just used it but you can always find something to use if you have a shot glass that would work great but I'm going to move on. and I do this to all of them and when I'm done I'll put them back in the oven, but this time we're going to continue as if the normal rack that mine is on is about three, two or three points down from the top. but we're going to put them back on that rack for about 15 minutes and at this point it's going to make them crispier.
They're a little soft now, so when you squeeze them like that, you put them back in for 15 minutes. minutes this is going to get really crunchy okay take them out they look brown and beautiful this is the last step you're just going to come back with some cheese of whatever type you want and fill them and then you're done. I'm just going to put them back in the oven for about four or five more minutes until the cheese is melted and then you can top it with whatever you want. This may not be the healthiest dinner you've seen tonight.
I found out tonight. It was just going to be me and Patrick here and you know what we can get used to in this empty nesting business. I mean, we're just going to be sitting here eating meatballs loaded with tater tots living our best life. You can't ask for more. than that, let's put them back in and finish that bag of cheese, give them about four more minutes and that's it, and now comes the fun part, you can do whatever you want with these if you're not sick of barbecue. some shredded barbecue would be great for these, you could do anything but I decided to make them like a loaded potato skin, sour cream, bacon bits, green onions, these are our favorite treats served with these meatballs and this raspberry sauce and chipotle was They are so good that you can serve them over rice and make an entire meal around it.
There are so many things you can do with meatballs that you can make a really good sandwich with it. We just had a kind of aperitif dinner. delicious and I wantLook how perfect these were. They were about two and a half hours, as tender as could be sweet, salty and just a little bit of that sauce and we had plenty of leftovers to get us through another night after this week of snacking. I decided we could probably use a home-cooked meal, so here we go. I'm going to make chicken pot pie and tonight I'll only use canned chicken.
I didn't have cooked chicken in the freezer and I just drained it and cut it into pieces and I like canned mixed vegetables in my chicken pot. cake, I drain them before I put them in, I put in a can of cream of chicken soup and then I like to add a big spoonful or two of sour cream which just adds a little bit of spicy richness and I always throw in a handful of cheddar cheese it gives it a nice bite. I like to season it with a little bit of black pepper and I'm using my noseless aunt which is salt, garlic and onion powder and I'm just mixing everything together in my pie plate.
For the topping I am using a cup of this baking mix that is the Kroger brand of bis

quick

and in that you are simply going to mix half a cup of milk and an egg. I love all the different recipes that have bisquick toppings or whatever. with bisquick, I love bisquick and you're just going to pour it over the top and spread it out and this is going to go in a 400 degree oven for about 30 minutes. Now let's start with our corn in the On the other hand, I have about two tablespoons of melted butter in my cast iron skillet and I'm trying to get two tablespoons off the end of this honey, it had gotten a little thick so I have to get it in microwave to get soft and I'm going to throw away this bag of frozen corn.
It's 12 ounces of honey, it never really goes bad, it will harden or crystallize, but it heats up well in the microwave, so put it all in the pan and leave it. that come together, I'm going to add two tablespoons of cream cheese, then I'm going to season it with just a little bit of salt and pepper and I'm using whipped cream cheese because I had a little jar and it works well. as well as the block of cream cheese, now it will seem a little watery to you, but trust that go ahead and let it cook and the water will cook out and it will get thick and sweet and sticky, so about the Once our corn is ready , we take out our chicken pot pie and are ready to eat.
This really tastes good after our little empty nest snack week we had. We had a nice family meal with this delicious chicken pot pie. honey corn and a big salad this is one of our favorite comfort foods at its best it was quick it was easy it was cozy and delicious but it didn't take all day now I have another cake and this one is a winner I'm going to use very simple ingredients, but it's this

marshmallow

cream that took this cake over the top. You'll take a block of cream cheese, soften it, and then beat it for a couple of minutes.
Use your hand mixer until smooth and then you will add a box of instant

vanilla

pudding. This is the smallest box. I'm going to beat it for a minute or so until it's all incorporated, then you're going to take this 7 An 8 ounce container of

marshmallow

creme calls for marshmallow fluff, if you can find it, note that this gets a little complicated and crazy, but it's worth mixing until it's all combined. Now you will need an 8 ounce container of marshmallow creme. whip and you're just going to fold this into that marshmallow vanilla cream cheese. This is so good.
Now I'm using a graham cracker crust. It would be great if you wanted to use one of those chocolate barks or one of those pecan barks. whatever you want, put the pie filling in there and spread it out. You will store it in the refrigerator overnight. This one really needs to sit for a while because that marshmallow fluff really needs to set up, so I definitely suggest leaving it there. in the refrigerator overnight and it will soften pretty quickly now when I pulled this out I was thinking about toppings. It would be really cute at Christmas to use your little sprinkles and things like that on the top and I thought that would be really cute.
I need to remember that or like in the winter, just these bright little ones would be like ice cream, but I'm going back to this tropical jam and I think it'll be a great topping on top of this. cake and I'm taking this to my mom's house for Sunday dinner and you can see it got a little soft because it set while we were eating, but mom is pouring and look that jam was so good there and when you remember you have a can of whipped cream which is the best thing in the world this cake was so delicious the marshmallow cream just does something to it it's so good and you can really taste the vanilla we I love this cake.
My mom is not a fan of jello cakes and she really liked them. Thank you very much for being here this week.
