herb rice for a fantastic and tasty

and I am sure you will love it too. So let me show you how to do it. We will start by making the herb and lemon marinade. And if you've seen my video on six simple chicken marinades, this will look familiar because it's essentially my lemon Greek marinade from that video.

But we are going to change the chicken breasts for chicken thighs. You'll start with a third cup of extra virgin olive oil and add a quarter cup of fresh lemon juice and always use freshly squeezed. It just tastes a million times better in marinades. To that, add four cloves of minced garlic, one tablespoon of dried oregano, two teaspoons of dried thyme, two teaspoons of Dijon

ard, two teaspoons of kosher salt, and one teaspoon of ground black pepper. Whisk everything until it is emulsified like a dressing would be and then set it aside. I'm using eight-bone chicken thighs for this recipe and many of you know that I'm a big fan of chicken thighs for their tender, juicy meat.

Plus, if you have a habit of accidentally overcooking chicken breasts and drying them out, it's virtually impossible to do that with chicken thighs, which is all the more reason to love this recipe. Add the chicken thighs to a bowl or plastic bag and then pour the marinade on top. If you are using a bag, you can simply seal it and then flatten the chicken to

sure it is completely covered. Or if you're using a bowl, just stir them around a little with your hands and then let them marinate in the refrigerator for at least an hour or two so they can absorb all that bright lemon, garlic, and herb flavor.

. So place the chicken in a nine-by-13-inch casserole dish side by side and then pour the leftover marinade on top. You definitely don't want to waste all that amazing flavor that's in the bowl, so

sure to spread it over the chicken. The chicken will cook for about 40 to 45 minutes in a 350 degrees Fahrenheit or 180 degrees Celsius oven, although you can always use an instant-read thermometer to make sure it registers 175 degrees Fahrenheit or 80 degrees Celsius inside. You can also baste the chicken a few times while it cooks for perfectly browned chicken.

And if you like crispier skin, you can turn on the top boiler of the oven during the last two or three minutes of cooking. Now, since I'm always asked what to serve with easy chicken

s like this, I thought I'd make lemon herb rice for my cookbook today. The flavors are a perfect match with the combination of lemon, garlic and herbs. So to do that, heat two tablespoons of extra virgin olive oil in a large skillet over medium heat, add half of a medium onion that you've diced, and sauté for three to four minutes until softened and translucent.
Then add two cloves of minced garlic, the zest of one lemon, which is about a tablespoon, and one and a half cups of basmati rice that you have rinsed and drained. Once you've added everything to the pan, sauté for about another minute. Add two and a half cups of low-sodium chicken broth, although you can also use vegetable broth. The juice of one lemon, which is approximately three tablespoons and a half teaspoon of kosher salt. Stir quickly, bring to a boil, then reduce heat to low and let simmer covered for about 12 to 15 minutes. Although personally, I like aldente rice a little better, so always cook it on the lower end of that time spectrum.
At this point, remove the rice from the heat, stir again if desired, and then let it sit, covered, for another four or five minutes to rest. Before serving, add a quarter cup of finely chopped fresh herbs and today I am using a mixture of parsley, oregano and dill. But you can also use thyme, tarragon, basil or another tender herb. You will simply mix half a kilo of green beans with a tablespoon of extra virgin olive oil, two cloves of minced garlic, a teaspoon of kosher salt and a quarter teaspoon of ground black pepper. Once done, transfer the beans to the basket of your air fryer, set the temperature to 375 degrees Fahrenheit, and cook for seven to eight minutes shaking the basket halfway through. I'm a little obsessed with air fryer vegetables lately because they're so quick and easy. So stay tuned for more recipes from them on the website.
