everything better. A unicorn frappuccino. Better! A unicorn cookie. Better! A unicorn headband. Better! So today we are going to make a magical unicorn cake! Let us begin! The recipe we are going to make today is a Funfetti cake from scratch.

What you will need are: 2 cups of all-purpose flour; 1½ cups of sugar; 1 stick salted butter (you'll want it at room temperature); 5 large egg whites; ¾ cup whole milk; shorten ¼ cup; ¼ teaspoon almond extract; 2 teaspoons vanilla extract; 2 teaspoons baking powder; ⅛ teaspoon salt; and ¼ cup rainbow sprinkles! Now let's put it all together! The first step is to whisk together our dry ingredients in a medium bowl. Add the flour, baking powder and salt. Then beat until well combined and moving to one side. How nice! That's some Funfetti. It smells delicious! Now, divide the batter evenly between 3 cake pans. I use 6" round cake pans, greased and lined with a piece of parchment paper on the bottom to make it easier to remove the cake. Cakes are ready to bake! Preheat oven to 350 degrees and bake for about 30-35 minutes. Keep your eyes on the cake as it bakes. Once the top turns golden brown, it may be a good idea to poke it with a cake tester or, if you don't have a cake tester, you can use a toothpick. Simply place it on the toothpick or cake tester, then when you take it out and the dough is not sticking, the cake is ready.

With a bunch of different colored buttercream frosting that I have here, we're going to pipe a bunch of this on top. And it cascades down the side to look like a unicorn's mane. *licks lips* I have tinted the polishes light purple, pink, dark purple and blue.
A kind of cake mix. I thought these colors would look good together, but you can use any color you want. I'm going to start making rosettes with my light purple and pink. Both have an open star tip. This is number 824. A rosette looks a bit like a rose. You start on the inside and work your way up. I'm always afraid of the frosting getting in my hair. Same with pink. Round and elevator. Now, I'm using light pink and darker pastel purple French tips. These are number 4B. Place small portions between the rosettes. Last but not least, our purple and dark pastel blue, give some kisses.
The tips at the end are round circles, a #2A. Squeeze down, apply pressure, and then pull up to make it look like a little Hershey's kiss. Boop! I don't know why the noise helps, but it does! Help me. We have our magical unicorn mane background music. Now is the time to improve your eyes. Over here, in a small pastry bag I put some black icing, with about 4 tips. I keep my eye design very simple, placing 2 arches, with some small eyelashes, but you can place any design you want. Our unicorn cake is almost ready, but it's not a unicorn without a horn!
So keep the cake in the refrigerator while we work on making our final decorations, the unicorn horn and ears. The first step is to make the ears. For me, I taped a piece of wax paper so the fondant wouldn't stick to the surface. And I have some powdered sugar. I'm going to sprinkle a little bit down on top of the wax paper. Roll it out, break up some white marshmallow fondant and roll it out. I have a teardrop and a smaller teardrop cookie cutter. Cut 2 of each. I'm also drinking some water. The water helps the fondant stick.
Acts as an adhesive. Then, to shape the ears, let them dry on top of something round. I'm just going to use my fondant rolling pin, but you can also use a beater or another rolling pin. To make our unicorn horn, I rolled out a conical rope of fondant. It is thinner on one side and thicker on the other. I like to use a long popsicle stick, but if you don't have one of these at home, you can also use a wooden skewer. Take a small paintbrush, add a little water at the end and paint the popsicle stick.
This will help secure the fondant. Now, twist the fondant around the popsicle stick to create a little unicorn horn! It looks a little like one of those unicorn lollipops you see at Disneyland, and they're all rainbow and delicious! This is what the horn looks like. I left some room for the popsicle stick in the bottom left corner, so you can put the stick in the cake. Now let it sit for 10 to 30 minutes to harden. Last step to make our fondant decorations, we will paint them gold! I have some gold edible highlighting powder over here. A little goes a long way.
You don't have to use too much. Pour some into a small bowl. *Doot Doots* Then I add a little almond extract so that when we paint it it won't be scratched. In fact, you can use a clear alcohol. Look how beautiful that is! Move the gold. I want to paint eyeliner with this! This is so beautiful! Now, paint the inner ear, and the entire horn, gold! I just took the cake out of the refrigerator, it has already cooled. Now is the final decorating step. Add our horn and ears. Oh Lord! Look! Ta~DAAA!!
