, so many of you wanted to check out this recipe and let me know. I tell you I've been eating it all week and it's delicious guys, it's great with a cup of

coffee

. They were going to love this now that it has a little bit more net carbs, although it's not bad, but it's amazing with your coffee and me. I know many of you have been missing coffee

cake

in your life, so let's get into the ingredients, so for the cake you will need 1/2 cup of softened butter 1/2 cup of monk fruit sweetener or any type of granular sweetener you have 2 eggs 1 cup whole sour cream I like to use Daisy two and a half cups almond flour 1 tablespoon baking powder 1/2 teaspoon xanthan gum 1/4 teaspoon net nutmeg and 1/4 teaspoon of ground cinnamon.

Now you can definitely use more nutmeg and cinnamon. I think I'll do that next time for the cake and then we'll put a coffee cake crumble on top, which definitely makes it something you can do. this just with the cake guys and leave out the crumble and it would have less carbs but I don't recommend it it's so good with this crumble so the crumble is 1 cup almond flour 1 teaspoon cinnamon which I think I'm The next time I'll use more salt 1/4 cup chopped pecans or walnuts or whatever type of nut you prefer 1 tablespoon plus 1 teaspoon monk fruit sweetener or any other type of granular sweetener you have 3 tablespoons melted butter so Those are the different ingredients that you're going to need for the crumble and the cake so let's get into this amazing

We have a lot to make for the cake for the cake, we have two and a half cups of almond flour. I like to use a sifter from the Dollar Tree because even though it says finely sifted on the package, everyone can see what these lumps are definitely not and when baking on keto, I highly suggest you sift it and get rid of all those lumps that we're going to to use with our baking powder which is a tablespoon of baking powder and a half teaspoon of The xanthan gum that you see here you definitely want to use it and it will bind everything together so I'm going to use a quarter teaspoon of nutmeg and a quarter teaspoon of cinnamon , but like I said, I think you can definitely add more to that.

I like a lot of spice in my dessert, so I think I'll add a little more. You can definitely taste it even with this. Now I'm going to use my wet ingredients, so I'm going to use my butter. Here's half a cup of softened butter. In fact, I had it a little melted and now I'm going to use half a cup of monk fruit sweetener. I like to use golden monk fruit. I really like its flavor. It's not an aftertaste, but you can definitely use whatever granulated sugar you have on hand, whether it's like your retro towel or whatever, so now I'm going to take my hand mixer and I'm going to blend my butter, my monk fruit sweetener. and just get all that up and running and well incorporated.

Then I'm going to go in with my two eggs at this point. I just like to stop at small increments here so you don't have a ton of ingredients. I was already making a mess. Anyway, I have everything everywhere with this hand mixer, but this definitely helps me not make a total mess, so I go with my two eggs and I have to mix them and incorporate them all together and also with the Daisy sour cream that we are. using a cup here, I know it sounds like a lot and definitely a lot of carbs, but this will be the moisture for our cake and it will definitely make it nice and moist, we don't have almond milk.
Other than the butter we have no oil so this will really make your cake nice and moist so I highly recommend it even though it does contain a little more carbs as it is a full cup Daisy has the By the way the lowest amount of carbs to hit those marks if you're using them. Then I'll pour my wet ingredients into the dry just like that. I'm not even going to do small increments, we'll just throw it all away. However, I'm making sure I get every last drop of all that moisture to dry it off because I want to make sure this cake is as moist as possible and guys, it's so delicious I'm telling you not to.
You will be disappointed with this one. I'm definitely going to make this by adding more spices often, so I'm a Spice Girl all the way. No pun intended for the Spice Girls back in the day. Come on, now with me, so let's put everything. wet ingredients into the dry, we're going to take our hand mixer now at this point and we're going to mix all of this together. I'll give you a little advice. It will be a very thick mixture, it will not be runny, so if you are using a hand mixer, you may have to put a little muscle behind it and you may know that there is a little mess in your mixer, anyway it was for me okay so I sprayed a 9 by 13 pan and I'm I'm going to take my batter my cake batter at this point I'm going to make sure I get it all out and I'm going to take my spatula and I'm going to spread it evenly if you've been to me watching while you bake.
I'll know this is therapeutic for me, even going back and watching this. It relaxed me to watch myself spread the dough. I know it sounds really cheesy, but I love baking, cooking in general, but baking is definitely like a science and an art, and it's definitely relaxing. For me, I just love it so I'm going to live my best life right now while you watch, it's going to seem like forever, but I'm going to be, you know, spread this so everything is perfect, but you can do it on the 9 by 9 just know that the amount of carbs will increase because it won't produce as many coffee cake bars, but you can do it, you can also make this as muffins, guys, you can make it as a pound cake, no need.
Being on an ion at 13 go crazy, get creative with this, these are the macros, although at the end I'll tell you it's 9 by 13, just keep that in mind, so 9 by 13 all the way, but I'll definitely do it. Experiment with maybe a sponge cake next time or some cupcakes. I think they would be really delicious. Okay, now let's make that amazing crumble. Don't skip it. It's very good. A cup of almond flour in my strainer. Again, I'm going to go ahead and put my teaspoon of cinnamon in here as well and sift all the dry ingredients together and then add a tablespoon plus a teaspoon of monk fruit sweetener.
I will explain why I did everything. that at the end of the video and then we're also going to add a little bit of salt here, so I'm just using a little bit of Himalayan pink salt, just notice and then I'm going to give it a good shake and make sure that all of that is well sifted and finely pay 1/4 cup chopped walnuts again you can use walnuts you can use any type of nuts you want I just prefer walnuts and then I go with my 3 tablespoons of melted butter and I never want to miss a little drop of melted butter.
I don't know about you, but butter is my jam before doing keto. My jam butter always loved it. Stir and cover this very, very well. You want to make sure that that butter covers all that almond flour, all the downsides, there's no dryness left, that way you get a nice crumb and it won't be dry and flaky on top of the cake mixture, that's exactly how they want it to look, you are all fine. and I incorporated it well, so now I'm taking that amazing crumble and we're putting it all on top of our cake and I'm living my best life again.
It's taking me forever to put crumble on top of a cake, I know. guys, don't say anything, but I love doing this kind of baking stuff, so go ahead, take your crumble, put it all over the top, make sure you don't leave any cake exposed, if possible, you want every little bite of cake have. a piece of crumble. I'm going to come back with a little bit of cinnamon and a little bit of nutmeg and sprinkle that on top. I'll definitely sprinkle more next time. I could definitely try it guys, but like I said, I'm a big spice lover, so it would definitely be a little over the top for me, but try it this way first to see if you like it, so we'll put it in the oven at 350 degrees for 35 minutes.
I think so, here we go and here it is. When the final product comes out of the oven, I haven't cut it yet. I'm letting it cool so don't let it cool for a while before cutting it into your squares. Now my portions for a 9 by 13 mold were 10 portions, but look at these bars, how big are, it's definitely a large portion, so if you're making this for a dessert, you can definitely cut them in half and that would definitely cut your net carbs in half as well. you wouldn't have the high macros here, so let me go ahead and tell you those macros, since we're talking about them, the calories for a 10 serving, so for each 10 serving bar or piece of cake there are 512 calories, so which is high in calories 47 grams of fat, that's a lot of fat guys, but if you're trying to get fat on keto, this is definitely a good option. 5 net carbs, which sounds high, but I actually don't think it's bad, I mean, it's something.
The keto breakfast items when you add it all up, most of the time it's over five net carbs so grabbing one of these huge bars and let me tell you they're very delicious and very filling is not bad in my book and then the protein. that's 12 grams of protein, so pretty decent macros for this coffee cake, so if you're having a keto coffee that usually has zero net carbs and one of these breakfast bars, that's what I've been doing this whole week, you will get net five. carbs in the morning that's pretty good, especially if you're consuming 20 to 25 net carbs in your keto lifestyle if you're just doing a low carb diet if you're just trying to do something that's not so crazy with the carbs that You're not on a specific health or diet journey, these are definitely the coffee cake slices for you.
I tell you the cake is at its moist point, not dry and that crumbly topping didn't want any of that. If it fell, I would pick it up and eat it with the cake. I'm telling all of you obsessed people that things are gone.
