This will be one of the classic dishes of Oaxaca. The mamela will be like a personal Oaxacan mini-

to start the day these mamelas are just chubby with toppings all different toppings chicharr贸n frito the pork skin looks quite greasy they have that salsa with avocado with tomato cilantro just they have cheese and under everything there is a beautiful layer of pork fat and also refried beans look at all the ingredients you have chicharron frito pork fried pork skin you have that beautiful avocado tomato cilantro and onion and then they are grilling these fresh dough tortillas preparing them for the ingredients that's what we're going to get we're going to get one of these mamelas covered in that tomato sauce mate and avocado with cilantro and then I'm also going to get a fried pork skin with chicharr贸n thank you, you can see the preparation process here, they press the dough and then add it directly to this flat grill, they grill it and you can smell, you can really smell that corn aroma that rich corn aroma and they are topping it with amazing refried beans oh there's the fried pork skin with chicharr贸n it's not so unbelievably beautiful oh yes there's green sauce with tomatillo thank you ma'am amazing isn't that beautiful this That fried pork skin chicharr贸n is from here, they cover the base with refried beans and they put a little green sauce on there, but look, that's the pure beauty, right there, avocado, tomato, cilantro, on top of those refried beans and you can see they're just pumping the mamela wow the

part is the corn masa that rich, earthy corn, strong corn flavor and then that amazingly fresh tomato avocado cilantro spread they put on on top of there, we're going to order some hot sauce on this hot. salsa wallet thank you oh yeah look at that thank you beautiful lady we had to add some hot sauce on this one it's ok perfect so this is the chicharr贸n with slightly hot sauce oh yeah that's spicier and that poor skin is actually quite juicy and greasy which is actually very fat and juicy pork skin on top of that dough after finishing those beautiful mamelas we went to a local market to have a second breakfast a super plump stuffed empanada before going to another market and grasshopper tasting find a barbecue super unique

and huge mexican pizza oaxaca is really a food heaven you will fall in love with for sure so right here we are going to visit one of the biggest markets in oaxaca i have been looking for it for so long to get in in the street market of oaxaca oh yes so we are seeing a lot of things like the comal we like what we just had fresh juice hello hello a lot of bread that we could try to find an empanada a stuffed empanada look at this place here hi hi oh so we found another komal which is this big flat grill and we just saw this these are the mamelas we had and we ordered a big stuffed empanada and I think they are what I'm going to to put deep in that oven there they are taking the mamelas and they are going to put them deep in the oven there incredible and that, oh, that is yellow

but chicken and chicken, oh yes, that is incredible and cilantro and then I go to fold it fold it and put it in the oven oh yeah in the oven to bake it first there's the yellow empanada thank you sir we just got the tortilla filled empanada with that amazing oh oh yeah look at that they just load it with chicken and that oh it smells absolutely fragrant tomato chili aromatic sauce oh in the cilantro aroma which is extremely spicy full of cilantro flavor and corn dough oh it will be a beautiful snack and then we also got because in oaxaca chocolate is very famous so we bought a hot chocolate but i'm so excited to try this empanada oh yeah that's an absolute tomato fragrance actually it's amazingly aromatic just look this is one of seven moles de oaxaca, the yellow mole is taste.

It is like a rich tomato soup, very, very tasty. I definitely taste a lot of herbs, maybe some basil, maybe some oregano, definitely a strong cilantro flavor and it's so creamy, thank you very much, very delicious after that beautiful empanada we made. to explore the most famous market in oaxaca, the mercado viente de novembre, and i found delicious food, starting with handfuls of grasshoppers at the entrance of the market, look at that amazing history, architecture, culture and the people are so friendly here i am, i am really speechless. here's a ton more food great market let's go visit let's check it out i think this is it i think we found grasshopper mountain oh grasshoppers oh look at this grasshopper mountain oh so many guys big grasshoppers little grasshoppers and i hear they are so much better here at oaxaca, we had them in mexico city, but we're going to try, okay, thank you, ma'am. t that those are grasshoppers grasshoppers and you know how they smell actually almost like sun dried tomatoes we have big and little smells like a dirty sun dried tomato they look crisp and should be pretty dry there shouldn't be too much juice in there because I think they're toasted so it's all dry and we're going to make a hole we're going to make a good big oh you can feel there's a little bit of oil in there look there it is you can really feel they're a little bit wet almost silky oh yeah oh yeah actually they taste almost like sun dried tomatoes crispy sun dried tomatoes wow oh that's so good a little bit spicy just a little bit of spice and we're right outside the big market we're going into let's see what else can we find thank you ma'am this

be the market november 20th i heard there is like a big mead sky little meat alley here let's see if we can find it after we enter this beautiful market you enter immediately into a new food kingdom passing stall after stall of Oaxacan specialties and all leading to the famous meat street filled with tons of thinly sliced 鈥嬧媌eef and pork and juicy sausages, all ready to grill and all laid out. in a tortilla with tons of delicious toppings to choose from like avocado and super tomato salsa with fresh pico de gallo really doesn't look any better this hello sir oh i think we found it oh meat oh yeah and there's more here oh it's just a whole row of beef chorizo 鈥嬧媑oes right on the coals look at that chorizo 鈥嬧媜h and look they just dumped a ton of sliced 鈥嬧媌eef right on the grill look this is action fanning the coals we really hit the jackpot of the meat and the real beauty is how under this grill actually is the chorizo 鈥嬧媠ausage right on those coals look at this huge spectrum of sauces and sauces you can have with your meat this is n opales nopales nopal with tomato and onion and cilantro pico de gallo tons of lime and cucumber plus radish salsa tons of different salsas and look at all the avocados thank you after you choose your toppings you can load your tortilla with your selection but be sure to ask for chili if loves the chile chili spice thank you oh here is the meat thank you sir look at that wow oh thank you ok thank you they just brought out chile fresco a agua literally translated as water chile but I think they are actually jalape帽os and they loaded it with as well onion, oh yeah, onion fresh off the grill.

We have fresh corn tortilla tortilla. We have different cuts of meat. I have pork with chili sauce oh yes pork with chili sauce we have beef and what really excites me the most is the spicy chorizo 鈥嬧媜h yeah look at that amazing chorizo 鈥嬧媤e are going to put we are going to put a ton of chorizo 鈥嬧媔n there, oh yeah look at that spiced sausage the best part of making your tortilla is filling it full of fat and fat full of healthy and flavorful sauces nopales avocado and chili water this is a real fresh flavor bomb don't you It seems? ke the most flavorful tortilla you've ever seen oh unreal you have to dig in there to get that chorizo 鈥嬧媠o that's what we're going to do right away that chili de agua is extremely spicy that chorizo 鈥嬧媐ull of spices that avocado smooth that's the next level flavor the avocado the nopales which are a bit bitter there's a bit of sour spice in there this is just real meat heaven thank you very wow flavor meat meat aisle heaven the next step for our final meal we venture deeper into the market food going to try any of the classic oaxacan seven moles a sauce usually made of dark chocolate fruit and nuts and spices like cinnamon and cumin we found a stall selling a wide variety we were impressed no just because of the food but because of the amazing hospitality of all the locals they kept bringing us more i think we found the mole here in oaxaca just e they're pouring it all over mole negro oh yeah we'll definitely have to get some of that oh here it is guys she just put a chicken breast in that molenego the mole negro sauce and right there oh that's going to be oh it smells so aromatic true heaven with amazing rice this is the tomal corn dough wrapped with a banana leaf and inside should be that black mole oh look at that oh look at that grass yeah we just got to the kitchen and we are going to eat chicken with mole black and we're also going to buy a tamale and look at this this is the clayora what a big piece we actually got. more than we ordered I think they saw the camera and really wanted to please us and that's perfectly fine look at this this is a tortilla and we watched them grill it there covered in beef chorizo 鈥嬧媎ifferent cuts of meat look at all that Oaxacan white shredded cheese la base is those refried beans lard there's avocado tons of stuff you can top it with lemon onion and chili there's a sauce there's a lot here and this is what we came here for this is what we came here for this is the black mole w with chicken breast oh yeah that's a black mole there are seven famous moles in oaxaca this is probably the most famous i've never tried it it's supposed to be super yum it's made with chiles con chocolate walnuts tons of spices and they serve it to you with a little rice and look at this this is a tamale loaded with that black mole sauce and all of this is actually steamed corn dough wrapped in a banana leaf and it's filled with the black mole too just look at that's black classic molded oh and look how tender that chicken is oh it's so juicy oh yeah oh and you can smell the chocolate it definitely has a chocolate smell cover it with chocolate and put some rice on it oh ,yes that is so rich and so tangy and the chicken is perfectly tender it actually has a light chocolate flavor sweet nutty spicy mole is supposed to have over 30 ingredients to make that paste i guess you could call it like curry from Mexico let's go f or that Clayuta dark chili sauce.

I'm going to eat a piece with that chorizo, avocado and tomato. version of the mimosa we had that base of the fat the lard and the refried beans is very nice a bit spicy especially with that sauce after that clayuta we tried the corn dough tamale stuffed with the same black mole sauce and chicken and while i was getting ready to eat they brought us even more food another mole sauce made with almonds the amendrado people in mexico are so nice people are very nice here i think this will have to be this could be the last meal but look at that , oh, but I can smell the cinnamon in that, oh, look how tender that chicken is, mmm, that nutty, cinnamon, sweetness, it almost tastes a little bit fruity, like a little bit of plum, there's a little bit of plum flavor, sweet cinnamon, can you just give a hint that this is so much food wow thank you bye my first mole here in oaxaca so full of amazing flavor thank you it's amazing we are absolutely defeated by the hospitality of the locals here so much food we wanted to eat more p But it's impossible with those incredible flavors and all the food they kept bringing.
