recipe

, it's from the Great Depression, which means it's not five. very interesting or elaborate with respect to its ingredients, in fact quite the opposite, but it highlights my firm belief which is that good baked goods don't need to be complicated or fancy too often on social media do we see crazy recipes for things ? like brownies that take 48 hours to make or a hundred hour chocolate cake or the best french macarons free of all blemishes and it doesn't have to be the case sometimes we just want recipes that are simple easy no skill can be made with stuff in your kitchen and it tastes amazing so that's just what you and I are going to do here today we are going to bake the original 1932 Great Depression Peanut Butter Bread Recipe that I made in my tic tac we are going to Being visiting a 1945 iteration and finally going to bake a recipe of our own, I'll say it again, my favorite thing about this recipe is how easy it is.

I can tell you a door hinge could do this if you add all t these ingredients in a bowl mix it up a bit and bake it you will end up with some bread and a nice loaf please pardon my cooking not the most glamorous thing you've ever seen, but it's utilitarian if anything. otherwise now the recipe starts with two cups of flour, ideally you should pour the flour into your cup and then you know to level it, but ask me if I ever do that. Next we have four whole teaspoons of baking powder and it's usual for me. referring to leavening agents as floofers is just uh my thing so this would be floofing powder now not quite sure why this bread requires so much baking powder it would be interesting to hear your thoughts on that of course this bread does not contain eggs, so that could play a role.

Many people postulate that peanut butter, being so dense and greasy, needs so much baking powder to let it rise, but I can't say that peanut butter is much denser than regular. butter indeed if I'm not mistaken I think butter has more fat than peanut butter next is a mere quarter cup of sugar I almost didn't forget to finish off the dry ingredients we added a pinch of salt which was half a teaspoon and then we just beat this to disperse the yeast. Why does it look and feel so weird to beat with the non-dominant hand? It seems like I don't know what I'm doing, I mean, I don't know what I'm doing, but I keep moving towards moisture.

Ingredients We'll be using a cup and a third of milk I think it's important to note that I use whole milk I think anything less is absurd now let's talk about the signature presentation of this peanut butter recipe why it's used how it's used and what makes this a recipe for the great depression peanut butter has some advantages over regular butter especially considering the times of the great depression mainly because butter was shelf stable butter was a prized ingredient that could be used in many things to look forward to using it for interior and feeding your family nutritious food nothing as superfluous as a dessert or a quick bread this became even more important if you lived in the cities hardest hit during the depression where dairy and fresh produce were extremely coveted, so not only did the peanut butter act as the necessary fat inside your quick bread which means you could save your butter for dinner but it also imparted a flavor component at the same time two birds with one stone when talking about these things however I have to tell you I am not a historian nor a food historian i have a music degree and i make videos on tick tock if you are really interested in learning more about the history of food i have some contemporaries of mine here on youtube who are much more knowledgeable than i am mainly glenn from glenn and friends cooking and max miller from history i'll link them below glenn is actually a huge inspiration to me and many of the recipes i've made he's made months if not years before me. all the while actually teaching your viewers and not just yelling that this recipe calls for a half cup of peanut butter so measure that out as best you can use whatever brand you like of course I'm only using peter pan because it's one of the first brands of peanut butter to come on the market you mix it all up and then we turn it into a buttered and floured or greased loaf pan now there's no way you have to score this like that with a knife I just do it because the Quick breads always have a tendency to crack down the center and I like to give it a hand this here is baked at 325 degrees Fahrenheit for about an hour and 10 minutes although I'd start checking it at about an hour with a toothpick if it comes out clean it's done folks i think we have a peanut butter bread ready here mine took an hour and 10 minutes on the dot of course your bake times will vary depending on your altitude but it smells good now.

I like to let mine cool in the pan to the point where I can grab it without burning myself but then I turn it off then put it on a cooling rack and voila I can't rightly say it's the prettiest thing it's a a bit rustic but it smells good but it tastes good yeah that's why I made this video I'm pretty familiar with you yeah to me it's pretty bright it has the right amount of sweetness it has a perfect buttery note of peanut its one of my favorite breads however the distinction is in the name its a bread its something you put butter or jam on its not a cake you know we have been spoiled with breads like banana bread than with years have gotten pretty sweet and really more like a dessert and that's not the case with this with that With that being said it doesn't have to be I'm all for full blown peanut butter sweetness so let's take a look look at another recipe, are we okay?
So day two and peanut butter bread number two this time we're going back to the year 1945 where king george was still on the throne and harry truman was the president of the united states peanut butter bread recipe in question comes from this cookbook is house searchlight magazine cookbook published in topeka kansas in 45 was sent by a viewer of mine so thank you very kindly this is fast becoming one of my favorite cookbooks because The Home Reflector acted as one of America's first test kitchens where they would collect famous good recipes from all over America, test them in the Home Reflector, and then publish this book. through the domestic magazines to the masses and this book is not just about the dessert currency it is about everything from drinks to cheeses to sweets to cakes to poultry of course our concern today is butter bread peanut butter so on page 48 of this cookbook under the miscellaneous tabs in the bread section is the recipe for peanut butter bread and just with a quick glance you will notice that it shares quite a few similarities with our first recipe, viz , the same amount of flour and baking powder, however there are some alterations, not only do you double the salt, but you also double the sugar, you also slightly reduce the milk and add a little more peanut butter which also carries with more Specificity as to method, we'll be working with our hands with this one but more pressingly and more importantly it cuts the baking time in half when baking this bread at 420 degrees Fahrenheit, so let's jump right in and see what what 1945 has to offer just as we have done before we start with two cups of flour four teaspoons of baking powder add a full teaspoon of salt then sift now i normally dont sift my flour or dry ingredients this way but i am doing this by myself because i was asked next is our two thirds cup peanut butter and i'll use the same brand just to keep it even now our new half cup sugar the coating will come off after washing your hands you're going interesting b izarre texture , we're just working on this as a pie crust, I guess it actually manages to hold its shape quite well, that's done now, just a cup of milk and we mix lightly but thoroughly, it's still quite a hard dough and I've already done that noticed. that you want to press them into the pan because they don't move well enough let's see what 420 does for half an hour to this so it's been 30 minutes and as you can see it looks quite brown I don't think it needs the other five but the needs so it's been 30 it's been 35 minutes and regardless if a toothpick comes out clean or not I'm going to pull this out and let it fend for itself so here we are bread number two with the highest temperature and the highest content of sugar you can see we have a pretty nice brown crust on the outside by the smells it might be a little too brown on the inside though ok ok you know I quite like the browning and the crust doesn't raise no problem to taste on fac It's a really nice texture change it doesn't taste as dry as it sounds but I'm still not sold on 420 degrees the added sweetness and extra peanut butter is certainly the way to go we're gone in the big depression. no actually its a few days later in 2022 and today we will make and i will give you my peanut butter bread recipe my eyebrows are a little calmer today too they are always a little anxious the first day they are not now when I set out to create this recipe, my goal was simple.
I wanted to make a peanut butter bread that was as full of peanut butter flavor as possible. I wanted it to be a little more like a dessert to satisfy a sweet tooth like myself and unlike the previous two breads I wanted it to be like the peanut butter version of banana bread and if you noticed what's behind my shoulder , you may notice that at times it has proven to be an immensely difficult task absolutely sisyphus i don't have the ego to deny that it took me no less than seven loaves seven experiments to find a peanut butter loaf i'm proud of dylan you say seven failed attempts what can be so hard just add more peanut butter do this do that right its not that simple im still a little crazy sorry because the same qualities that made peanut butter great for baking in the great depression i.e. the The fact that it acted as fat and flavoring makes it immensely difficult when it comes to wanting to add more flavor because then you're adding more fat and when you add more fat, You need to account for that with more dry ingredients huh different yeasts different combinations of wet ingredients and you keep making bigger and bigger loaf to account for the added fat and it ends up being the same amount of flavor it's irritating even when I varied the baking times or baking temperatures or leavening agents adding more peanut butter flavor adding more peanut butter caused the bread to collapse or Did not rise completely and when I did get a loaf to stabilize it had the same feeling on the mouth than a bite of peanut butter, that is, it is not dry, but it feels dry. a very important role for example here is a loaf where a cup of peanut butter was added to the flour as we did in the 1945 recipe with our fingers it had the most beautiful peanut butter flavor but it didn't rise and here's another loaf with the exact same ingredients baked the exact same way except the peanut butter was added with the wet ingredients like you would in any other baking recipe it kicked up beautifully but the peanut butter flavor was off completely.
I was so confused that i also found peanut extracts and peanut butter flavorings to be absolutely disgusting. I think powdered peanut butter would be the answer to my problems, but it ends up causing quite a bitter or burnt taste when baked and I wasn't satisfied, but yes. I perfected it. I cracked the code. I found what I was looking for and created something I love. I think you will too. and afternoon tea for six months, my recipe, like all others before it, starts with two level cups of all-purpose flour tossed in onefull teaspoon of salt now if you are using a fine grained salt and not a coarse kosher salt like I am using here consider only using a half teaspoon but salt is important because the flavor of peanut butter as we know it, it's married to saltiness so this helps highlight that the peanut butter next is just a teaspoon of baking powder now i know that seems like a drastic difference from the previous two loaves which had four teaspoons but about out of that range the baking powder can actually impart a flavor of its own to baked goods and that's something we want to avoid with a sweet bread like this. stir now for the peanut butter we will use a whole cup and you can use any brand you like i have been trying all this with gif because it is my favorite and i know what you are thinking.
Can I use chunky peanut butter and of course you can give your bread more toasty flavor so if you like that go ahead. only peanut butters that will not work with this are natural or organic peanut butters those that do not contain emulsifiers any brand like jiff or peter pan or skippy the stable ones will work with this just fine now comes the magic part combining the peanut butter and dry ingredients with your fingertips i tell you this is the secret its what keeps the peanut butter flavor in the bread during baking its like it amplifies the flavor and i couldnt tell you why but maybe someone here could tell me what happens when it starts to look and feel like wet sand then you're done, my choice of wet ingredients is quite different from the other recipes but you'll have to trust me on this one, we still use whole milk I'm sure it's room temperature, but I add an egg.
It's important to lift and create rise with all that peanut butter that we added and our sugar will be whipping into said egg. No, but the main difference here is sweetened applesauce. it acts not only as a complementary flavor to our peanut butter but adds the moisture we need that doesn't dry out when baking and also acts as the acidic component of our baking soda which explains the lack of baking powder and i I think it creates a better, more stable rise, so in a separate bowl you go a room temperature egg and add three quarters cups of white sugar to it, then we beat these two together with a whisk until light and fluffy, that's It's good for me. our applesauce and I ordered a cup and we are switching to a spatula now to incorporate this plus a half cup of milk now this next step is crucial and things need to happen pretty quickly so make sure you have your oven preheated to 350 degree rees Fahrenheit and you have a greased loaf pan ready in the wet ingredients goes half a teaspoon of baking soda mix briefly then quickly add the wet ingredients to the dry and we combine this just barely that's all you need and in the bread you'll notice this dough is pretty loose and ok and then in a 350 degree fahrenheit oven for about an hour to an hour and 10 minutes now i guess the conversation could eventually turn to can i put something in and the answer? is yeah I'm pretty sure this quick bread could hold a cup of pecans, a cup of chalk chips, anything you can think of, really, the only thing that doesn't go well with this, oddly enough, is things like spices or vanilla extract, of course. the vanilla extract is in everything so you think it would work in this but it doesn't take away some of the peanut butter flavor and doesn't add much, same with spices like the synonym or nutmeg even in concentrations of a with half a teaspoon it gets overwhelming and it's the weirdest thing peanut butter has proven to be one of the hardest things to bake in my opinion ok my peanut butter bread is done it took an hour precisely and all the what we're going to do what you need to do is let this sit on a rack to cool for a while and then we're going to get it ready gentlemen and lady here's our peanut butter bread you know considering the last few days you don't have no idea how glad I am to see this. leavened bread the outside is a nice golden brown color it's a little darker than the other breads and that's just because of the added sugar the added egg and baking soda help it brown too the cracks are nice and typical for a quick bread that was baked properly and then the thick part you see on top is just due to the way we mixed the peanut butter, toss the crust as a beautiful interior with a good crumb and it should be nice and wet, okay? hi the peanut butter the flavor is front and center it has a delicious chewiness again it has a lot of moisture in there you may ask if you can try the applesauce yes you can again its complementary to peanut butter but it's there mostly for the moisture I'm pretty proud of this I mean it only took me seven tries oh it's really good this one definitely stands out more on its own it's more of a dessert to have on its own with afternoon tea while the others, you know, you put butter on it. maybe you put peanut butter or jelly on it it was meant to be an auxiliary part of a meal and the great thing about it is you can choose whatever you want 1945 interesting and then of course you have mine which I'm partial to because it's I've learned a lot through all of this, but the main thing is that I've learned that I still love peanut butter and if you like it too, go ahead and bake some bread, so that's it for me until tomorrow. next
