The BEST Chicken Tikka MasalaMay 09, 2020
hey guys it's the Jaya and let me tell you something there's nothing I love more than a great
masalait's one of the most popular Indian dishes on the face of the planet it's originated and imprinted go figure anyway I am going to show you exactly how to make my special
masalaand I personally think it is the
bestand will be a perfect addition to your arsenal of Indian recipes. Let's dig. I want a ton of flavor to this chicken tikka masala, so I'm just getting started. I took off a marinade for my string so I'm using chicken thighs because they have so much flavor.
I'm going to add some yogurt and this is just plain yogurt that you don't want to use like blueberry or strawberry. this and then a little bit sorry I got distracted a little bit of lemon and that bit of tartness is going to spice things up pick those seeds up so you know you are using your hands and last but not least we have our host like spices and other ingredients so i have a little bit of garm masala a little bit of minced ed garlic ginger and a little bit of salt and all of that gets attached to the part a and then you want to get in there you can use a spoon and you can use your hand just mash it up to make sure each piece is coated and then I'm just going to pop this in the fridge for a minimum of 15 minutes to marinate.
You can even do it overnight. It will be especially delicious. My skillet is nice and hot. I'm going to go in with some oil and now what do I do. What I'm going to do is sear my chicken and this is going to sear for about two or three minutes on each side it doesn't have to be fully cooked in the middle because we're going to cook it again I just wanted to get a nice brown color because that it means flavor and make sure when you do this you don't overcrowd the pan otherwise the chicken will soon brown and as it says on the bottom there are these nice little brown bits. that will add a ton of flavor to the curry.
I'm going to add a little bit of ghee and a little bit of oil and to that I'm going to add a bunch of onions. I really want to cook these onions until they get nice and soft and see my onions, they've softened up really nice and as you can see they turn into this. kind of a dark brown color and that's because I scraped the bottom of the pan to release all those brown bits left behind by the chicken because that's all flavor now I'm going to go in with some minced garlic some minced ginger and literally these take about 30 seconds just to heat up and release your oils now for my spices some turmeric some ground coriander my favorite spice in the whole world cumin and my homemade gar masala for which i will leave the link below and literally these faded spices take about 15 to 20 seconds just to heat up and it smells amazing now i am going to add my tomatoes which will be the base for the sauce or shake them and i am going to season miss menos with a little bit of salt also as a chili pattern the reason why that I add the chili powder now is because I don't want it to burn before you go and now I'm going to cook this for about 15 to 20 minutes over medium low heat until the tomatoes are cooked through and thickened and turn burnt orange. the tomatoes are nice thick and caramelized and i wish you could smell it it smells so good im going to go in with a little bit of cream because chicken tikka masala there are people with cream so a touch of cream as well as my chicken and you see all these juices coming out of the chicken which is all flavor people don't leave that behind and what I'm going to do is stir this up bring it to a simmer and let it cook because I didn't say about like 5 minutes or so for that the chicken cooks well and then we have a fantastic chicken tikka masala, ok my chicken tikka masala is done and it's time to garnish with some chopped fresh coriander because that's the indian way of doing things.
