, it's one of the most popular Indian dishes on the face of the planet, it has its origins and it's in print, go figure anyway . I'm going to show you exactly how to make my special

and I personally think it's the

best

and will be a perfect addition to your Indian recipe arsenal. Let's go deeper. I want a lot of flavor in this chicken tikka masala, so I'm getting started. I removed a marinade for my chain, so I'm using chicken thighs because they have so much flavor.

I'm going to add some yogurt and this is just plain yogurt that you don't want to use like blueberry or strawberry. this and then a little bit sorry I got distracted a little bit of lemon and that little bit of sourness is going to liven things up catch those seeds so you have to use your hands and last but not least we have our host like spices and other ingredients so take a little bit of garm masala a little bit of ginger with minced garlic and a little bit of salt and all of that joins the a part and then you want to get in there you can use a spoon and you can use your hand , just mash it up and make sure each piece is coated and then I'm going to stick this in the refrigerator for a minimum of 15 minutes to marinate, you can even do this overnight, it will be especially delicious, my pan is nice and hot.

I'm going to go in with a little bit of oil and now what I'm going to do is brown my chicken and this will brown for about two or three minutes on each side, it doesn't have to be fully cooked halfway through because we're going to cook it again. I just wanted to get a nice brown color because that means flavor and make sure when you do this you don't crowd the pan otherwise the chicken will brown soon so my chicken will brown and like you say on the bottom. These pretty little brown bits that will add so much flavor to the curry.

I'm going to add a little bit of ghee and a little bit of oil and to that I'm going to add a bunch of onions. I really want to cook them. Sauté the onions until they get nice and soft and go check out my onions, they've softened up nicely and as you can see they're turning this kind of deep brown color and that's what I scraped the bottom of the pan to release. all that brown color. leftover chicken pieces because that's all flavor, now I'm going to add a little bit of minced garlic, a little bit of minced ginger and literally these take about 30 seconds to heat up and release their oils, now for my spices, a little bit of turmeric. ground coriander, my favorite spice in the whole world, cumin and my homemade gar masala which I will leave the link for below and literally these discolored spices take 15-20 seconds to heat up and smell amazing.

Now I'm going to add my tomatoes that will be the base for the sauce or I'm going to shake it up and I'm going to season it to miss less with a little bit of salt and chili. The reason I add the chili powder now is because I don't want it to burn. before you go and now I'm going to cook this for about 15 to 20 minutes on medium low heat until the tomatoes cook down and thicken and turn into this kind of burnt orange color, my tomatoes are nice and thick and caramelized and I wish you You guys I could smell it, it smells so good.
I'm going to go in with a little bit of cream because in chicken tikka masala people have cream, so a little touch of cream just like my chicken and you see all those juices coming out of the chicken, that's it. Flavor people don't leave that behind and what I'm going to do is stir this, bring it to a simmer and let it cook for, I didn't say, about 5 minutes or so just so that the chicken cooks well. and then we'll have a fantastic chicken tikka masala. Alright, my chicken tikka masala is ready and it's time to garnish it with some chopped fresh cilantro because that's the Indian way of doing things.
Look how delicious it looks, it's cleansing, it's spicy. hanging on the tomatoes and the chicken is perfectly cooked, combine this over a hot glass and if you write some chapatis or rotis and you are ready, chicken tikka masala, one of my favorite recipes.
