cake, but it's moist and delicious and the easiest

eggslet's start with the pan we're going to grease a 9 inch round cake pan that I've already greased and I usually just I freeze this cake in the pan because it's so simple, but if you're going to take it out of the pan to freeze the whole thing, then you'll want to use some parchment paper because it will slide off with the parchment which you can buy as pre-cut rounds like this one for four pans. it's perfect so you take one of these in the greased pan and I'm just going to put this on the bottom this is just if you want to get the cake out of otherwise this pan because I usually leave it on so that's it you don't grease the p ergamino so now the pan is ready and I have also preheated the oven to 350 degrees Fahrenheit if you have baking failures very often it is because you did not measure correctly let me show you that you have to aerate the flour before you measure if you do not measure it flour when you hit it like that it settles down and gets heavy and you'll get too much flour, if you just dip it you'll get too much flour so what you have to do is aerate the flour like so stir it up lighten it up a bit and then you can gently dip it in, but the best way is to just scoop it out this way because I want all of your baking to come out and often people say oh it came out dry it's because you're measuring the flour that's set too much you just dump it in there and level it out like this and there's 1 cup of flour measured correctly into the
bowlright now there goes so this recipe is a cup and a half of flour so I'm going to measure the other half out the same way nice and light always aerate the flour before measure, so that one and a half cups of flour is in the bowl and the rest of the dry ingredients are 1 cup of sugar.
I'm going a little light on the sugar but it's essentially 1 cup sugar it's 1/4 cup cocoa powder unsweetened cocoa powder and the brand I use is this this is one my store sells it's a Dutch process try to use cocoa dutch process is much smoother and you get a darker
chocolatea darker brown color I can also you can also find this on the world market so that's ok the rest of the dry ingredients is a teaspoon of baking soda no baking powder, it's different baking soda and half a teaspoon of salt, now you can, you have to mix this up. sift it all into the bowl and it will blend pretty well or you can just toss it in the bowl but give it a little stir because the chocolate needs to be incorporated before you put it in the liquid so just stir it around a little done not to be perfect but just essentially blended ok now the liquid ingredients are very simple you can measure it all out or put it all in your measuring cup it's 1 cup cold water that's 6 tablespoons of oil I use this is the one I'm using I use extra light oil olive has almost no flavor and is heart healthy and great for baking so that's ok it's 6 tablespoons oil it's 1 tablespoon freshly squeezed lemon juice not Volvo freshly squeezed lemon juice originally.
I made this cake with distilled white vinegar which you can use too but lemon juice works very very well and most people have lemon juice the last ingredient is 1 teaspoon vanilla extract and I use this brand here, very, very good vanilla and I buy it at williams-sonoma, ok, that's your liquid goes in here, dry goes in here, you mix them up, you just pour this in, okay, and stir it like I said, no mixer, and just you stir this until smooth and it doesn't take more than about 30 seconds. k be sure to preheat your oven because this only takes a few minutes to put together and the flour i was using that i didn't mention is just all purpose flour ok that took maybe 15-20 seconds just a little longer just to make sure no lumps left it looks pretty smooth look how
easyit was here is the pan prepped in the pan ready this is what the batter should look pretty smooth ok its the last of the batter and in your preheated 350 degree oven Fahrenheit set your timer for 30 minutes and I'll be back in a second and I'll show you what it's going to look like because I already baked another one okay this is one I made before exactly the same recipe check this out it's dark like this from the cocoa process dutch look how beautiful it is and if you want to make sure it's done just take a toothpick and stick it in the middle, if it comes out clean the cake is done now so you'll put it on a cooling rack. cool of course this is done before now as i say d i just freeze the top so i leave it in the pan if you want to take it out of the pan and freeze the whole thing just take something to loosen it up from the sides like that and you have that parchment paper on the bottom remember you just flip it over and you're done you can cool it in the pan for about 10 minutes then flip it over and finish cooling it on a wire rack so just grab a wire rack and place it upside down like that and flip it over and the cake will come right out because of the parchment paper look and then you just peel the paper off and there's your cake ok here it is i put it on a cake stand look it's chocolate cake oh my goodness i'll show you how I make the frosting now i try to avoid
butterso i have a little bit of butter it's just two tablespoons of softened room temperature butter in a bowl it's nice to use a tall bowl like this one where it does s frostings are going to fly a bit and I have a cup of powdered sugar it doesn't have to be measured exactly it's just frosting so it's about 1 cup powdered sugar 1 tablespoon of the same cocoa I used on the cake the cocoa without sugar and 1/2 teaspoon vanilla this is the easiest frosting ever we're going to mix that up a bit that's why you want the tall bowl when it starts to mix we're going to thin it out with a little bit of milk I'm using 1% milk and just you add like 1/2 teaspoon at a time because it really doesn't take long to see that it's already thickening when you add like another maybe half a teaspoon, that's almost it and turn the machine on a little bit and just a little bit more milk and I think usually it's about three teaspoons of milk 3 teaspoons of milk that makes a GS ready. off and i'm not going to eat anything outside of this the beaters is ok ok now and you'll see it's not much because i told you i leave it i leave it in the pan and frost it like this but i'm going to frost it so you can see all the cake and everything which you can make double the frosting if you want.
If you want, you can cut it in half and fill it with extra frosting, but this is really enough. recipe for the frosting just omit the butter and then it can be a little more with a little milk and just use it as a frosting just frost it on top of the cake and you have a no butter chocolate cake with a sort of no butter frosting frosting, OK? How long did it take me a minute to make the frosting? And look at that, okay, there it is, now I'm going to show you what this looks like on the inside, it's just a beautiful cake, okay, done? it's look how it's so smooth and so good no butter or
eggslook at this oh my gosh look how light and so good there's only going to be one piece left at the end of the day who gets the last piece now that's the big ask, so this is the deal, this is my advice, if someone accuses you, someone accuses you of stealing the last piece, just deny it.
