they're easy to do so let's get started here I've got a couple of racks of loin

that weighing in about two pounds of piece two and a quarter pounds these are often referred to as

all right now if you've never had

before you definitely got to check this out all right first thing I want to do here is we're gonna throw a little oil into this pan because we want to saute up some onions and some garlic get this going now here I've got about a cup of chopped onions here I've got about six cloves of minced garlic like I said you just want to cook it down a bit just a little translucent you always want to make a big batch of this

hot off the pit now the first thing we're gonna do here with these racks is of course we're gonna remove the membrane and if you've been following us over the years you know how to do that you could use a tip of a spoon to get under this membrane or here we've got a screwdriver whatever you got handy get it underneath you pull and it comes off real easy just like that all right do another now we're gonna take this membrane off so we can get the rub inside into that meat some say it makes them more tender rib but the jury is still out on that all right not much preparation all required for these

maybe a quarter-inch deep into the bottom it's gonna be like crazy now here I have a 15 ounce can of pitted cherries we're gonna make these

wards all right we're about 45 minutes into this and you can see it's coming along real good Oh every 20 minutes or so I want to maybe do some based based in the top looking good already just a couple more hours to go yeah take a look at that all right we're about an hour and a half into this low and slow and now what you want to do is place those racks right on top of the

chunks take a look at that just about jump carmelize enjoy it could see how that sauce is reducing getting real thick all right these

are done it's about three hours and see the way these racks fold here when you're holding with the tongs that's a good indication they're done just the way you want humor me why now all that remaining sauce in there we're gonna throw right
