ping helps a lot, plus I have a fairly full fridge-freezer. and the pantry and my food

prep

aring some things. I know they will set me up for success and I will use a lot of things I have on hand and eat a little better during the week, so join me. I have a very long list. so let's see if I can do it all Hi guys my name is Vanessa if you are new and today I spend several hours in the kitchen I took all my medications this morning I put my hair up and let's see how much I can and knock out before I need to take a rest, so I have a super long list.

More Interesting Facts About,

massive meal prep large family meal prep...

I'm going to put some eggs in the Instant Pot while they cook. I'm doing something else so you guys can see my progression of exactly how I prepare food in the kitchen in real life instead of just going with the chicken in the crock pot, the eggs in the Instant Pot, all together, so it'll be a very confusing mix and I hope you enjoy it but this is totally real life and how I prepare food so I wanted to share it with you. Guys, okay, I mentioned dog food, which is always what I start first because it takes the longest.
massive meal prep large family meal prep
I usually only cook half of this package. I buy a

large

six-pack, each package has two to three chicken breasts, and I buy it at Costco. and suggests the Costco brand boneless, skinless chicken breast, 99% fat free and I usually cook half of this at a time, but since I'm already cooking this, I know I can fit everything in here, so I'm going to go . Go ahead and open each package, put it in here and I'll save a week's worth and then I'll put the rest in the freezer and that's one less thing I have to prepare for lunch next weekend, so let's go ahead and start with this . that can be cooked, it takes about four hours on low heat and then I'll come back and mash it up.
massive meal prep large family meal prep
Oh, walking over there, okay, the chicken is there, so like I said, we're going to slow cook it for about four hours, which is what I normally do. half the package so we'll check it at four hours and see if it needs to last longer since I doubled the amount so I wanted to pop in before we continue and mention that when while you're prepping or at least while I'm prepping the food I wash my hands a lot. hands and they dry out a lot, so they already feel a little dry because I washed my hands three times just with the chicken and while I prepare the food I also clean as I go because I feel like that takes away a little bit of anxiety because at the end of the day If you've spent all day preparing food well, then you have a huge mess to clean up, so I use Clorox wipes, they're quick and easy and I can throw them away.
I know some people are against them not chasing me. That's what I do and that's what works for me, so since I tried with raw chicken, Now I'm going to clean that counter and then I also wanted to say that you want to start with a clean kitchen, so I said that in the morning they are already almost 11:00, but after breakfast I cleaned so you can see all my counters are clean. I went ahead and lit a candle. Wash the dishes. I left this out because, like I said, I wash my hands a lot, so I like to have my hand towel out.
This is my long list. It's also on the other side of things that I want to make a meal and then I took out some of the bulkier items that I'm going to mail so all my counters are pretty clean so I wanted to make sure to let everyone know to make sure to clean your kitchen first. If you're doing a lot like I'm doing, if you're just doing a little, you guys just do what works for you, but I'll let you know what works for me, so clean cooking, easy clean stuff. after you with an empty sink and hand soap, those are things I need to have on hand while I'm preparing the chicken so it's ready and now I'm going to organize everything well, as for the eggs, I was delighted to receive this. stated package at Costco and this is five dozen.
I think so, five dozen eggs and usually because this is in a box like this, it's very difficult, I say difficult, it's a little awkward to keep getting into this big box, so at Dollar Tree. I've had these for a while. I collected several of these egg containers and that makes it very easy, so I'm going to go ahead and get all the eggs out of this box. I'll put them in my egg containers. This is what I had left over. I had a 12 pack of eggs left over from the last box I bought and then I only have, I think, three, two or three here, yeah, three here, so I'm going to use them today and I'm going to Fill this with the eggs because I'm actually cooking two dozen, not every week I do that.
I usually only cook a dozen, but you'll see why I need two dozen for this week and then I'll cook the rest. Come in here and put it in my outside refrigerator because every time I use a dozen, instead of having to go into the box, I can just go out to the refrigerator, take one of these out and put them in the inside refrigerator and that's exactly what it's been . working for us, so let me go ahead and arrange the eggs that way, it's easier for me to deal with the future, okay, so I have three here.
In fact, I need to find another one of these because I buy all five dozen. and you can see here a dozen spaces in each of these containers, so since I'm using this entire container today, I'll be able to put the rest here and then there will be one left if you noticed I was showing you. two eggs during this process and two of them were deviled so I threw them away and that rarely happens. The last box I got they were all good, so that rarely happens, but I threw out two of them and this is what I had left over afterwards. get them and then obviously after I fill this one I need to get one more of these but Dollar Tree doesn't sell them all the time so I'll keep an eye out and go ahead and get the eggs started and then once I get these eggs out from here, I'll be able to finish the rest of the box and I'll continue cooking this extra because of the two items I'm making, let's move on. and continue with the eggs, so for the dozen plus one of the thirteen eggs, I'm going to cook them in my instant pot like I always do and this is super, super easy, I just put all the eggs there on a trivet with a cup of water and then the time, it really depends on how you like your eggs, but I'm going to do four minutes and I'm going to quick release them and then I'm going to put them in an ice bath, so let's go ahead and these these eggs walk in there, very okay guys I definitely love my appliances when it comes to meal prepping so I've only ever cooked eggs hard boiled eggs on the stove and it's my instant pot pie and since I bought the instant pot I have never gone back to cooking them in boiling water because actually you just have to set it and forget it only takes four minutes of cooking time, it just has to come to pressure, which is maybe five to eight minutes, but since I received them. this airfryer, the only video I have shared so far.
I've used it a few times outside of that video, but everyone suggested I try boiling my eggs in the air fryer, now I feel like I'm cheating a little. A little bit in the instant pot, not so much today because I'm using it too, but all I did was use Pinterest. I know you guys can't see that, but I'm going to save this recipe and add it later. the description box in case you want to see where I got the instructions from, but it's not actually a recipe, obviously I'm just boiling eggs, so this one says: place the eggs, a dozen eggs in the airfryer, set it to 250 degrees for 16 minutes and then I do an ice bath for 5 minutes, which is the same thing I do with the Instant Pot.
When my eggs are done, I do an ice bath for 5 minutes or however long it takes until I can get to it, so that's what I'm going to do and now I can put the rest of my eggs in my container and put this in the outside refrigerator. Okay, while I wait for the eggs, I went ahead and started. My oven is preheating to 400 degrees. I should have started that sooner. I started with the eggs that way, it would be ready, but I forgot, so while I wait, I'll prepare the bacon, so I have two smaller pans so I can put them in at the same time.
This is how they fit in my oven, so I wrapped them in aluminum foil for easy cleanup and here I have some bacon that I pulled out of my freezer. I usually get my bacon and much of my meat from a butcher box. I really enjoy it, I pay my own money for it so I'll link it below if you want to check it out and this is their sugar free applewood smoked uncured bacon, we love it and then I don't remember to make it. I picked this up for a recipe and never ended up using it, so it's been sitting in my freezer for a while.
This is also not uncured smoked bacon with no added sugar, so I'll go ahead and get a package of each on my trays here. and then as soon as the oven is ready, I'm going to set my timer for 15 minutes, but stay tuned, it may need to last a little longer, okay guys, as soon as I turn off the camera just to tell you what. I was just about done with the bacon, the Instant Pot went to the office, so the Instant Pot is ready. The air fryer still has 7 minutes left, so I'm going to let all the pressure out and in the meantime I'm going to let them sit there.
I know it's really loud, but I'm going to go ahead and get my bacon on the train, okay, there's bacon in the oven. Wash my hands one more time because I was touching the bacon. I already cleaned that counter now that I have my bowl. Both the instant pot and air fryer are ready with the eggs, so I'm going to put my eggs in this bowl. I have a yes, I make some tongs, I use tongs, I could probably use your fingers if you're good at playing higher heat. I know. a lot of people are, but I'm NOT, so I'm going to use some tongs to take the eggs out of the Instant Pot and the air fryer and let me show you what the air fryer eggs look like because I can't really set up my camera. here, but I hope they are ready since I cooked a full dozen.
I thought about trying just a couple, but I thought, Anne, let's go for it, so I'm going to do it. Oh, should I mix them? I will do that. It's just so I don't have to dirty another bowl or anything so we'll see if we can tell the difference if they all look the same, so yeah, I'm still going to put all the eggs in my bowl and then put some in. Put cold water and a little ice in them and let them sit there for a few minutes. Life is a winding road, you don't know where it's going.
Drive fine, so while the eggs are in the ice bath, I'm using the exact same pot that I didn't use. I cleaned it or something because I just laid eggs in it. I just dumped the water out to make sure I had the right amount, so now I'm going to cook the last of the basmati rice I have in my pantry. I don't really eat rice that often anymore, so I thought I'd go ahead and cook the rest and add it to the dog food at the end of the day when the chickens are done and I'm ready to mix it all up.
I already put in 2 and 1/2 cups that I wanted to measure, so I knew, so I have two and a half cups of rice here, that's what we have left and then I like to double the water, so adding 5 cups of water. I know there are many different variations. This is how I like my rice. Sometimes I rinse it. Sometimes not. That's another thing I get a lot of comments about, but hey, do whatever you want in your kitchen and I. I'm going to share what's on my mind, so I'll mix it up a bit. I think not rinsing it makes it stickier and we'll see how it goes with the dogs, but I love sticky rice and then I like to use it normally.
You put it next to some type of meat with gravy or sauce on the meat and it's so good when it's sticky rice, so like I said, if you want to rinse the rice, do it, but I'm not doing it especially. since I'm just cooking it to mix with the chicken for the dog food, there we have it two and a half cups of rice five cups of water, make sure your instant pot is sealed or it won't exert pressure, they have a handy rice button , so that's what I'm going to press to stop the traffic light and I really want to know if anyone wants to know if I figure out where the road is going even if it's falling down.
I will continue searching for my heart. I can say oh, that's my mind I'll continuekeeping my head up even the sky is falling jumping off cliffs oh hi Justin always to fight sometimes we fall down but we get up and things off the ground okay the bacon is ready I'm leaving Put this on a paper plate with a paper towel on top to catch the excess grease and let the foil sit here and that way I can throw it away later and I was able to peel 12 eggs to fit them in. refrigerator to snack on and then I have 13 here that I'm going to make a batch of eggssalad for lunch - this week is fine so I'm going to leave this here and let the extra grease drip onto the paper and a towel but I cooked it in two packages because we are a

family

of six so my kids love bacon and I will probably heat this up the first few days of the week so I will let it sit there for a while and then I will put it in a container and put it in the refridgerator.
Okay, guys, I had to take a break to prepare it. lunch for the kid, so I'm actually heating up pizza rolls in the air fryer. You've already seen it in a video and the rice is ready, so I wanted to show it to you. I just opened the top so it's steaming, but I'm just going to stir this in, yeah, it looks so good, oh, I know I'm a tapper. I'm a tapper. People come after me for doing that too, but that's what I do. Well, I'm just going to lift the lid. After sitting down, unplug it and the rice will stay here until my chicken is ready.
It's been about an hour and a half, as you can see there. I think it will definitely take more than four hours. I should have put it. In fact, I'm going to go ahead and turn it to high and just keep an eye on it. I might put it back on low in another two hours just to finish it, but that's where we are now as soon as it's lunch. ready for the kids I'm going to make egg salad and I'm not going to dirty many dishes. I'm going to try cutting the eggs into the bowl.
I think it's going to be good because this bowl is on the

large

r side and then I'm going to add mayonnaise, mustard, salt and pepper. I never measure, so I make it to taste and then I think I'll add some celery too. I have some celery in the refrigerator. so I need to take it out, wash it, rinse it and then I'll add it to our egg salad as well. Heis, you can say my love. I will continue to hold my head high even if the sky is falling, even if the sky. is falling every change has a reason baby ever see Loulou's external status quo There are no lost pastures we do it baby, you and baby he is often his and of the kind we just have to believe it we can make the sun rise those who are inside they can say what's wrong, whoever can honey, honey, it's okay, lunchtime is over.
I finished the egg salad and was originally going to go ahead and make little lunch boxes for Mark and I for this week, but I decided against it. I don't think I have enough room in the inside refrigerator and I just didn't want to have to fill the outside refrigerator and forget that it was there, so I put it in a glass container and we'll mark it to create your lunch in the morning and take it to work with it and then in the afternoon I'll just scoop out that big L spoonfuls of stuff from the big container, but now, speaking of lunches, I'm going to go ahead and bring my three youngest kids who are in public school. their lunch boxes packed for tomorrow because it's Sunday, so it's one less thing I have to worry about because I already prepared some things.
I had some celery left over, so I'm going to put that in your lunch boxes. I'm going to put some of this chocolate hummus on top and I hope you like it. Then we have some pepperoni and cheese. I'm going to put in a hard-boiled egg and some strawberries, but I need to clean the strawberries, so I'm going to skip them on my spinner here, add a little vinegar, these are not the prettiest strawberries, but my kids are not very picky, as long as when they're not soft, they love a little bit of strawberry, so I'm going to cover. those with water and we turn them a little we leave them to soak while I prepare their lunch boxes so I have some things out but if I add something else I will show you that I leave the mayonnaise mustard salt and pepper here because I'm going to make some tuna too for my husband and I's lunches.
Okay, it's full, so I just used my hands. It has a top where you can twist it, but I feel like that's how it is. really stops when you wash the lettuce and put it in here to really get the extra water and moisture out of that lettuce, so I just use my hands and push them down, let them soak and then push them out. down again and then I'll prepare those strawberries for the week, okay, the strawberries are prepared, the lunches are ready, so this is what I have for the kids so they don't have a lot of time for lunch.
I wish schools would allow them a little more time so they don't pack them into a pile. I know I got comments before when I used to make lunch videos. I don't make them anymore, but I received feedback that there is enough food for your children. Yeah, this is how much they can eat and how much time they have, so I don't want to pack them in too much and then it would be wasted because Rose and Pearl actually have lunch at 10:55 and then I think Bryce's is closer to noon, but since 1055 have like 20 minutes and then the food stays in their lunchbox the rest of the day until they get home at 3:20 and I don't keep any of their leftover food in here so I just packed them up a little.
But they grab some kind of granola bar or packet in case they get hungry and eat it and then I'll also put a juice box in here so Rose and Pearl have the exact same thing. Bryce only has one. variation, so we have some cheese and pepperoni crackers, the celery with chocolate hummus on top, hard boiled egg, strawberries and then this is a package of Christmas elf gummies. I think we only have one or two left, so we're almost out. but that's what I have in rows and pearls and then between straps and I bought them on Amazon so I'll leave the link below in case you want to pick them up.
I want to get the other insert that just has the Sandwich, I think that would be nice now that they are getting a little older so the only variation on Bryce's is that he has some Hershey Kisses instead of gummies because he doesn't like gummies so that's the only difference in yours, but now that I have your lunches ready for tomorrow I'm going to get out my cans of tuna and make a tuna salad the only variation from egg salad to tuna salad besides the eggs and the tuna is obviously I don't put celery in my tuna salad I put dill seasoning on it to take the seasoning off and then while I'm making the tuna salad I'm going to wash some more produce so I have some blueberries and raspberries here that I'm I'm going to come in here with cold water and a little bit of vinegar, so let's get on with this meal prep, baby, we should start living now.
I can't say what's wrong, okay, should I leave without saying goodbye? All I know is that I need to be somewhere else to free myself I don't know what to do now I need to figure it out right, the tuna is ready, the blueberries are ready, I have to clean the raspberries right now and I'm going to prepare the cucumber, this is the one biggest English cucumber I've ever seen, but I'm really excited because I have two things planned for this and my kids eat cucumber and cherrim tomatoes like nobody's business, so I'm going to cut it up, hopefully, I don't know if it will be like this.
It fits in this container but I have another one I can use too and I used to peel my cucumber, sometimes I still do it because my kids would never eat the peel, however my daughter's rose and pearl now eat the whole cucumber, it's just my son Bryce who takes it takes off the peel and just eats the inside so I'll leave it on this time but I just want you to know that I still peel it sometimes. I have this little hand filler that I love, but for today since I'm using this for several different things this week I'm NOT going to peel it, I'm just going to cut it into circles, half, the other half, I'm going to cut it, let's see I'm going to cut it in half like little half moons and then like this and these are going to be the ones that the kids are going to put on and this is for a salad that I've been making later in the week wait the wind will take me and take me do it I should okay the last thing I need to clean up is strong in some water and vinegar and then while it's there I'm going to shred some cheese and I'm going to shred all this cheese I'm sure I've eaten this. for a while and then I think I'm going to cut this up, I'm going to shred half of it and add it all to a gallon bag that lasts a long time in the refrigerator and then I'm going to wrap the rest up and put it in or I'm going to go ahead and cut it into small blocks because I have that Tillamook cheese, so we'll see, we'll see. how much of a gallon bag is filled with this and half of this and if there's enough room I'll go ahead and shred the rest, otherwise I'll just wrap it up again, put it outside in the refrigerator and it'll be ready to shred when I'm out of what I'm going to destroy, okay, let's go and destroy each other, oh, I wonder if there's a place where the sun won't go, awake, we can open our minds looking from a mountain, I don't know what to do now, I need.
To solve it I hope the wind will take me and take me to where I should be fine. I'm done with the produce, so I'm NOT going to shred this block of cheese. I always forget how much cheese has been grated like this a long time ago. more than you think so this is about half the bag so I think it will be fine for this week possibly next week depends on what we end up using this for so I'm just going to leave this and save it for Next time, a lot of cheese will last forever, not forever, but a very, very long time, so this will go to the inside refrigerator and then to the outside refrigerator to prepare the next meal.
Ok guys, next I'm going to make some olives to snack on this week. and I'm in the past this is something my mom always made when we had a good time together and I did it too and I only used cream cheese and olives but I mentioned this oh and if you guys I heard the dishwasher was full with everyone the utensils and things I had been using, so I went ahead and started with that to get me started on my shopping. I mentioned the Fiesta sauce or condiment that someone had commented that they add to their cream cheese when they're stuffing olives and I was like, "Oh my gosh, that's a really good idea, so I'm going to do that, but I didn't think about it ahead of time and I didn't take out my cream cheese to soften, so I'm going to leave this on the counter and I might go ahead and start something else, but I'm going to take this opportunity to get up and stop working in the kitchen for a while, so it's time to rest for me, but I have a lot more things I need to do, I'll take a little break and then we'll come back here and do some more.
It'll be a little while for me, but it'll be like a second for all of you. Don't worry, my hair just sticks out like this, it's okay, it's been about 30 minutes so I'm back in the kitchen. In fact, I'm going to start on some cookies first. I'm going to let the cream cheese sit a little longer while I make them because it's getting close to baking time. snack and I thought it would be fun for the kids to eat some cookies, so the cookies that I'm going to make, guys, I bought them in November, maybe early December. but we had so many snacks in December, like so many sweet treats and things like that, that we never made these cookies.
We wanted to go over the other things first because this was going to take longer, so I'm going to make the triple chocolate cookie mix and the cinah doodle cookie mix because the chocolate chip one requires an egg white, but the cinah doodle cookies require one egg yolk, so I'll be able to make both that way. I won't waste any part of the egg and then I can just Depending on how you make the minis, I think each one makes 18 cookies. I will leave them out all week or put half of each in the freezer because the cookies freeze very well.
You can make the dough in advance and put. the dough in the freezer or bake the cookies and put the cookies in the freezer the freezer cookies freeze very very well so I'm going to make these two and I'm going to use my KitchenAid because I need my hand mixer for the dog food and I know I can wash it, but I really don't want to right now, so I'm going to use this because I want to use it. I have not done it yet. Comes with three accessories. I think I'm going to use this one.
I need to find my book. I already put my book in and now I don't know where I put it, but I think I'm going to use this one for the dough, we'll see how it works or I might switch to this one. I don't know, this one looks like a dough hook because it has that little scraper on the side, just scrape the sides to remove the dough. I have no idea, if I can't find my book I'll just wing it. but that's what cooking is, you're just winging it, you figure things out, so I'm going to mix up the triple chocolate cookie mix here.
I'm not going to set up the camera or anything because I really want to pay. pay attention to what I'm doing and don't risk knocking over the camera just because this is a tighter area here, so I'm going to mix the two together. I'll show you how they look and then when we get them. In the oven we will make the stuffed olives, okay,we have the triple chocolate and the cinah doodle and they actually have to cook at two different times so I have both ovens at 325 for the 375 chocolate and they both take about 12 minutes so let's go ahead and bring them in and it's actually later than I thought.
I thought it was closer to three, but it's closer to four, so the kids will have a late snack. They usually have a snack around three. o'clock, so let's go ahead and pop these in the oven and see how delicious they are. I had a little bit of both mixtures and they were so-so. Okay, okay, while the cookies are baking, we're going to go ahead and mix up our cream cheese and Fiesta sauce or ranch and I'm going to use my hand mixer for this, that way I just I have to wash it once before mixing. in the chicken for the dogs in summer I'm going to break very easily we are not worthy I will slip into your dreams tonight I will stay like mine just watch me break well the cookies are ready and the children already ate one of each and they said they were super delicious so they didn't make as many as I thought so they really won't last more than a week so I'm going to go ahead and put them in a container and then leave them out. on the counter and I can put them in their lunches or they can have them as an after school snack or if any kids come over after school to play, this can just be a fun little snack that we have on hand so let me. get all the chocolate ones and here, then I'll close them and the cookies will be ready for the week, honey, they fit perfectly.
I thought if I was too full I might be convinced to eat one, but they fit well, these are the sink and you guys, I think it's filling up again. I'm glad I started the dishwasher earlier because it's already ready so I can unload it and load it again but I didn't try the cookies but I ate four of these they are so good so I don't know the amount so I put a full package hook at Fiesta ranch and a block of cream cheese, this is what I had left over. Accidentally, once I started stuffing them, I realized they were big and not giant, which is why I usually get them. jumbo olives, but I had some left over, so I'm not going to throw them away.
I'm going to save these and buy another jumbo can for next week or we'll do something else with this, but they're really good. I think I'm going to try not to eat them as a snack. I'm going to bring these out when we have tacos on Tuesday and this may be a little accompaniment to that, but they're super, super delicious, I don't know about my son. Bryce and his daughter Rose are going to like them, but I know Pearl will like them and then Mark had an idea. Mark had several too and they are super delicious, but Oh, what he was saying is that I mixed up a whole package and I think they are super delicious.
We are going to eat them but they are very strong so I will definitely make this again but I think next time I will use half the package with 8 ounces and I think it will be delicious too yes the chicken is ready. so now I'm just going to mix it up and I'm just using my hand mixer. I didn't wash them because I only use them in the cream cheese and they only go in the chicken. I just rinsed them really well, so I didn't wash them, but here we go. I'm going to go ahead and mix in the chicken and that's it.
You guys liked it soaked for like ten seconds so I didn't drain it or anything so let me make sure I got it all I think I did it right yeah so there's the chicken and now I'm going to take the rice that has been in the baby pot the whole time, unplug the pot and I'm going to mix. I put all this rice on the chicken and then I'll fill a gallon bag for the freezer and put the rest in a glass container and keep it in the refrigerator to give the dogs a little every night.
Gosh, I've never doubled it before, it's a lot of mixing that up, but I'd rather spend a little more time at the beginning and not have to do this every week, so it'll be nice to have it already prepared and I'll see, I'm not sure how many weeks it will last this. I think I mean at least two, maybe part of the third week, I don't know, but okay, at least this is done for a couple of weeks, so I wanted to do it. I show you my setup and you'll probably hear the dogs in a minute because I put them outside, they know it's time for dinner.
I actually see them around 4:30 so I need this to cool down so I have a cup or a spoonful of their dry food here and then I did that. I never measured this, but I made about three of these larger spoon sizes of the chicken and rice mixture on top, so I'll let it cool. I don't want to burn your mouth, it's still a little warm and then I filled this bowl and this is going to go in the refrigerator for this week, it might last until next week. I'm not sure, it just depends because, like I said, I don't measure it.
I should probably start doing that, but I don't think it matters. Then I'll let this cool and I think I'll be able to fill two bags, but I only have one left. just to show you that I have a zip lock freezer bag so I'm going to fill that bag once it's cooled a little bit. I don't like putting it out there when it's too hot, so I'll put it away while I work on something. other things and then we will fill a bag. I really feel like I don't know. Maybe I can get two bags, which means it will last three weeks and not two, and sometimes I put in green beans or peas of some kind. of vegetables here, but I won't do it this week.
I just don't have a lot of vegetables on hand so I didn't put any seasoning in here, it's not good for your dogs so no salt or anything. it's just Oh, simple cooked chicken and rice and a mix, so that's the dog food, okay guys, it's much later, it's almost 6:30 now, dinner is made, homework is Diana, stop the kids, I had to take a break and I focus. I'll talk about that for a while, but right now the kids are upstairs getting ready for bed taking showers, all that good stuff, so I'm going to start with a few more things when you prepare the food, if you have a huge mouth you want to try to get . done in one day make sure you take breaks do things with your families break it up a bit definitely helps that's what I do when I try to do a lot of things in one day so I don't feel bad about taking a break at all but now I'm back because I have some more things on my list looking at the moment.
I don't think I'll finish everything, but I can always do more for tomorrow and I'm just sharing. with you what I did in one day so stop talking Vanessa and get back to work. I'm making some blueberry muffins. This is from the Southern Aikido Cookbook. I can't share the exact recipe because it's hers here, so if you want. Check it out. I'll have her cookbook linked in the description box, but this is a family favorite. Kids love it. I love it. Marc loves it and it's a slightly healthier option for you if your kids like breakfast muffins, so we don't.
Not only do we have them for breakfast, we also have them for snacks, so I'm going to go ahead and prepare all of this. Here are all my ingredients. Oh, I'm short on eggs, so I need to get some eggs out, but. I'm going to mix it in my bowl. In fact, I've already unloaded a load of the dishwasher so my sink is nice and empty. I can fit a few more pieces in there though, so I won't start it until the end of the night, so this was there, it was on the bottom rack and it got bent a little bit.
I don't have a very good selection of a large mixing bowl, so this is from Dollar Tree, but we're going to use it. works great so I'm going to mix this all up and make some blueberry muffins to have on hand during the week when I'm cooking things like this and it makes a lot. I'm cooking a lot of different things. I hope to make some pancakes tonight too. I like to leave them out for a few days, let everyone eat them and then I'll put them in the freezer and then if anyone wants one we'll take them out of the freezer.
They don't sit all week in the refrigerator or on the counter, that way they don't go bad faster, so that's what I do, so I'll go ahead and mix them up and try not to eat one before. bed because seriously, these are really good just look at me, you got a free pass. I try to hide it, but you hide it from me from the beginning, okay, the muffins are in the oven and they will take a little time, so while they are baking, I'm going to cook some pancakes and I haven't made waffles in a while.
Maybe I'll do them next week, we'll see. I'm thinking about making a meal once a week with all of you because that's all you guys keep asking for. over and over again, but I love these mixes, they're super simple, the kids love them, they're a little bit healthier for them so it helps and then I say that and I'm going to add some chocolate chips this week. but I don't always add chocolate chips, sometimes I add sugar-free flavoring to give them flavor, but it's been a hot minute since the kids had chocolate chip pancakes so I thought I'd surprise them by making them and then they can make them.
I will eat them for breakfast tomorrow Monday before school so this mixture I just add with water and we are ready but I don't know how much this bag will make because I have already used it once or twice so I am going to measure the rest of this bag, I'm going to go ahead and finish this bag and then depending on how much mixture is in here, it's going to give me an idea of how much water to use, so I'm going to get all of that mixed in here and then I'm going to add depending on how many servings, this is half to a cup, probably like half a cup, these are the mini semi-sweet bites, so maybe a cup, we'll see, but I'm going to mix all of this together in the same container that I use for the muffins.
I just rinsed it and then we're going to cook them on the grill. I love cooking pancakes on the griddle because they cook faster than on the stove. I want to get one of those griddles that sit on the stove and try it out. I think it would be cool and fun for me because I love kitchen appliances and all that good stuff, so until then I have this iron and it has worked perfectly. This is how we are going to make our pancakes for today. Well, I had three batches left in that bag, so we'll see how many pancakes I get out of this.
I only added half a cup of mini bites. I think it looks good here. It looks like there's going to be enough in each panel cake and then the way I like to make pancakes is using a quarter cup and that's how I make them more even so I already have my iron on and it's heating up. I gave it a good spray with the avocado oil spray that I like to use, so I can usually put about 6 in here at a time, so I'll go ahead and start cooking the pancakes. Okay, guys, I ate some more. things on my list, but I think I'm going to call it a night.
I was able to accomplish quite a bit today and tonight and I was going to go ahead and make some dinner dishes for this week, but another request you guys gave me was what's for dinner, more dinner recipes, so I guess what I have in mind my meal plan for this week there are many things that I can share with you that are new to us and that we are trying and trying in ways that we love. as a family, so I think this is a good week to film, hey, what's for dinner? I don't actually do a lot of those, only when you guys start making a lot of requests for them, so I think I'm going to do that. so I'm not going to do any preparation that way.
I'm not going to add to this huge private meal prep video anymore. As for cleaning, this is why I love cleaning as I go. I don't always do that. But I try, everything is already clean. I went ahead and cleaned it again. The dishwasher is running. Oh, I need to turn this on to clean it like that. I know, it just reminds me that the run cycle is already on, so when I wake up in the morning I can unload I'm going to wash these items by hand, so I have the crock pot, it's already soaking a little bit.
The chicken didn't burn or anything around the pot. I just like to soak it a little bit. Just help. for easy cleaning. I have the bowl, the pancake spatula and then I need to clean my griddle too, but it's still hot so I need to let it cool. I went ahead and cleaned this counter and then I did it. I cleaned this counter, look at all that stuff, but I'm going to clean it again after I put all the food on it, so I have my stack of lids here so you can see the overview, but I feel like it was a good use. of my stepson's day and I'm more prepared for this week, so two of the breakfast items I just finished still need to go in gallon bags.
I go ahead and put the pancakes in the freezer. I leave the muffins out. like I mentioned about mid week and then whatever is left I'll put in the freezer just to prolong the life of the muffins but I need to let them cool first and then I'll put them in bags. I have many cookies. produce preparation, so I bought strawberries and cucumbers, celery, blueberries, this was full, but you saw that I used some of the blueberries for the muffins, raspberries. Actually, I only have six hard-boiled eggs left because each of the children ateone with his lunch today and Then I put another one in there, a lunch box so the lunches are ready for tomorrow and the tomatoes are so good I can't wait to eat these Tuesdays with our tacos.
I'm going to have to try really hard tomorrow not to eat any. I also bought some. bacon prep for the week I made two packages again because we are a bigger family and the kids love bacon, they will eat a piece every morning with whatever they eat, they made some egg salad and a tuna salad for Mark and I. for lunches this week, so we're going to have this twice, this will be four, this will be four and then I think maybe for Friday I'll do a snack type lunch, it's something I could have prepared ahead of time, but that's okay.
Maybe I'll do it tomorrow if I feel like making a little more. Well, I sure bought some shredded cheese for taco night and then if we ever do it this weekend, sometimes on the weekends we like grilled cheese, so we'll use that. the cheese for that and then I have a big batch of dog food prepped, I usually only do a week but I'm hoping to feel like this is going to be three weeks, it seems like a lot so I'm all set. I'm so glad I decided to do a lot of that at once, but that's all I did today, okay? so if you like hanging out with me today vlog style on meal prep in the kitchen, give this video a big thumbs up, let me know in the comments section if you like this.
