Hi, I'm Alvin, welcome back to Tasties doing a big show where I make

giant

versions of some of America's most beloved foods. Today I'm going to make a huge hot dog, how are we going to do it? I'm not. Sure yet, but we'll find out right now. Okay, so you can't make a hot dog without holding it, so you can't make a hot dog without making a hot dog, so let's make a hot dog. We have a KitchenAid mixer with a meat grinder attachment. All pieces have been frozen to keep everything nice and cold. If it gets hot, things start to stick and get dirty and that's not good.

Now it is running slowly. So I found out that grinding that meat would have probably taken us about two days with that old machine, so I went to the store and bought some ground beef. Butchers are much better than me and they do that kind of thing because you know, as a wise poet once said, no one has time for that, grinding is not enough. Oh yeah, look at this guy and turn the mix into a smoother one. emulsified pasta I'm adding a little bit of ice water to help it maintain its delicious structure I mean this batch is done for now look what we have wow that really is fresh hot dog stuff oh that smell is another thing that would make me weak There would be processed the second batch and you know that you don't need more details about it.

I want to do that and you guys just relax for a couple of seconds. There are certain condiments that make hot dogs taste like hot dogs. so we have salt, sugar, garlic and onion powder, dried marjoram, dried coriander, smoked paprika, sweet paprika, white pepper, mustard powder, mace, the spice, not the self-defense weapon, and lastly, sodium nitrate , which is a healing salt that gives the hot dog its characteristic pinkish-red color afterward. It's cooked, oh boy, this is a lot of seasoning, all I will say is that it smells much better now, so this meat mixture has already been fully seasoned.

We have a large sausage casing that we bought from the bologna company so I have a strong hunch so they know what they are doing so we can make a hot dog with it, it needs to hydrate a little so I'm going to put it in warm water to Make it nice and stretchy and flexible so we can put the meat in and this will take about 30 minutes. This is really strange. It's like a giant chili. How do you open this guy like no? The goal is to fit all this meat inside this carcass. This is going to be a very strange process, wait, it feels like when you're filling a piping bag to make frosting, so let's think about it that way, oh no, I make you better, no, oh my god, I swear to God, Dude, are you kidding me?
You're kidding me, the good thing is that this table is clean, so this is what it looks like when all that meat was put on the carcass. This is a recipe that is directly from Joshua Weissman. He has some great stuff on YouTube so be sure to check it out. because his recipes are really good, oh, and I poured out the classic Alvin, okay, this will chill until it starts to get nice and bubbly in the mixer. I'm adding a little bit of bread flour, don't spill it here, I poured it well and a little bit of salt. I'm going to incorporate this a little bit. Todd has seen some things. It took me a while to convince him to come back for another round, but we're going to squeeze every ounce of power out of this guy before he has to go into the fight. patio that's a little dark, okay, so the yeast has risen a little bit, as you can see, this is pretty much ready to come together to make this dough even richer and nicer.

It's risen quite a bit, as you can see, and this dough has so many air bubbles, it's so light, it's super fluffy, so I'm going to punch it. funny, look at all that gluten development, that's what I'd like to see, come on, look at that, trying to shape it into a hot dog bun, so again I'm poking and rolling, it looks like a baby that doesn't But I don't want to name you because I'll probably get attached to it and then I have to cut myself in half for the hot dog oh name I'll just call you baby okay let's put you in your little aluminum crib.
I don't know how to hold you. kids, that's not how you should treat kids, so this is going to ferment for another 45 minutes or so before it's baked and then right before it's baked, I'm going to put a little bit of egg on top to give it a really pretty color. oven, make it big, buddy, bye, the hot dog was cooked in that water bath and cooled, it was fun, it was like kindergarten, look it smells great, like a very, very seasoned beef, to get the really pretty color you deserve. Personally, I would have loved to share this with friends because it's something I like to do, but unfortunately I can't do it well. Now, this hot dog and I are going to spend some really good quality time together and I'll see you guys next time, it's just you and me, buddy.
