I remember when I was struggling, I told myself no, I don't need those resources, I'm going to save them. I'll tell the people who really need them and guess what I was trying to spend twenty dollars a week feeding two adults. I was the people who needed them. There is never any shame in asking for help. That's what those resources are for. So today is Tuesday. I'm going to run this challenge from Wednesday night until the next lunch on Wednesday. Now I will be eating these foods every day for the entire week, so at the end of the week I will tell you how it went and how realistic I feel.

. I thought we'd do a quick tour for those unfamiliar with their

offerings. The first stop I made. He went to the bread section which was pretty clean, then there was the condiments which pretty much carried anything and everything in their can section included a variety of different vegetables, beans, pastas and meats, then there were the items for baking and had to remind myself that I won. I don't feel very good trying to survive a week on brownies and cakes and finally it's the basis of a diet 10, dry rice and beans.

Now we come to the freezer section, which is a real game changer for Dollar Tree grocery shopping, they have calcined milk. milk juices eggs and cheeses one thing to note is that they have these chunks that are a pasteurized processed dressing, but they also have these little blocks of real cheese, they have products similar to cream cheese and sour cream, as well as processed meat products, products for lunch. meats, hot dogs, etc., then come various breakfast items, most notable being the frozen meats in the bottom of the freezer, especially the very frozen ones, as you can see, ground sausages.

They have a pretty impressive variety of frozen vegetables, including asparagus, cauliflower rice, and steamer bags, which I always do. Most intriguing are the frozen seafood filets at the bottom, then there are the standard frozen chicken items, patties and nuggies, and then at the bottom there are a variety of burgers, both turkey and beef, and that's article number 10. Alright, here's a quick summary of everything. I bought it, so I bought the 14 ounce bag of frozen sautéed vegetables with peppers. I got the mixed greens, carrots, onions, peas and green beans, which is a 14 ounce bag or some of the larger bags of frozen vegetables they had.
I got a one pound bag of lentils. a one-pound bag of pinto beans a two-pound bag of white rice a dozen eggs eight ounces of extra value meats cheddar and bacon flavored meat patties they also had the regular ones, but I don't know if my cheddar and bacon could be good. For breakfast, which is what I bought, they sell a seven ounce tube of pork sausage here. I bought some chicken broth because flavor is important to me and we are working on limited flavors and I have a package here of 12 flour tortillas for tonight. The most prep work night I'll have all week, so I'll go ahead and start with this.
I almost forgot about the oil and spices so I didn't want to go crazy in my spice cabinet because I like them so much. season my food, so I have a variety of spices, but I thought that for the purposes of a challenge like this it would be better to go simple, so I stick with salt, pepper, garlic powder, hot sauce, soy sauce and oil vegetable, and that is the amount of oil and spices that I am going to use nothing else is going to come out of my pantry, spice cabinet, refrigerator, anything for the rest of the week, this is all before we start.
I wanted to give you a brief summary. Overview of what my

will look like for the week. I tried to include as much variety as was realistic for the ingredients and time I had. The first thing I want to do is take a look at this pepper stir. fry and by the way, ignore it, you know, I swear my counter is clean, uh, I don't know if older laminate countertops stay up easier or what, but I've tried literally everything on it, redoing our counters In some way, it is my pending task. The list is just one of the many, many, many, many projects that we haven't done right, not bad, so I want to go ahead and narrow them down a bit.
I honestly don't care about uniform pieces or anything like that. I just want them in a little smaller pieces so that it is a little easier to distribute them on my two plates that are going to go in these that I am going to keep in the bag for the breakfast that I am going to prepare and then these are going to end up on me rice & Beans. The first thing I'm going to do is start with these pinto beans. I like to cook a lot of them at once and once cooked they can easily be stored in the freezer tins.
The beans at the dollar tree were a dollar which is much more expensive than at my usual grocery store and I'm going to get several cans out of this bag so what I'm doing here is just spreading the beans out so it's easy see them. Through them I'm just looking for broken beans, rocks and anything that doesn't look like it should be there here's my little

haul

of things I removed including what looks like a kernel of corn. Next, I'm just transferring my beans. a strainer so you can rinse them quickly in the sink after rinsing.
I'm going to go ahead and throw my pinto beans into my Instant Pot and add two quarts of water as well as some of the chicken broth I bought at the time. This is going into my Instant Pot and I'm going to set it for 25 minutes. Of course, you can also do this on the stove, but if you have a pressure cooker or even a slow cooker, it's hands-off and leaves you time to Next, I'll do other things besides staring at a pot on the stove. I'm going to go ahead and start on my rice. I'm going to go ahead and cook two cups of my dry rice tonight and I'll divide it evenly between The two different dishes that I'm going to make tonight, half will go on my rice and lentils dish and the other half will go on my bowl. of rice and pinto beans.
I will reserve the rest of the rice and cook it. on Sunday, so I always rinse my rice. At first you'll notice the water is very cloudy and starchy so I just rinse it a couple of times until it runs a bit clear, it doesn't take long to do and it improves the finished product if you notice the orange tape wrapped around my faucet, well all I can say about that is be careful with cast iron, if the two are pitted against each other the cast iron will win every time once it is rinsed. I'm going to go ahead and prepare the rice in my rice cooker.
It's as simple as placing the insert and pressing the white rice button. Of course, you can also do this on a stovetop. I just have these appliances and I like them. Make my henchmen here do my bidding because I'm going to be cooking a lot tonight. I'm going to keep it simple with my breakfast for Thursday and Friday, so I'm just going to make some hard-boiled eggs, two each, for Thursday and Friday for my rice and pinto beans bowl. I'm going to start by putting a little bit of oil in my pan and letting it heat up, then I'm going to go ahead and add my frozen vegetable mix which was onions and peppers.
I'm going to move on. and sauté these until the onions are nicely browned, at which point I'm going to go ahead and set them aside in my skillet so I can add my pinto beans. I added a little more than half of the beans. I did include some of the liquid they were cooked in, especially since I added broth to that liquid, so it should be nice and flavorful once I add the beans. I'm going to go ahead and mash them up a little bit and once the beans reach a consistency that I like. I'm going to go ahead and add some spices, we have salt, pepper and of course garlic, we are not stingy with garlic in this house.
I started mixing everything and then I realized why I was going to add. a lot of rice to this, actually I probably wanted my beans to be a little thinner so I went ahead and added a couple more cups of liquid from the bean pot and then stirred everything really well. I tried what I had so far and decided to go ahead and add another packet of chicken broth after stirring that it was time to add the rice. I added half the rice from my rice cooker and then mixed everything until the rice was well mixed in this dish, it tasted delicious and It was time to move on to my rice and lentils.
I started my rice and lentil dish by setting my Instant Pots to saute and adding my ground sausage that I had let defrost in the refrigerator. I must admit I'm not really a fan. about the saute function on the Instant Pot, I think it gets too hot and I've had a lot of problems in the past with getting burn notices after using it. I'm also not a fan of how the pot can spin freely it's a bit of a pain and I don't like draining the fat but anyway I'm done complaining about the saute function, it worked great for this recipe once my sausage was fully cooked , I went ahead and added some water and brewed I made sure to scrape the bottom of the pot well making sure there were no bits stuck because like I said I don't want to get a burn notice then I added the rest of the water I think I added two and a half. or three cups total, then I went ahead and added my lentils, I added a cup that was about half the bag for seasoning, I added two packets of chicken broth that I had bought, followed by a little garlic, a little pepper black, I stirred it well. and then I went ahead and put the lid on and ran it for 15 minutes under high pressure, then almost immediately I had to stop it because I realized I had forgotten to put my frozen vegetables in, so I went ahead and added half of that bag of frozen vegetables.
Mixed vegetable mix, put the lid back on and started the second round. By the way, I completely forgot to record myself making the rice and bean omelette I made for dinner. I also forgot to take a short video of what it looked like when it was finished. before I started eating it, but I will let you know that it was absolutely delicious and I hope to eat more of these this week, once the timer went off I went ahead and let my pressure cooker release naturally for about 10 minutes. before taking out the rice and lentils, at that point I added the rice and stirred it well.
I tried it and decided it was a little bland, so I went ahead and added a little more salt, pepper, and garlic. I stirred well. and then it was time to go ahead and portion them out for my lunches for the week, Thursdays and Fridays they will go straight into the fridge, while Mondays, Tuesdays and Wednesdays they will go into the freezer and I will take them out the night before or the night before. The day before I'm going to take them, you'll see in the back, I have my extra pinto beans ready to go in the refrigerator.
I went ahead and put some soy sauce on top of each plate and then exploded. The lids went on and then they were also ready to go in the refrigerator and once they cooled all three for next week will go in the freezer so I went ahead and let my cast iron heat up for a couple of minutes because it takes a eternity to warm up. On this glass stovetop, I'm going to add a little bit of oil to my pan and then add the rest of the frozen vegetables that were left in that bag. Well, I'll finally start taking some color, the only thing I do.
I don't really love frozen vegetables, it feels like they retain a lot more water and it takes a lot longer to get them a nice color. I'm going to say this is good enough to go ahead and bring my hamburger meat over here, so I'm going to push all of this over to the cooler side of my pan to get it out of the way, let's see what this burger meat looks like. He says it is a raw product. The ingredients say beef is the first product and it doesn't list any. pork or chicken, I'm going to split them up as I go, since we don't really want burgers, we want something closer and ground, so this smells pretty good, it's the bacon flavor that mainly comes out as far as how it smells, almost It smells like I'm cooking askillet with bacon, so while the meat finishes doing its job, I'm going to go ahead and crack four of my eggs into a bowl, watch me completely destroy it and then I'm just going to go ahead and stir a little bit, a little whisk, for so to speak, so I went ahead and stirred the vegetables back into the meat and it actually smells really good like I didn't really have, I mean, I went into It's like I had no expectations about dollar tree burgers, you know, eight ounces of burger for a dollar, but at least it smells really good.
This is pretty much ready for the egg to go in, letting the pan cool a little first. I add it and taste the little bit of it, the bacon and cheese flavor is definitely what dominates. I'm sure if I were doing a blind taste test, I'd probably think it's sausage on a burger, but it goes in a breakfast burrito, so I'm on it. whining, I'm going to add a little bit of garlic to this and a little bit of pepper, I don't think it needs sauce, we'll see a little bit of salt when I add the eggs, but definitely not. salt for this thing, the meat is definitely browning nicely okay, I'm going to go ahead and pour in my egg now.
Alright, now I'm going to go ahead and mix everything together with these eggs, finish cooking and I'm going to add a little bit of salt, the egg definitely tempered to give it that salty flavor, give it one last stir here, okay, two strokes of quattro, see if I can do this without making an absolute mess, oh no, let's see if I can actually close these things. Don't judge me for my tortilla rolling skills. Okay, there are two less and the last one. Oops, no one saw that maybe I was making room in the omelette and here we go.
I'm not going to win any awards for rolling burritos, but that's okay, that's okay. and this is how they turned out, I am very happy with them, they have a nice color. I'm about to try them and see what they are like. Three of them, as soon as they cool, I'll wrap them. in foil and then those will be my breakfast for Monday Tuesday Wednesday at work okay let's try this it's still pretty hot like I said the flavor of the bacon and cheddar cheese is really what comes through when making the crispy tortilla, it's definitely the right move for my lunches.
For today and tomorrow, which is Saturday and Sunday, I'm going to have refried bean tortillas, so to start I'm going to add a little bit of oil to a pan and let it heat up, then I'm going to add my pinto beans that I made. the other day to season I'm going to add a little salt, a little pepper and a little garlic, then I'm going to crush them and then I'm going to let that liquid cook down a little bit if I could add a little less juice of bean. this, but hey, it will simmer, wouldn't it make a good facial?
Oh, you're talking about the steam from the rice cooker, I'm like going against the top, okay, uh, you're going to put that in goo, I mean it's almost literal goo here we go now we're working up to a nice texture. here now we're cooking with goo um I'm gonna let this cool for a minute so I don't burn myself, but it smells good and it looks good and I've been eating some of the beans by the spoonful and I'm excited to eat this. It's probably cold and I won't burn myself in any way. It's a risk I'm willing to take because I'm hungry and it smells good, I'm not sure, so okay, my rice is ready, so I'm going to grab a bowl.
This is rice for breakfast and dinner, so I'm going to have this. It's a big pot of rice, about a cup, by now some of you might be grossed out by this, but if so, you could pretend it's a fried egg or a poached egg, but I'll just have one of my eggs. here and smash it right into that rice and then stir it well in there and you definitely want your rice to be fresh and hot. If you do this, maybe even in a larger bowl so you don't make a giant mess like we all do.
Okay, so the rest of this rice will come out and cool a little bit before we put it in the refrigerator, so we can make some fried rice later. I'm just going to add a little bit of pepper because I like it. pepper and then a little bit of soy sauce perfect so here I have my rice and egg and it looks delicious it's good here's my last

meal

that I'm actually going to have to prepare this will cover my dinners tonight so it's Sunday. Monday and Tuesday to finish the week, so what I did was go ahead and beat up my last three eggs of my dozen.
I'm going to go ahead and pour this into my pan. I love eggs, it was very easy to make. a dozen of them, if I had another dollar I probably would have considered a second carton of eggs as an option. I'm going to go ahead and season them with a little salt and pepper. Now I'm going to go ahead and take these out of the pan and place them in a bowl for now, my eggs probably wouldn't have stuck together, but I think I probably turned up the heat a little bit. I'm going to go ahead and put in what's left of my mixed vegetables.
There I'm going to move on and this is all that's left of those beans that I cooked, those pinto beans that I cooked earlier in the week. I know pinto beans aren't a traditional egg fried rice addition, don't come to me, but No waste, we don't want to, we're using what we have now that everything is heated up. I have all this rice that I made earlier and it's been in the refrigerator all day and I'm hoping it all fits in the pan. I'm going to move on. and add it a little at a time, okay, I'm just going to throw in a little oops, I already shaved them off.
I'm going to throw a little pepper on all this. What I had here was some water with soy sauce and At the risk of it being too salty, one of the chicken in the packets just because I was thinking that's a lot of rice for flavor, go ahead and add my eggs, which look like a abysmally low amount in all this rice, but it's okay. It's going to taste good and it's going to fill my stomach and that's all I'll say, although for three meals, I mean, this seems like very, very big dinners for three dinners.
I mean, I don't know if you can really understand it. how deep this pan is, but I mean, it's a lot of food, it's a lot of rice. You know, there may not be much of anything else in it, but it's a lot of rice. I'm not going to go to bed hungry. Pretty good, it's actually not that salty, so I'm going to go ahead and add a little more soy sauce and I'm also going to add a little bit of hot sauce to this, let's see if I can mix it all together without losing half of it. out of the frying pan I'll tell you what I'm a good cook I'm a messy cook I think that's good I think we're ready to get on with this so I'm going to have a giant bowl just for dinner and then giant bowls of this for the next few two dinners and it's actually nice to think I'm done cooking for the rest of the week so I went ahead and filled this bowl pretty full and it's not even a third of the way through the pan yet so we'll see if I can eat a third , if not, it will be a snack after work, so it's Wednesday night, we're through the week and I have some quick meals that I want To talk about before we end the video, the first thing is the question of whether there was enough food and the answer It's not a simple yes or no.
I estimated the total calories including the oil I was adding and came up with around 1400 calories per day. day, I'm safe and I sit at a desk all day, I usually eat 15 or 1600 calories a day to maintain my weight anyway, so 1400 wasn't really a noticeable drop if I were six feet tall or a athlete. It will never be enough, so the short answer yes, it was enough for me, but no, it may not be enough for anyone else. The second question is what is the food like? Honestly, I liked everything I ate. I didn't eat anything I didn't like.
I didn't even eat anything that I just liked, so really the only downside to eating this way for a week was that I was missing a lot of foods, I was missing fresh vegetables, just missing fresh foods in general, so what did you guys think of How did I choose to use my ten dollars?
