How to Cook Asparagus in a Pan

ing show and today i'm going to show you a quick and easy

asparagus

recipe here we go first we've got our beautiful bunch of local

asparagus

here and the first thing we're going to do is we're going to cut the woody stalks off our asparagus like this like so leave the rubber band in this crap okay now we're going to go in here with our skillet over high heat heat it up real quick and we're going to go ahead and add our extra virgin olive oil in there we're going to move that around that you want to cover the entire surface of your pan now you know when your olive oil is getting hot and when the viscosity is ripe you'll see it move around the pan starting to loosen up and you know we're getting ready to add our garlic so I've got some crushed garlic here and just we're going to do a tablespoon once our pan heats up look where that oil starts to pull away from the edge there we go we're getting there so we e we're going to add a heaping tablespoon of garlic and you start to hear that sizzle there we go now we don't want to burn our garlic but we want it to be nice and golden and release all that flavor there we go while it's heating up we're going to add some ground black pepper turn the heat down pan our garlic gets a little hot you can move it off the heat remove it rotate it around i'll cool it back down to the right temperature add as much black pepper as you want i much prefer it so i'm going to keep going here and this smells great turn up the heat a little bit ok , we're going to turn the heat back up here, we're ready to add our asparagus in there. come on our asparagus come on I'm going to cool our pan right there come on you want your asparagus to be completely covered and stuck in there here those asparagus are sizzling now we're going to add a pretty generous big pinch of salt now . you don't want to put too much salt on your asparagus but you definitely want to have a hefty amount on there so we're going to let it sit for about two minutes and let the asparagus

as often just give it a whirl on the heat I don't want to burn that garlic right now the trick with asparagus is you don't want it to overcook if you don't want it dark brown it won't look good it won't present well we definitely want to keep some of the integrity while softening the stem a little bit this looks wonderful now halved add some crushed red pepper a little heat to your preference though if you don't like things spicy don't add the pepper and we're cooking really good we're almost there some people like to add a little water to steam the asparagus a bit, my preference is white wine vinegar, it gives almost a pickle flavor to the asparagus with a bit of tang, there we go, sun or we're going to have a little bit of that in there just a little bit don't overdo it let it go about another minute cover that with all that vinegar the gar vine also helps retain the green color of the asparagus and you're not going to turning off, that's another plus too, you can smell the vinegar coming out, oh yeah, watch the asparagus start to wilt, that's what you're looking for. don't overdo it that's just where you want them so we're going to go ahead and take this off the heat one more time turn the heat off we're going to throw a plate in there and we're going to show you what it looks like now this is going great with chicken, fish, pretty much anything, well you know you put your main course in there you just take a big handful of asparagus and place it on your plate and how good does that look so there you are have a quick simple asparagus dish and easy with which you can impress your friends and they will love it remember to visit our website www.localcookingshow.org follow us on facebook twitter all links are below thank you very much for watching our video and join us next time you
