Hey guys, thanks for stopping by Ballistic BBQ tonight. I'm going to try to replicate a California classic and here in Southern California we have a

burger

joint called In-and-Out Burger and it's really, really, really popular and what makes this. The success of the restaurant is simply due to the simplicity of their menu, all they have are

s and fries, but the thing is, everything is very, very fresh, they grow their own produce, they pick their breads just for them and, of course, In fact, they process their own meat. Whole potato fries on site while you order so you can't get any food fresher than this and because of the quality of their food there is always a line at the drive thru, I mean cars are going.

Down the block waiting for your burger, one of the cool things about this restaurant is that they have a secret menu and it's not printed anywhere it's just word of mouth and my personal favorite on their menu is it's called

s the secret menu is preparing especially that and the other day I was messing around on the computer and I found, I guess it was a blog where the guy had cloned this doll recipe and worked really hard to make it. I'll put the link in this video, but I'm going to go ahead and give this recipe a try and see how close it is to the original.

We have an in and out about ten minutes from here, so if it tastes like in and out, I'll know, but either way it's going to be a really fun bake and it's pretty easy to make and this way you guys don't have in and out burgers and exit, maybe you can try it yourselves and hopefully, Anyway, it will be a success, I have to prepare some, so let's go to the kitchen, okay, so the first thing we need to do is make what they call their spread and is actually very similar to a Thousand Island dressing. to add two more tablespoons 2 teaspoons mayonnaise - two tablespoons ketchup two tablespoons sweet sauce 1/2 teaspoon distilled white vinegar 1/2 teaspoon sugar and mix this and you can see that it has a very similar color - you know like it's a Thousand Island dressing, so if you don't want to go to the trouble of making this, Thousand Island will work just fine.

I'm sure it's fine, so we put this in the refrigerator and move on to the next thing. animal style burger, that's going to be the way we're going to prepare the onions, so hold on, so have a frying pan here, yeah, heating it up, put some cooking oil on it and now I've got it, this is a whole onion and it's chopped as fine as you can chop an onion, I mean, it's huge, very, very fine and what I'm going to do is caramelize this and not like the normal grilled onion like you would get, you know, whatever burger you be.

I'm going to slowly caramelize this and basically reduce it when the onion starts to dry out a little bit. I'm going to add just a little bit of water to bring it back to life and when we're done. the onions are almost going to be a paste, so this will probably take a while. I'm not doing that, I'm buying. my own burger so anyway we're going to take them to the grill so here we are you can see I'm going to use my griddles or the craic or I put a little bit of oil here before we cook and What we want to do is you know , we want to get a good crust.
I don't have any clothes on this side, but you know, the radiant heats will keep my onions nice and warm, let's see they're steaming and while these guys are. cooking I'm going to do something that defines it as animal style when I flip this burger, I'm going to grill this mustard on the burger, the other thing that defines it is this onion concoction that I made, it smells very good, okay, Alright. I'm going to give you these guys American cheese, this is jellied American cheese, so it's not what you know when it's in the plastic wrapper, but you know if you have to use it, that's great, you speed up the melting of this cheese, it what I am going to do. you put this on top, it's actually a tray, it makes a lock, you know, one of the inserts is a wok and I have it upside down and I use it to do things like this, as well as cooking vegetables in it, it works. really cool so it's been a few minutes and as you can see the burgers look amazing so what I'm going to do now is just set these guys aside again this will keep them warm. a little bit of cooking oil here I'm not worried about this case of mustard residue, you're wondering, it was too much oil, so I was brushing on that little bit there, okay, now let's make toast. these in and out bonuses put some pretty heavy toast on their bagels well the bagels are ready and in case you're wondering I just didn't want to make my wife wait for my video so she's eating so now Let's put this together. double-double animal style, so we got the sauce that I made or this is what they call it spread or whatever these animal styles are complicated for pickles a piece of tomato, let's cut a piece of lettuce burger about a quarter inch thick so let's go onion you can see it's still nice and spicy you see what I mean by being ridiculously reduced it's almost like a last burger spread now when I was reading the recipe and realized that they don't put anything on the bun and At first I thought it's a little strange that it makes sense because you really get that nice toasty flavor when you bite into this thing, so there you have it guys double my way well I guess I'm trying to do it your way.
That's it, you try this and it tells you how it's going to be placed originally, like they do it in and out, but with special training for it, you know what this thing tastes like, the closest thing to an animal style double-double.
