potato salad anyway. It has the perfect balance of sweet and spicy thanks to the sugar, vinegar, pickles, and everything else in it. It's just your basic

homemade

potato salad. You can add any number of things to it to make it yours, but I'm just going to show you how I like to make mine, so without further ado, let's start naturally.

I'm going to start with my potatoes, every potato salad starts with potatoes for this

recipe

and for my potato salad I prefer to use just plain old russet potatoes. They are the cheapest, they are the best. I have tried using Yukon Gold potatoes and russet potatoes for this

. I prefer russet potatoes, it's simply the best potato salad for me. You can use any type of potato. I like it and using a potato peeler, I'm just going to peel these potatoes, a little trick for you, that little end on most potato peelers, it's kind of a rounded use, to get the eyes out of the potatoes, that's what that I have always used. because it's just the perfect little tool to get the eyes out of a potato, but what you want to do is go ahead and peel the potatoes and you don't have to peel them if you don't want to, if you want to.

Potato salad with skin on, of course, go ahead and leave the skin on, it makes no difference, personal preference and while you are peeling the potatoes and you already have one ready, go ahead and put them in a large pot, this will be with the same profit , I cut these that are full of water. It seems like a lot of salt, it really isn't. because there are a lot of potatoes in here two teaspoons of white vinegar just distilled white vinegar so you want to add two tablespoons of sweet pickle relish you can also use pickle relish if you want I like it sweet in mine and finally I'm I'm going to add two teaspoons of yellow mustard prepared, if you like a potato salad with more mustard, you can add more mustard if you want this to be perfectly acceptable and then using a spoon or a fork, whatever, go ahead and mix well and then whatever you want. you want to add the onions and the celery and go ahead and mix them together and you want to make sure you mix all the ingredients and mix the dressing well before you add the potatoes because you don't want to over mix this once you add your potatoes so go ahead and take your potatoes cooled again, make sure they are at least room temperature, you don't want them warm or hot at all, but go ahead and add them into your bowl and then using a spatula.
To gently fold the dressing into my potatoes, you want your potatoes to stay in as big pieces as possible, so don't go crazy, you know, stir it, stir, stir, you want to fold this in gently so your potatoes stay as whole as possible. possible and a little secret for you just to bind the dressing a little bit. I'm going to add two tablespoons of instant mashed potato flakes to the finished mixture. I'm going to fold this into basically what the potato flakes that bind together do. It lifts the dressing and makes it firm, it also helps it stick to the potatoes a little better so you know the dressing isn't running off the potatoes which can be a problem with some recipes so there you have it. to make sure those potato flakes are evenly distributed in there and everything is mixed well, everything is perfectly combined, go ahead and give this a try, make sure the salt is right for you, if you need a little more salt, Go ahead and add.
If you want, if you need more mustard or vinegar or eggs, whatever, now is the time to do it, but you want to go ahead and cover this with a piece of plastic wrap and refrigerate it for at least four to six hours beforehand. serve this, the longer you let it sit the better it gets, but there you have it, it's your simple and basic
