for the kids and some bottom cereal, but granola, so the first thing i'm going to do is divide the portions. some of this ground beef that I bought from Costco in one pound packages and we kept it in the freezer.

We usually have 1/4 beef in our freezer. We buy one usually once or twice a year, depending on our needs. Someone Adam works with and raises. cattle, so we can get it from there, usually that lasts us quite a while, but we're actually out of ground beef right now, so it hurt to buy it at the store, but unfortunately I had to, so I went ahead and bought. a really big package from Costco. I think it was about 7 pounds and I divided it into 6 quart Ziploc bags so each of them weighs a little over a pound and then I'll go ahead and put them in the freezer.

we get steaks basically anything you could want and the price is so much better than the store and it tastes so much better too so one of the things I'm going to What to do with one of these packages is to make some burgers.

I saw this on someone else's meal prep video here on YouTube. Amanda Cipher is her name. She does Weight Watchers meal preps, but I like to watch her videos and will leave you a link. channel below, but basically I thought I'd make some burgers so I can eat them for lunches and dinners this week, so I'll just use one of those one pound packages and these will be a little bigger, I'll just split them into three burgers, like this that I'll drizzle them with olive oil and then I'll sprinkle a little Worcestershire sauce on top and then I'll sprinkle them with salt and a little bit of onion. powder and a little bit of pepper and then I can flip them over and season the same way on the other side, so I'll put them in a hot pan and drizzle the rest of the sauce over the top and basically you just want to cook them until they're done half in the middle, if we were going to eat them right away I would probably cook them a little longer, but since they are going in the refrigerator and we are going to reheat them later I didn't want them to be overcooked when we ate them later, so I basically just I'm cooking to brown the outside and then I'm going to take them to a tray that I have lined with aluminum foil and then I'm going to let them sit on the counter until they cool.

Once they are cool, I can go ahead and put them in a container. I'm just using a ziplock bag and then we had them for the week that worked. alright, I actually ate two of them for lunch and Adam ate one, we basically ate them like a burger in a light bulb, kind of like a low carb burger salad and it turned out really good, so next thing I go to do What I have to work on is some roast potatoes. In fact, I'm making them for dinner tonight in particular. I think it was Saturday and one of the things I tried to do to make my meal prepping easier is try to incorporate things that I can use to meal prep into my regular dinners, so for example, on this particular night we were going to eat sausages, peppers and roast potatoes, and I also knew I wanted to make some

I was trying to eat lower carb so I didn't want potatoes in mine but the ones I made for Adam I didn't want to put roasted potatoes in there so I bought these potatoes at Costco. They are a very good deal, I can't remember how many pounds. it's in this bag but it only cost about $5 and these potatoes are already washed so you can skip that step so basically what I'm doing is just cutting them up and putting them in a bowl and once I have all the potatoes cut . and in the bowl I'll season them with olive oil and seasonings and then I can roast them in the oven.
I actually like to toss mine in a bowl before pouring them into the cooking pan just because I feel like they get all the seasonings more evenly distributed, but if you don't want to dirty a bowl, you can probably also toss them all in the pan. baking sheet, okay, I lied, I guess I'm not using olive oil, I'm using avocado oil, but Same difference, so I'll just pour some oil over them and mix them with some of Trader's 21 seasonings Joe's, as well as a little bit of salt, and once I have them all well combined, I'll pour them onto a baking sheet. sheet.
I'm using the biggest one I have and I'm using one of these sill liners. I actually bought them in a three-pack from Costco. I'm really enjoying them, so I'll distribute them evenly. and then I'll put them in the oven and roast them. I'll roast them at 425 for about 25 minutes. I like my potatoes a little crispier, but it all depends on your preference, so I think I put them in for 22 inches. In fact, put them in for another 10 minutes, but like I said, keep an eye on them and take them out when you think they're ready, so we'll use part of these for dinner tonight and the other part I'll show you in a little bit of what I do for the breakfast bowls, so for dinner tonight I was making sausage and peppers, so I just have one green pepper here, I'm going to cut it into strips and put it in the bottom of a baking dish and season it with olive oil and a little bit of salt and then what I like to do is just grill the sausages right on top of the peppers so usually when I make them I make like the whole package and there's five in this package and the kids usually don't eat a lot of these, In fact, tonight I was making them hot dogs, so I always have leftovers and then I can go ahead and throw them into meal prep containers for us during the work week, so I guess in addition to salt, I also use some of all 21 seasonings from Trader Joe's, so I'm going to go ahead and put them in.
These are actually smoked brats from Hillshire farms and I'm just putting them in the oven to roast here. I took a quick look at what they looked like when they were ready and then I also made some hot dogs for the kids and we had some leftovers that I was able to make as well, so it was actually just me and two of these that we ate. I'm going to go ahead and put them back on the cutting board so I can cut them up, but in this little glass dish I'm going to put the roasted peppers and then I can put the sausages on top and I'm also going to add some sauerkraut and then Adam ended up taking them to work the next day, so it's good to keep this in mind if you're already cooking, whether on the weekend or on a weeknight. a little bit more and then you have a meal ready to go to work the next day, so these are just some hot dogs.
I went ahead and cut them off. I thought one of us could take them for lunch or the kids could eat them and Cura actually ended up eating them the next night for dinner so it worked out well so the next thing I'm going to do is make some steamed broccoli . We were going to eat this for dinner that night and then I also wanted to have some steamed broccoli to meal prep as well as a bag of raw broccoli that I could use as a snack or other recipes throughout the week so how do I like it? see all my products is in my oxo salad spinner.
I'll leave a link to that in the description box below, but it's my favorite kitchen utensil besides my knives, and the way I like to wash most of my produce is to just put it in the salad spinner and then Soak it in cold water in the sink until they are clean and then rinse it and then it's done. Broccoli is definitely one of those things you can prepare ahead of time. Cauliflower also does very well in the refrigerator. Carrots, you know, any hearty vegetable like that, if you do it, if you know you're going to do it. cooking it during the work week just saves me time making it on the weekend.
I usually just wash it and make sure it's mostly dry and put it in a ziploc bag or reusable bag and then have it to use. during the week so like I said I'm going to go ahead and soak this in cold water and then once it's washed I'm going to put it in a pot with some water and salt and steam it on the stove for dinner . So here is the whole steamed broccoli. I also added some cheese and then the rest of our dinner. So for the rest of the broccoli I'm just going to go ahead and put it in a ziplock bag and then we'll have it as a snack throughout the entire process.
Last week I also wanted to slice a cucumber. This is actually one I had in the fridge the week before and the cucumbers will stay good for a while if you leave them whole. What I usually find is once you cut them. is when they start to go bad in the refrigerator so my recommendation for a cucumber is that they are really only good for a couple of days once you cut them up so once you do that you just want to make sure that you use them so you don't waste nothing, so this little box of snacks was actually going to be for Cara to take to school the next day, so I went ahead and used some of those cucumbers in one section along with some Ritz crackers and then I also put a little bit of pepperoni and I'm going to cut up some cheddar cheese.
These snack boxes are from Amazon and I'll leave a link below. I really like them and they save me a lot of money when I prepare homemade lunchables for the kids, so tomorrow they have their lunch box. I'll also pack him a juice box and probably a granola bar and some yogurt to go with it, so the next thing I'm going to work on is putting in my extra cucumbers. stored in the refrigerator, so I have these glass containers from Costco that I bought there a while ago when they were on sale. They work great for storing produce, so I went ahead and put some of them in a container and the rest not.
Fit, I just put it in a zip lock bag so I also bought some berries while I was at Costco and some were moldy so I was taking them out, the rest I'm going to put in a colander or in my salad. Spinner and I'm going to go ahead and soak them with cold water and a little bit of vinegar just to make sure they're clean. This is how I like to clean my berries. I've been trying to do some research on the best way to clean. produce and there really isn't much guidance out there or I guess if there is guidance there really isn't any studies to back it up and that always bothers me like you see something that says the research shows you know blah blah blah but then it really doesn't. there is literature or an academic study to back it up but anyway I found some articles about how vinegar being so acidic is or has some antibacterial properties and that's how I like to wash my berries, I basically just soaked them. cold water with a little bit of vinegar and then I rinsed them and vinegar is good because you say you know it's food safe so obviously if you eat a little bit you won't get sick or anything so for my strawberries I'm just going to cut off the top, these were also a little sketchy, for some reason the products at Costco weren't as good this week so I'm just going to cut off the top and go ahead and cut off anything soft or moldy. or bruised parts and then I'm using a container of Rubbermaid products.
I like to use them for all my produce in the refrigerator and in fact once I cut them up we ate them for a couple of days but then they got a little mushy and then I went ahead and just popped them in the freezer to use in smoothies. I usually try to do this with fruits or berries once they start to go bad. I like to just put them in the freezer so I don't waste any produce. Try really hard not to waste a lot of produce and I know some people give me a hard time for cutting too many strawberries but to each their own so the other thing you want to make sure you wash very well is cilantro I never used to , no never, but I wasn't that good at washing my cilantro and it's actually very dirty, so the same way with this I don't use vinegar, but I like to soak it in very cold water and then spin it. dry, I'm actually going to use this cilantro for some pico de gallo that I'm going to make here in a second and that's going to go with the breakfast bowl maker that I talked about a little bit earlier, okay, for my Pico.
I'm going to cut up some roma tomatoes. I don't actually buy Roma tomatoes a lot, they're not my favorite to eat, but for something like this where you're going to cut the tomatoes really well, they work great. Well, I'm going toslice them and then just cut them into small pieces, so I'll add a little bit of red onion as well. I also like to cut this pretty well, so there really isn't a recipe that I can share for this pico de gallo. I always make mine with tomatoes, red onion, cilantro and lemon juice. You can definitely chop up some jalapeño if you want or some other type of chili, but I like to keep it simple and then also add salt and pepper as well, so this juicer that I have is one of my favorites.
I bought it on Amazon. I'll link it below if you're interested, but essentially you just throw everything into the bowl and stir it in with the cilantro. I like to chop it as fine as I can. I love cilantro so I always put a ton in it, but I know some people don't like it. You can try using flat leaf parsley if you're not a coriander lover, so the other thing I'm going to add to this is just a little bit of garlic paste, this is totally optional and if you don't have any you can leave it out.
I think it adds a good flavor, but like I said, you can skip it if you don't have anything on hand. Connor this looks like I'll be eating that lime there so the next thing I'm going to make is some bacon and this will also be for the breakfast bowls so when I cook a big batch of bacon I usually like to cook it in the oven , so I just have a tray here with a rack that fits on top of it. I put some aluminum foil down for easy cleanup and then I like to spray the rack with nonstick cooking spray just to make sure the bacon doesn't stick and then I just spread the bacon out.
I try to put it as close as possible so I can fit as much as possible on the tray, it will shrink in the oven as it cooks so when you pick it up it won't touch like that so I'm going to go ahead and put this in the oven . I'll cook it at 350 degrees. I went ahead and set it for 22 minutes, but again just keep an eye on it and cook it. to the desired degree of doneness and then also for breakfast bowls. I'm going to go ahead and make some scrambled eggs, so I just have some brown eggs here.
I'll break them into my Pyrex bowl. I love this bowl, it's one. like the old Pyrex bowls with the spout in the handle. I actually bought them at Goodwill so I don't have a link for them but it reminds me of one my grandma always used growing up so for the scrambled eggs I'm going to put some sriracha and some heavy whipping cream , salt and pepper, and then I will beat it very well and incorporate everything. The more you beat it, the more air you'll incorporate into the eggs and it'll be a little fluffier, so once it's done combining, I'll just put it in a pan.
I just have a little bit of melted butter in the bottom of that pan and I'm going to cook these eggs over medium heat until they're done, the slower you can cook them and just move them around the pan, the fluffier they're going to be. I don't like runny scrambled eggs, so I definitely wanted to make sure they were cooked, but you have to keep in mind that we're also going to reheat this in the microwave, so even if they're a little undercooked, the rest will be ready when you turn them in. to warm up. Okay, now I have all the components ready for the breakfast bowls.
I'm going to go ahead and cut the bacon. I let it cool so I could handle it. I'm just cutting it into small pieces so I can incorporate them into breakfast bowls. and then once I cut it up I can go ahead and start assembling so like I said for Adam's portions I'm going to go ahead and use potatoes for his so I'll divide them evenly and then for mine just I'm going to use the eggs, bacon, cheese in the picot, so I'm basically layering them where they are for him. I just put the potatoes on the bottom and then I do another layer of scrambled eggs and then on top of that I'll go ahead and put the bacon. someone's beating my drum my tripod I remember I was doing this like everyone was in the kitchen so apparently people were hitting it so I'm sorry it's okay so once the bacon is on I'll just keep going Go ahead and I'll put some grated cheese on top, you could use any grated cheese.
The portion I made for myself was pretty big and I actually ate that for three days at work, so the last thing I'm going to do is just put some in. cup of that Pico, you could use reusable containers. I get a lot of comments about that and I have reusable containers that are like little cups like this one, you can get them at Dollar Tree, but sometimes it's easier to use the disposable ones and I. I found them on Amazon, so I'm going to go ahead and put two of those small servings from Pico and mine since they were more of a serving, and then here's a look at the full breakfast bowls, so they turned out really good. make them again.
I really like those breakfast bites or sous vide bites that I make every week, but this was a nice break because we were getting a little tired of them, so yeah, this sounds like something I'd like. I recommend making them, they turned out very good. The next thing I'm going to do is prepare some shredded chicken. I bought this rotisserie chicken at Costco the day before and didn't really have any plans for it, but I always like it. I buy one when I'm there because they seem to have the best price on rotisserie chickens and they are always huge.
Sometimes I buy high-V rotisserie chickens and they charge me like seven or eight dollars and they're like half the price. The size of this one I can get at Costco, so you can see before I start cutting it that Conner had torn off part of the chicken breast when I got it home through this door, so anyway I'm just going to pick up all the meat . that I can get out of this and I'll shred it up and put it in one of these reusable bags. I get them from a growth collaboration. I really like them as I'm trying to reduce the use of disposable plastic bags so we don't actually run out.
Using this during the week, we ate quite a bit. I put some in my salad one day and then the kids had some in their lunch one day, but most of it went in the freezer so it's fine by me. I can actually take it out and make chicken tortilla soup or chicken alfredo or basically anything you want to use cooked chicken for, so I'm fine with that as long as I know it's in the freezer and I can use it. For another use we're not going to waste it so I'm going to go ahead and continue removing all the chicken and then one of the things I wanted to do with the chicken carcass was freeze it to make chicken broth so I saw Kim at the Frieda Family .
She has a great channel where she shares lots of frugal and food tips. One of the things she shared is that she also keeps all the rotisserie chicken carcasses in the freezer. like your leftover veggies you make chicken broth out of them so I plan on making that once I have enough leftovers built up so I'm excited about that so there's the chicken carcass that's in our Deep Freeze from time to time . Again, we have the chicken ready to serve us this week, so one of my other favorite things to make with that chicken is chicken salad.
I love chicken salad so that's another use for that if you want one so another thing I was going to make this week for dinner, roasted vegetables on the side and like I said cauliflower is one of the things that You can definitely cut it beforehand and it will stay for about a week in the refrigerator, in fact I was glad about it. of gypped on this head of cauliflower I feel like I had a lot of leaves and not a lot of cauliflower, so you see how I did it, I basically quartered it and cut out the core and then I'll just put the florets in my salad spinner. and I soak them in a little bit of cold water and drain them until they're clean and I'm also going to prep some other vegetables that I had, I think a red pepper and a yellow squash and I'm going to chop up some zucchini too so I'm going to go ahead and I'll cut them up, put them all in a ziploc bag and then when I'm ready to roast them for the week, all I have to do is throw them on a baking sheet. with olive oil and whatever else I want to season them with and then I can roast them in the oven and it's a super quick, healthy, easy side dish for dinner one night during the week.
Well, one night this week I was going to make spaghetti and I usually like to eat zoodles instead of pasta, so I just eat these veggetti. I believe it's called. I bought mine at Walgreens, but you can find it on Amazon. It's super easy to use, super economical and I just went ahead and made a zucchini since I'd probably be the only one who would eat them. This is another thing you can prepare ahead of time. I'd say zoodles stay good for about three or four days in the refrigerator, and if you're not using them right away, you can also freeze them.
Okay, so I also took the leftover zucchini scraps and put them in the bag along with my other vegetables. Another thing I wanted to do this week was prepare the salad a little. This is a bagged salad I bought from Costco. I think it's the almond cherry blue and this one was fine. I really didn't think it was that cool. Adam sure didn't like it because he doesn't like blue cheese, but I took them to work during the week and just finished it. eating about half of each, not sure what it was, I think it was like the lettuce mix that was here, I don't know, I'm just not a big fan, like I said, of bagged salad.
I prefer to make my own lettuce, cut it and make my own salads that way. I know what's in them and I know the lettuce is good quality, but anyway it also had blue cheese, I think some crispy onions, some cherries and some walnuts maybe and then I also had some extra blue cheese in the fridge that I needed to use, so I went ahead and crumbled it in there too for the dressing. I'm just portioning it into three of those little dressing cups and then I'll pack them up with the salads, so it's a good idea if you can find a salad that you like or a bag of salad that you like, divide them into portions to take to work during the week, it really reduces consumption. prep time for lunches, so like I said, I really love washing my own lettuce.
I don't know why it's therapeutic for me. I don't know, I'm a weirdo, but I actually had some leftover romaine lettuce. from the previous week only one head and then this one I bought at Walmart and it was super dirty the outside leaves didn't look that good so normally if that's the case I try to remove some of the ones that are bruised and damaged and then I just cut the rest, so I'll cut this. I try to cut it both lengthwise and widthwise so the pieces of lettuce aren't too big and then I'll squeeze a lemon on the lettuce and then you can see here after I wash it, look at that water, wow Rose, look at how dry it is.
It is, that's why you need to wash your products. I am a big proponent of washing products and that is why one side is all washed. above, I'll just spin it to dry it and then I like to use the Rubbermaid produce containers for my lettuce. I also use one of the larger size ones, so I'm going to go ahead and pour it into the container and then I like to put it in as well. a dry paper towel on top just to absorb any excess moisture and that will be fine in the refrigerator for this week okay next time I'll make some caprese salad so I'll just wash my tomatoes and a little bit of cold water. and then I'll slice them and layer them on this pyrex plate.
Caprese is one of those things you probably don't want to make more than a day or two in advance. You know it's fine if you leave it in the refrigerator for a while, but the cheese gets mushy and the tomatoes get mushy, so it's better if you can eat it in a day. I'd say two at most, we were actually going to eat this or part of this for dinner one night. and then I was going to use the rest to meal prep for lunches, so this time I'm going to do it by simply chopping or chopping my tomatoes.
I'm not really paying much attention to how I'm cutting them. and then I went ahead and put them in a glass container along with a little salt, pepper, a little olive oil and a little balsamic. You don't have to use the balsamic. I like it in my caprese, but it's totally a personal choice, so then. I'm going to go ahead and add some sliced ​​mozzarella cheese and a little olive oil, a little salt and pepper and then break in some basil. This is probably the last time I will be able to get fresh basil from my herb. pots on my back deck so I'm a little sad because here in Iowa it's starting to get colder and we're getting down to 40 degrees at night so I'm probably going to ditch that for the year but next year definitely I'm going to plant more so basically I'm just going to keep layering this so more tomatoes salt pepper a little bit of balsamic cheese and basil etc okay so I'm going to finish this salad this is one of my favorite salads and probably I could eat caprese every day if someone would let me, so next I wanted to prepare with someboiled eggs.
I'm using my Instant Pot for this way of preparing them. 5-5-5 method, so I just leave my trivet there along with a cup of water and then I'm going to put in some eggs. You want to cook them on high pressure for five minutes and then once they're done cooking. do a natural pressure release so let the Instant Pot sit for five minutes and then once that's done you can go ahead and let the rest of the steam out once you open the pot, take out the eggs and put them in a bath of ice water for I usually let them sit for five minutes for more than five minutes.
I probably normally let them sit for 10-15, but this helps the shells come off very easily. I love using the Instant Pot to boil eggs. I'll probably never use anything else again The way the shells come off so easily is just amazing so I like to peel my eggs and I think I've shared this before: I just put a bowl of clean water on the counter next to where I'm peeling them and I like to peel everything on top of a paper towel so it can absorb the water and make it fit the shell, so I'll gently remove the racks, rinse them under cold water and then continue peeling them for a couple of these eggs I'm just going to put them in the hole in the refrigerator and then we can take them to work for breakfast or a snack during the work week or the kids can take them in their lunchbox and then for the other hard-boiled eggs In fact, I'm going to prepare some deviled eggs.
We didn't really have a plan for these, but we can always use them as a side for dinner or bring them for lunch too, so I have a platter of deviled eggs, but hold on. I eat quite a few deviled eggs and since I wasn't making that many I decided to use a regular Tupperware. I don't have a recipe for this. This is how I make my double eggs, you can make them however you want. I just mash the yolks, put a little bit of yellow mustard on it, a little bit of dill relish, I also put a little bit of Splenda on it for a little bit of sweetness, a little bit of mayonnaise and a little bit of salt and pepper, and I just combine the yolks along with the Season very well by mail and then once combined I taste it, make sure the seasoning is right and then I'll go ahead and fill them.
If I'm making a large batch of deviled eggs, I actually use a bag of blocks and cut them up. the corner to put the yolks in, but since I was making a smaller batch, I went ahead and used the spoon and it worked great, so the next thing I want to make is some of this gluten free grain free vitamin B free warrior mix. and I'm going to turn this into granola. This is a new company and they sent me some samples to try and I really like this original flavor. I think it's a good alternative to regular granola, especially if you're looking for it. for something more karp, sorry, lower carb, so what I decided to do with this was just crumble it up, put it in the oven and toast it a little bit so I could use it as granola in my yogurt. parfaits during the week, so I probably got this batch a little crunchy, but it still tasted good and was actually delicious.
I had it for breakfast a couple of times this week. I use it with some low carb granola and some berries, it was really Okay, okay, the last thing I'm going to make is some

. These will be for the children. This cookbook is from America's Test Kitchen and is the complete cookbook for young chefs. I'll leave a link on Amazon. below, I think you can pre-order it right now. I actually pre-ordered it directly from America's Test Kitchen, but I love their show on PBS. I have a lot of her cookbooks and I also subscribe to her magazines and her recipes are always really good so for this recipe I will write it in the description box below if you are interested, she made really good moist chocolate chip muffins and a My kids like to eat them for breakfast, but I don't always like to buy the packet type. just because you don't know, you don't know what's in them and they can't be as healthy, but at least if I make them at home, I know exactly what's in them and I know that they're a little bit a little bit healthier than buying the processed version, the other one.
One thing they would be great for is using up any extra yogurt or sour cream you have in your refrigerator. Sometimes I'm one of those people who buys too much yogurt and so Since this recipe calls for a cup and a half of yogurt, this would be a great way to use up everything in your refrigerator, so I went ahead and listed the dry ingredients together and then I'm going to go ahead and whisk together the wet ingredients and Basically, like any muffin recipe, after you combine everything, you just combine the wet ingredients with the dry ingredients and then I used mini chocolate chips for this.
The original recipe was actually a blueberry muffin recipe that had a variation for chocolate chip muffins, so I just used the mini semisweet chocolate chips, so I'm going to combine them and then once I have it all combined, I'm going to put it in my muffin pan, so I'm going to go ahead and use some silicone muffin cups, but I actually used some. paper liners and it worked great so I think the original recipe said this would make 12 regular size muffins but I actually got I think what I got 17 or 18 out of this and I made them really big so that's it one thing?
I think that is not correct with the cookbook.
