beaverdam figured it out hey got a lot of water let's try and uh huh it's because i was here banjo banjo usually terrible but for today ugh we got a lot so what we gonna do is get these guys back banjo has a special recipe he wants share and let's turn a couple of these into l or what he wants to do, which is leave the fat on and make four two two, grill it, brown it on four sides, four minutes on the fat side f our minutes on the fat side two minutes on the back side and then we bake for two minutes yeah so we're going to try it a little bit different this is more like steak instead of jerky and stuff and then the rest we're going to become jerky um because there's so many of them so we'll process it and we'll make good old duck trees with that said see you back in the house sure welcome folks we're back home this is what duck breasts look like when you pluck them you see these little hairs still on them yeah those go to taste delicious, quite impossible to remove them all, it takes a long time, but we took the rest of them. out without the fat they're sitting in salt water right now we're going to turn them into jerky real soon but that's not what today's episode is about. you're gonna like it but lucy come here come her and friend you know just take a seat in the front row guys just go ahead and say no no no you should go ahead and sit down you should sit down you can sit down okay you can watch don't do anything i wouldn't just just watch just stay just watch you're not staying anyway so this is what we got two teal one two and one this is probably yeah it was in the gaddy yeah yeah so that way you get a little bit of both obviously we got to take these guys head to head like we always do most of the time the wild game wins but that's a little different right now because you get a ton of taste of that lot of natural flavor, so you might want it to. be a little more subtle with uh all the meat so let's go ahead you have to season how you come to work you got it you have to season both sides yeah just tell me if I'm doing this incorrectly this is your show that's cool I'll flip 'em forward give me a flip so season the fat side season the meat side like this you Hit that meat then take your wild game the same thing cover it up there you go pack it up give him old flippy go over it again alone a nice even layer right boom so you need to take these guys to a cold skillet put them fat side down turn on a medium high medium high I know and it will make some of the fat go down so I don't put oil on it and it sear for four minutes and then I'll flip the meat side for two minutes and then you pop it in the oven at 450 for two more minutes so that's a plan yeah let's do it fat side down yeah Sir, I must keep them all together. give me a pan full all the meat that goes with the fat down will be a little mix because once the fat starts to fade it becomes lick when you have the seasons going but listen you can put all the meat in the jar of wild
hunt, mix it up and go. it's getting better and better at that point so half high one two three four about that right there four minute start the timer hey siri set a four minute timer hey guys you have a four minute timer two, You're welcome, give him the old flip ski, oh, it looks pretty good, oh, that one got crispy, why, how's that difference? that's crazy for that one looks good ok not bad ok none of them are badly burned but look at the difference. wild game on these three I bet that's what it is so wild game gives it that charcoal color a little bit darker because there's no way it's a coincidence no chance no chance I'll even rotate the pan that way. in case that's the case so wild game you get that crispy bbq crust on us not all the meat so two minutes then we'll throw them in this pan this definitely won't be at four fifty let me close going up two minutes at four fifty and then take 'em ut and let 'em sit for a bit yeah a bit a good one about five minutes you're good to go okay go ahead and take these bad boys off I don't wanna , how is that in 365? wait a couple of minutes that's right yeah let them chill for a second ideally you need to have your schematic and this would take six years so we'll just let it come up to temperature and then we'll throw them in lucy excited you excited we no I didn't bring you today we should bringing her it was perfect perfect situation i said i went for a swim banjo went for a swim it was a good day next time we go to the
