best

fun in town and here it is i got the fuzz special i didn't know what else to buy i mean the special look like i got a lot of different meats so this is what I went for just looking at it right now it looks like a bowl of fire will come out. in the US but there are a lot of clear differences first of all this place is only one size not that big because I'm used to liking a mega bowafa oh no and what's here is a bit of raw meat cut into slices. much thicker than places I've been to in the US also places I've been to in the US they usually fill the bowl with rocks so you usually get a lot more broth what

noodle

s and meats but this right here seems to be a good ratio like 50 50. and this is vietnamese coriander it smells very like cinnamon so good before i make anything i just want to try this broth oh my god it was a bit out of date because it's like 1 am right now in new york and you know you know folgers commercial like the

part about waking up is folgers here no no no the best part about waking up is fun in your bowl so unbelievably beefy i mean just a pure clean taste not oily i feel like it just quenches that beefy thirst that's inside every carnivore like me i mean chicken soup for the sauce this thing this thing will make her so happy every day of the week here's the thing i'll be perfectly 100 happy just eating this dish just like this i don't need any spice here nothing this is this is perfect right now but i want to dress it up to see what it's like i mean the stuff is here let's put it on and when i used to do this a lot of people tell me i shouldn't because It's what I normally do. it's that i drizzled my pho with sriracha and i made a point to ask my friends here if i should do that if that's a local thing and they give me the green light so i'm going to add some of this here and this is not your typical sriracha that you find in the states the color is very different also it's much more orange it's spicier it's much spicier it's a bit sweet too wow squeeze some lemon like an open flame this is what you're going to get some poison sauce and this is really new this is garlic vinegar and look this is chili stir fry i never added this before i am going to try it i usually go crazy with my seasonings but i feel even bad right now adding more stuff to this already perfect bowl of soup like this that i don't want to add too much just a little bit and i hope i didn't do any harm because i can never forgive myself after adding everything you have you get that beautiful fragrance from the basil and the crisp cilantro from the sprouts the lime or cozy from the sriracha that just crosses your face and the beautiful citrus and vinegar just bring out how amazingly meaty the soup is in a few minutes is all it takes for this broth to completely transform these noodles this is for perfection this is perfection look at this huge hunk of beef tendon bordering on crispy oh hi hi best of all wow that's ridiculously meaty but not only the flavor is meaty it's also so creamy not too greasy not too oily just unadulterated natural great flavor beef is ok forget the spoon this is you ain't getting enough broth for me a little beef a lot of noodles dip them in the broth a bit that bite just made my trip let's do it again you guys have been eating food all your life, but you never tried it here in vietnam. your wish list you need it on your food list your travel list any wish list you have add this to it drop this chase it with a coconut on today's noodle

All time cough, I'll tell you what, but don't judge me, okay, every time I go to a Vietnamese restaurant in the US I always want to order this. dish but at the same time i have to order because i love it so what i would do is order both too usually i would get spring rolls as an appetizer when i eat fa so when i order this dish also i say to myself hey i was going to ord er spring rolls anyway but you know this time the spring rolls are sitting in a bowl of noodles mike chen logic so excited yea here is everything i was hoping for coming to vietnam i had some expectations pretty steep especially when it comes to shelling when it comes to fug when it comes to this dish because there are things I've tried a lot in the US and assumed they would be much better in Vietnam and they all do much better.
I feel like this needs a bit of chili, is that enough? let's start with this yeah that's enough that's enough that's real good support oh this is love of food right here what i'm talking about love of food love at first bite sweet juicy and that smoky flavor. I think it parallels the roast pork roll. I love noodles and spring rolls. This is the perfect carbohydrate. I love the fact that the spring rolls soak up a lot of the sauce and the beef is chewy, juicy, green, just a touch of meat. t discovered by this dish wow thats good is dish look at this these are little crispy pork skins i didnt notice this because they are sitting on the bottom but this holy crap stuff this makes all the difference in this noodle dish first of all it provides a delicious meaty crunch and then right after that oh that beautiful pigskin flavor as you chew it completely fills your mouth.
That's one crazy food genius. It's always sad to get to the bottom of a delicious bowl of noodles. Me, we're friends, yeah, that's a foodie friendship that will stand the test of time, oh, getting out of here. down the street i actually wanted to come eat here after i finished the noodles because it kind of reminds me of china mutton skewers and beef skewers the smell is crazy this guy is crazy lemme lemme give you a hand here can i have onestraight to the source this is so crazy good and having the noodles was good but right next to the fire when it's really hot oh a whole different destroyer got mine come on oh it's green thank you oh thank you thank you this is the owner by the way you are the maker of delicious noodles so i want to say thank you and that oh my god that is crazy. that's so good and your sprinkles thank you for the meatloaf fresh i will be hot yes i will walk and eat this will be my trip as a snack to my next location ok thank you crispy i do it when i go to a food place to another and have some food to give me there the next small dish i am about to eat hills of the old waiting imperial capital city and the dish is called fumbo way now this dish is somewhat similar to pho but with some clear differences and i can have a ball if i can make it across the street is alive too after a few days here in saigon i think i figured out how to cross the street uh you have to uh not be afraid of getting run over a bit and use your hands use your hands besides your foot this is probably the noodle soup dish i was looking forward to the most, actually the first time i tried this was inside a vietnamese house and i thought it was funny so i was like "hey y'all ripped off you guys are like no we made a dummy, wait, what is it?" the difference then the difference starts with the soup is in fud the soup is typically created with beef bones as for example conscious recipe i used oxtail but here they use beef and pork also the noodles are completely different fla obviously uses phone noodles and here this in Chinese we call it mission we are just pure rice noodles and they are much bigger than fun noodles so there are differences in the meats used here there are slices of beef but also look at this a huge piece of pork. talk let's eat first we'll just add some herbs and they have banana blossoms that might be a bit silly in chinese we call it i don't love these particular things let's add some morning glory and then squeeze some lemon oh the taste wow , you can taste that nice balance of beef and pork and the soup is super clear and it's so smooth it's like massaging my tongue and throat as it goes down mm-hmm oh it's bouncing a knife.
They told me I had to add some chillies and what. they got here it looks like hot oil but there's a little bit of stir fry here too let's make it red oh oh yeah wow nothing seemed to be that spicy but it gets you here that's my kind of hot I think always I'm going to be someone who feels that the spice will elevate any type of soup and I definitely think that's the case here the meat looks amazing because it's a nice mix of meat and tendon this is something you normally find in soup Chinese beetroot noodles, oh yeah, that's what it is. that is probably the most tender piece of meat i ate in any noodle soup here in vietnam i never had super tender piece of meat in my noodle soups i like taiwan i press the meat with my chopstick and it falls apart here the meat is more chewy but meaty the flavor is ridiculous, so it's always the case that the more you chew the meat, the more flavor is released.
I'm too excited about this. I'm like the lion king. live action. the shrimp expected them to be a bit chewy, i just bit into this piece of meat, check it out, that was my softest bite, the skim, delicate, gelatinous one and the meat itself, check this out, it fell off the bone easily and, hey being chinese you have to suck that bone marrow if you don't you might lose your asian card that's the good thing there isn't much that's why it's so precious now it's time not to be so nice to it because i love to eat chinese noodle soup the wild raw way i am ean spoon is good its nice but when something is good you have to get up close and personal the best way to eat noodle soups no matter what country you are in i love it pork and beef together I especially love pork skin which because you get that nice texture from the beef and tendon then you have the much more gelatinous piece of fatty pork and all of that works so well with the fids eos and the soup, also morning glory here, man this adds such a delicious crunch.
The last part is my favorite I have these sunken things means treasures and I'm about to get to them right now hey um I'm just trying to savor it all I remember this moment if you were ever eating with Chinese people and they just had a bowl of soup noodles like I just hit the bowl and utter the word which means they're in a good place and right now I'm in an extremely good place I'm sweating I'm crying a little but yeah I feel really strong myself I wish I could hit the rewind button on this i really really do and hopefully i will make it before i leave vietnam but i have one more noodle dish to visit today so with a heavy heart and a very strong stomach let's move on to my last noodle dish and probably one of the most exclusive foods. i'm going to try here in vietnam it's called bantam bait and i really don't know much about it i never heard of it before i definitely never ate it before it's supposed to be some kind of sticky noodles with coconut milk or coconut cream i don't know let's try it and to eat this dish i am in the center of sedek inside there is a city in the mekong delta in this dish this is a south vietnamese dish it is a dish with noodles made of tapioca flour and rice the noodles looks like steamed it is covered of coconut milk it has a layer of pig skin on top of it some peanuts i think this is pork sausage and i'm not really sure like a pork dumpling or something these noodles are uh they're almost sticky and at the bottom um there's a little bit of cucumber basil vietnamese mint coriander this is almost to me like a kind of noodle salad i like the dish the noodles are warm it is very chewy it has that tapioca texture if i could describe this in one word i would say it is he noodles are really fresh noodles are nice and coconutty with the delicious herbs that bring out that refreshing taste.
What I love is the different texture you get in this dish. The vegetables are crunchy. The herbs are really pronounced and you get that nice gelatinous flavor from the pork skin. a super light noodle dish i feel like they could do with a little citrus a little chili look at the finishing touches here that was the fishing link between a great dish and a spectacular dish because there is a lot of coconut milk in here this dish is a bit creamy so when you add the citrus and especially if you add that hot oil that just makes this dish sink, mine is a pork meatball.
Em this is btw because this dish I didn't really see that much meat so I bought a huge bowl that looks like a fork balm wow a bowl of cocoa or some soup that's fantastically tender right there oh actually I forgot something. it reminded me that i was supposed to add some of this fish sauce which i totally forgot about and also add some because it already tastes so tasty but maybe this will cheer it up even more oh so stupid i should have added this at the beginning a little bit of fish sauce really makes these noodles really good these noodles if you love something refreshing if you love coconut you will love this and these dumplings those dumplings are so good i ended up buying a second bowl of noodles just because i saw dumplings in the picture but I feel like there is something else I really need and I am looking forward to completing this noodle tour to complete my I don't know wishes for Vietnamese noodles.
