pie recipe to which I call part 1. since I will be making this

egg and vanilla cream in a follow up video and here is a list of the ingredients needed if you want to try to make it yourself, the first list is for the cake filling and the second list is for this wonderful buttery dough, I'm going to start the recipe by preparing a couple of things, starting with greasing the cake pan that I will be using.

s when they are already peeled and chopped to prevent them from discoloring now you can use the variety of apples that you prefer. I am using 1.4 kilograms which is just over 3 pounds of these braeburns, they are not too sweet nor too tart but they hold their shape during the cooking process. I'll start by peeling them and cutting them into pieces, as shown in the video, wherever you peel and chop the apples, make sure you remove all the skin and all the cardboard pieces.

Try to do this as quickly as possible to minimize the enzymatic browning that is activated when the pulp is exposed to oxygen, that is where the lemon juice comes in as it slows down this process. Process pineapple juice will also work, whatever you use, make sure the apple pieces get a good coating at this point, you can't look down on us, which for this recipe is 1 tsp ground cinnamon and 1/2 tsp of ground nutmeg. I will use my cinnamon and nutmeg spice mix, it is fantastic for all types of recipes. If you want to know how to make it, the recipe is in my apple cake video.

I'll leave a link in the description box below. The next ingredient is 40 grams. one and a half ounces of brown sugar. I am using this Demerara sugar and from experience I know that eating dessert spoonfuls is the right amount. Now give it a good mix and the best way is to get your hands in it once it has tasted good. Mix, cover the ball, and let it sit for about an hour, as you want as much juice to come out of the apples as possible. By doing this, the apples will not shrink as much in the oven and the juice that leaked out of the apples will be reduced.

It is thickened to a caramel consistency and placed back into the apple filling, but you'll see how it's done a little later in the video. Now on to the dough for this pie, I'm going to make this putt over dough in my food processor, but if you want to make the dough by hand, check out my chicken pot pie video. I'll leave a link in the description box below so you can find it easily. Making dough in one of these machines is not only faster and easier, but it's also so much better. it keeps everything cold which is what you want when making dough and if you are making the dough by hand make sure your hands are cold and do it as quickly as possible, so the flour, sugar and salt in the machine.
I'll give it a quick burst to mix it all together, then I like the butter cold, then pulse the ingredients until they look like fine breadcrumbs and once again, if you want to make this cupcake by hand, check out my chicken pot pie video. I'll leave a link in the description box. Under the last ingredient there is 200 mils of cold water and I let the machine go once the PSP starts running around a mixer, it's done. I do this in real time so we can see exactly how long it takes and voila, don't mix it up too much.
Now separate the door into two equal parts, then wrap them in plastic wrap and put them in the refrigerator for at least 30 minutes. All the apples and dough are ready to start assembling at about the same time. It's okay, my apples have been sitting. the ball for an hour and the dough has been in the refrigerator for the last thirty minutes, so it's time to make this apple pie. I'm going to start by pouring the apples into a strainer and letting the liquid run into a separate container and as you can see they have released some of their juices.
This sweet and tangy apple juice is incredibly tasty and you don't want to waste a single drop, so what I do is make it even richer by adding 40 grams, so that's one and a half. ounces of butter and I'm going to put it in the microwave for 30 seconds on high until the butter melts and while it's doing that, I'm going to mix in two teaspoons, which is 12 grams of corn flour, you might know it's corn starch, in 40 mils of cold water. then add the cornmeal mixture to the other juice and microwave again in 30 second intervals until the mixture thickens, as shown in the video and that is exactly the consistency I am looking for, then just mix this fantastic thick, sweet and spicy apple sauce with the apples. and how easy that was and it makes a fantastic difference in the filling of this cake.
Now I'm going to mix it well and set it aside while I start with the dough, just before you start rolling the dough, preheat the oven to 200 degrees Celsius, that's 392 Fahrenheit or gas mark 6. I'm set mine to 180 Celsius while my oven fan is running and it runs about 20 degrees hotter than indicated on the dial. The time to start rolling the dough, the first thing I need to do is just the bench and pin with flour, if you are not familiar with rolling dough, this is something you need to practice to feel it, the only thing I will suggest is to roll forward and back in straight lines and rotate the dough 90 degrees once the dough becomes too big to rotate, then rotate the pin 90 degrees, which should keep the dough reasonably round.
If the rolling pins start to stick to the dough this way, just add a little more flour to the dough and the pin, it won't do any harm. Once it's big enough, simply roll the dough over the pin and unroll it onto the plate. Now gently press down on the cake tin making sure to get all the air bubbles out and then to prevent the bottom of the dough from rising in the oven prick the entire area with the fork as shown and set aside. as you roll out the dough for the top of the pie, then spread it over the pin and set it aside while we clean up a bit, then I'll start filling the pie when I place the apple pieces on the plate.
Try to pack as much as you can by not leaving spaces between the apple pieces that way the finished pie won't shrink as much during baking. Then brush with water around the edge. of the dough, this is the glue that sticks the top to the bottom, then align the pin and unroll the dough over the top and then with the palm of your hand, gently press around the edges of the plate. Now there are many ways to curl dough. Edges of the dough. I go into a little more detail in my chicken pot pie video, but I only use my four fingers and thumbs to make mine.
Another good way is to use the tip of a fork pressing all the way around the edge, once curled, cut off the excess ps3 with the Dahle knife nothing I'm using the back of the blade because I don't want to damage the edge of my cake pan once that the excess has been cut off. I like to remove the PhD from the edge of the plate. makes it a little easier to place the cake slice under a slice now all you have to do is brush with beaten egg. You can use milk to make this, but the egg gives a better shine to the finished cake.
Now, a couple of vents and sprinkle a teaspoon of sugar all over the surface of the cake and put it in the preheated oven and set the timer for 45 minutes. There shouldn't be any leaks, but in case the cake does leak, I'm baking mine on a baking sheet. and there is a beautiful golden apple pie. Now I'll put it on a stone and let it cool a little before cutting a slice and letting you see what it's like inside. It's about 30 minutes later. it's cool enough that I'm trying to leave it bad as in my kitchen it's amazing, there's not much better than the smell of spiced apples cooking and how pretty it looks, it doesn't shrink much and that rich buttery dough crust has the proper thickness.

The apple is not too sweet or too moist and has just the right spices. and that dough is wonderful, the edge crust has a sponge cake or cookie texture and an incredible sweet buttery flavor.
