You could skip that and just put the chicken thighs in the pot and I'll show you how I'm going to layer them in just a second, but on my chicken I have salt and pepper and then some thyme and rosemary just sprinkled on top when I put it in. the clay pot I'm going to do the same. I'm going to sprinkle the same four on the other side so it's nice and covered, other than that, I've got some green beans, baby. Dutch yellow potatoes, some minced garlic, you could use fresh if you had it and then in an 8 ounce can of tomato sauce, so at first I have the 1 and 1/2 pound bag of potatoes in the bottom of my crock pot and then have 1 pound of green beans right on top, you can cut them smaller if you want.

I like to cut them up when used in soups, but for a meal like this, when it's just green beans on the side, I keep them. We left them nice and long, then I put my bone-in chicken thighs on top and I remember seasoning both sides with salt, pepper, rosemary and thyme and the last step is the garlic and tomato sauce, and because when you put garlic in things that They are just lumps. I wanted it to really top everything so what I do is I take the minced garlic, I use 2 teaspoons, I put it in the tomato sauce, I mix it up and now all the garlic and the tomatoes are all together and it's going to go right on top and now there's no clusters of garlic, it is quite well mixed with the tomato sauce.
Ok, I can cover it and I'm going to cook this on high for not 4 hours, but I'm going to go for 5 hours because my chicken is not completely thawed, you could probably get away with 4 hours on high if your chicken is completely thawed, but the mine is still a little frozen so I'll bump it up to 5 hours a few hours later. Dinner is served like real crap and that's it, so I already prepared a wine and a dish. It's definitely not the prettiest, but it will taste amazing. The chicken thighs are nice and tender. I went ahead and cut the potatoes.
You could cut them completely. potatoes beforehand if you wanted, but really jump in and go trendy for this specific recipe. I really just threw everything out, but I wanted to show you how nice and creamy the potatoes are after about five hours, so I'm going to make everyone's plate. and let's get into it okay, another very easy one, just jump in and go for the crock pot, it's a version of a taco dish, so use whatever type of chicken you want. I have these chicken tenderloins that I love to use for taco night just because they are so easy to shred, so I have less than half a bag of corn.
I would like to have a little more, but this will be fine. A can of black beans. I'm going to drain them and rinse them and then as far as seasonings, I'm going to I'm going to use chili powder, cumin, oregano and then instead of cayenne pepper, I'm going to use this chili lime. I think it will be really delicious in this dish. I bought it at Trader Joe's. I'm also going to use a little bit. of minced garlic and I'm also going to put this whole 16 ounce packet of sauce in the crock pot, so again, just throw it in and go, for this type of dish whenever you're going to be shredding meat inside the crock pot.
I don't like to use a liner so I put my chicken in there first and I'm just going to add some frozen corn and black beans that I drained and rinsed the 16 ounce sauce container and now for the seasoning so I don't really measure if If you have taco seasoning mix or a packet, you can add it all in. I'm going to add probably half a tablespoon of garlic or so depending on how much garlic you prefer. and then I'm going to add a little bit of cumin and a little bit of oregano, but I love chili powder, so I'm going to add a little bit more weight with the chili powder, same thing with the chili and lime.
It's going to be a little bit heavier than the oregano in the cumin and that's okay, so I'm going to stir this in so that all the seasonings and everything are nice and combined and mixed well with the chicken, it's time to cover and Actually , I'm going to be out of the house for a while, so I'll cook mine on low all day, but if you're in a hurry or if you started this closer to dinner time, you can cook it on high. for just a couple of hours, after several hours on low heat my chicken was super tender, it didn't even take me long to shred it.
I usually just use two forks when shredding chicken, if it's not mixed with anything I use a hand mixer. It goes by pretty quickly, but when I have other things mixed in, I just mash it up the old fashioned way with some forks, so now it's super good with rice or in some kind of taco-style quesadilla, something like that, just super easy and the hard part. It's already made for you, okay, today's launch is a vegetarian chili, so there's just a little bit of prep because I'm opting to cut my own onion and mince my own garlic, but you could do that if you had minced garlic. you already have your hand and if you bought the chopped onion in the freezer bags then it's a real jump and go but I just have a little prep to throw everything in the slow cooker and then it's going to cook so for this. recipe I'm going to use 1 cup of quinoa I have a medium red onion that I'm going to peel and dice I'm going to use four cloves of garlic we definitely love garlic in this house I have two cans of dark red kidney beans.
I'm going to drain and rinse these two cans of tomato sauce, each weighing 15 ounces, then I have 2 cans of diced tomatoes. I opted for the no-salt-added sauce just to remove some extra salt. I also have a can of light red bean wine and a small can of chopped green chiles, so for this recipe you will need five cups of liquid, four cups of vegetable broth, and one cup of beer, but I don't do that. I opt not to use beer, so I'm going to use this vegetable broth base and I'm going to make sure I have enough for five cups of liquid to add to my chili, so for the seasonings I'm going to use two tablespoons of chili powder one tablespoon of cumin ground some salt, pepper and sugar, like a pinch of each, you can always add more salt and pepper after you're done cooking, that way everyone can season it however they want.
At least that's how I do it in my family and really, guys, just throw everything in the crock pot, once you have everything stirred in the crock pot, give it a good stir, make sure everything is mixed, put the lid on. and I'm going to start this around lunchtime, so I'm going to cook it on high for three or four hours. If you were to start in the morning, he would just put it on low for six to eight hours, okay, a few hours later and the vegetarian chili will be ready. ready to eat, the house smells amazing now I'm going to serve this with some cornbread, shredded cheese and you could use any topping you want, sour cream, green onion, really anything, you could serve this over rice if you wanted to give it a try volume. but we're just going to have this and some cornbread and shredded cheese, it's nice and easy for this cool

fall

night, okay, next dinner and I'll be back with chicken, this would also be really good with turkey, but I have a lots of chicken So I'm trying to use whatever meat I have on hand and you guys are actually seeing this after the fact, but this is the first dinner we're having in our new home, so yeah, and I don't have my plates. unpacked so I'm working with some paper plates right now, but for this recipe I'm using a chicken breast, they're still a little frozen so I'll cook it a little longer on the longer side and then I'll have a little more of a cup of sliced celery and chopped carrots, then I'm using a 32 ounce container of chicken broth and then a 14.5 ounce can of chicken broth and if you use turkey as meat instead of chicken, you could totally use that.
Turkey broth would also be very good with this. I'm going to add 3 bay leaves and then, for seasoning, salt and pepper to taste. I'm going to add maybe a teaspoon and a half of garlic because we love garlic and then a teaspoon and a half or a little more than a teaspoon of thyme and basil, so that's all I'm going to throw in my crock pot and then a little bit later, like 30 minutes before we want to eat, that's what I'm going to do. to add instant brown rice, if you don't like to use instant rice, you like to use regular rice, you can use white rice, you will need to cook it on the stove.
I wouldn't recommend cooking it in the crock pot for that long. As long as you need it, it's going to get mushy, so I'm going to go ahead and throw everything I just told you about, except the brown rice, into my crock pot. Okay, all my ingredients are in the crock pot. and if your chicken is completely thawed, it should be fine on high heat for four hours, but mine is a little frozen, so I'm still going to cook mine on high heat, but it might be closer to six hours until the chicken is fully cooked and then we'll add our brown rice at that point okay my chicken is ready oh you can see how hot it's fogging the chamber and I actually only needed to cook it for about four hours and you can take it out using a blender hand to shred the chicken, it works pretty quickly.
Fork whatever. I'm going to go ahead and use these claws. I bought them at Target last summer and I'm unpacking them today so I'm going to grab both of them and just grab them and shred my chicken and then I'm going to add my rice okay so my chicken is shredded and now I'm going to add my cup of instant or instant brown rice and I wanted to share that my husband is actually eating a low carb one so I went ahead and got him a bowl so he could still eat with us and not have to worry about making anything else but I just wanted share that if you were lower carb.
If you don't want the rice, now it's delicious without adding the rice, but I need to increase it a little bit for the kids, so I'm going to go ahead and mix this up a little bit. Put it on low heat while you mash it, but I'll put it back on high heat and the rice only needs to cook for about 20 minutes. After 20 minutes, your rice is giant and your chicken and rice soup is ready to serve. very good and pretty easy, jump in and ready for these cold nights that are fast approaching. Well, last but not least, there are crock pot Philly cheesesteaks and for this recipe I have just under two pounds of beef tenderloin that I went ahead and chopped up. then I have two green peppers that I sliced and a fairly large onion also sliced.
Now you can add mushrooms to this recipe, but most of us in this family don't like mushrooms so I omitted them, but you could put in about 4 ounces. or something like sliced mushrooms here too, if you like those. I don't need this large amount of beef broth. I'll only use about 1/3 cup and then as far as seasoning goes for the garlic powder. I'm going to use half a teaspoon and then this is some homemade burger seasoning that I made. I'll have it linked below or if I can find the link I followed or I'll write it down because I don't remember what it is.
I'm out of my head right now, but I'm going to use this, if you have steak seasoning you can use it. I really like to put this on, so I've been doing that a lot lately and I'm going to use about a teaspoon of that, so I have a little bit of pepper that I'll just lightly sprinkle on it if I'm pretty sure it's salty, so I won't add more salt, but I can always add salt afterActually, but if you're using a steak seasoning that doesn't have salt, you can also add a little salt and then the parsley.
I'm going to use about 1/4 teaspoon, just a little bit of that and this is just me. I'm going to throw all of this in the crock pot and we'll save this provolone for later, once I have all the ingredients collected for that provolone in my crock pot, I'm going to stir it all up because I want to. everything so that it's nice and incorporated, the seasonings are really to overpower all the ingredients, it's time to put the lid on so you can cook this on high heat for two or three hours, but I'll do it on low heat because I'll check it at five hours , you can do it from four to six.
I'll check it in five hours and see if it's ready. OMG, my house smells so good, so five hours is definitely enough. My meat is very very tender and as I mentioned it smells absolutely delicious so you can cover the top with as many slices as you like, I love me some cheese so we'll see how many of this 12 pack of sliced provolone cheese I can get put on top of this okay so I ended up putting nine in there it fits about seven and then I just started overlapping a little bit because we love cheese so I'm just going to let it sit here warm until the cheese melts and then it's serves dinner, super easy and delicious, a crock pot meal, okay, dinner is served, so if you like it.
